3 Class Pennsylvania s Incredible! ANGEL FOOD CAKE CONTEST RULES 1. Open to any individual who is a Pennsylvania resident. 2. Entrants may NOT have won 1st place in this Angel Food Cake contest at any other fair in Entry must be an Angel Food Cake made from scratch. 4. Pennsylvania produced and packed eggs are requested to be used if at all possible. Please look for the PEQAP or PA Preferred logo or PA packaging dates on the carton. 5. Refrigeration is NOT available at the Fair or PA Farm Show. Entries that require refrigeration after baking must indicate so in the recipe. Those entries will not be sold, auctioned or otherwise distributed for consumption after judging for food safety reasons. 6. Cake entry must be submitted for judging on cardboard. 7. Recipe(s) listing the ingredients and the preparation instructions must be submitted with the entry (printed on one side of 8 1/2 x 11 size paper). 8. 4 Class RULES: 2016 PA PREFERRED CHOCOLATE CAKE BAKING CONTEST 1. Open to any individual who is a Pennsylvania resident; one entry per person. 2. Entrants may NOT have won 1st place in this PA Preferred Chocolate Cake contest at any other fair in Entry must be a layered chocolate cake made from "scratch" (no mixes). 4. Entry must be frosted and frosting must be made from scratch. 5. Cake recipe must feature cocoa as a main ingredient. 6. At least one (1) ingredient must be a PA Preferred product. Ingredient is to be indentified as PA Preferred with its brand name in the recipe. All package labels from the PA Preferred product(s) used, including the name of the product, must accompany the recipe. Look for the blue and yellow PA Preferred logo on the ingredient packaging to ensure that the product was produced in Pennsylvania. Please note some packaging may not have the blue and gold logo. Superintendent Helen Price *Canned fruits and vegetables judged on quality, general appearance, and container which shall be standard clear glass jar free of labels, with new lid and cover. *Exhibitors are limited to one entry in each division of a class. *Entries must be packed within the year of exhibition. *Any entry may be opened by the judge if deemed necessary. *Use standard Mason type jars. *Use two-piece self-sealing lids - flat discs and metal screw bands - for sealing all jars. *Metal screw bands may be loosely applied while transporting jars to and from fairs, to prevent damage; however, screw bands must be removed from jars before exhibiting entries. *All food not in standard jars or not sealed with self-sealing lids will be disqualified by the judge. No paraffin. *Judged on appearance, flavor and consistency and neatness of package. *Jar must be sealed. *Butter fruit which is cooked until soft. The pulp is then run through a sieve, making it smooth. *Honey spread fruit products which use honey in the preparation as a substitution for part of the sugar. *Jam a thick, sweet spread with pieces of crushed or chopped fruit. *Jelly - a clear, sweet spread made from fruit juice, pectin and sugar, which holds its shape when unmolded. *Marmalade thick spread using the pulp and rind of fruits. *Preserves like jams except the pieces of fruit are large. *Conserves preserves with nuts. If the average weight is within one ounce, either above 27 or below 24 ounces, cut 8 points. If more than one ounce, either above or below, cut 16 points. UNIFORMITY OF COLOR All eggs in the entry should be the same shade of color. If white, all eggs should be chalked white and free from creamy or tinted coloring. If brown, eggs should be uniformly the same shade of color. A cut of 1/4 to 1/2 point per egg may be made according to actual shade of each egg and how well it conforms to uniformity of shade with the other eggs in the dozen. UNIFORMITY OF SHAPE Each egg to conform as nearly as possible in shape. Extremes should be avoided. Cut 1/4 to 1/2 point for each egg off in shape or ridged. SHELL TEXTURE The shell should be strong and of uniform thickness. Cut 1/4 to 1/2 point per egg for shells that are rough, ridged or wrinkled and for shells that are porous, mottled or blind check. Cut one point for each egg that is cracked or a leaker. CONDITION The egg should be clean and carry a natural bloom. Cut 1/2 to one point for each dirty or stained egg or egg with shiny or glassy surface Disqualifications - Any of the following defects disqualifies the entry *Total weight less than 22 ounces per dozen *Eggs showing signs of incubation or germ development *Inedible eggs Entry to consist of one dozen eggs in a standard carton packed by the egg producer.
