1 Food Service and Meal Management and Meal Report Introduction I decided to make my theme meal about antioxidant rich foods. The four foods that I featured on July 31 st for breakfast was a peach smoothie, a strawberry smoothie, the Sun Rise Breakfast Sandwich and Stewed Tomatoes and Grits. All of these foods were high in Vitamin C, less than 400 calories per and were antioxidant rich. I choose to do smoothies because the weather is getting hotter and smoothies are very popular in the summer months. I choose the Sun Rise Breakfast Sandwich because it was high in antioxidants, and it was a little different than the typical breakfast sandwich. Finally I put stewed tomatoes and grits on the menu because it is usually a popular dish when it is on the menu and it goes along with the high antioxidant foods theme. In order to prepare for this meal, I first worked with Effie to help prepare a schedule for the foodservice staff. We had to make sure that someone was making smoothies and two people were on the grill making the breakfast sandwiches. After preparing the schedule we had to order the food that we needed for the meal. Effie showed me how to order the food through US Foods. Two days before the meal, I prepared the tomato jam and put the frozen fruit and yogurt aside to put used for smoothies on Wednesday. 3 Conclusions and Improvements For both smoothies (Dreamsicle and Strawberry Banana), we made samples, so that the customers knew what they tasted like. Many people commented on how good the smoothies were, although only a couple of people (31) actually bought the smoothies. After talking with a couple of the customers, they liked the option of adding protein and overall they liked having a smoothie as another breakfast option. Although a majority of the people who stopped by said that they would prefer to have the smoothies for lunch instead of breakfast. After talking it over with Rick, we decided to sell the smoothies again for lunch. This seemed to work better and we sold more smoothies. I also talked with the employees about how to improve the smoothies. Many people said that the price was too high ($2.89) and they take a long time to make because CMC only has one blender. One way to improve the speed would be to have two smoothie containers so that when one smoothie is getting blended, another smoothie could be in the process of being made. The breakfast sandwich was only served for breakfast. We also made a test tray for this product. Again, the people who tried the sandwich enjoyed it, although no one bought the sandwich for breakfast. I talk to a couple employees after breakfast and they said that they think the sandwich didn t sell because there was too many options (smoothies, egg sandwiches, grits etc.). The final dish served was grits and stewed tomatoes. This sold very well because it is usually on the menu and is very popular. Overall I believe that my theme meal went well, even though the hospital did not make a profit. In order to make a profit off of the smoothies, 43 smoothies would have to be sold at $2.89 per smoothie. This means that we would have had to sell 12 more smoothies throughout the day. I think smoothies could be a possibility in the future because more and more people will start trying the smoothies and enjoying them. Many of the staff commented on how much they enjoyed the smoothies and how they would like to see them as a permanent fixture on the menu. Although at this time, the smoothies are not selling enough to make a profit.
