1 Easy Breakfast Sandwich Pudding with Crispy Bacon Yield: Serves 4 to 6 Prep Time: 10 minutes Cook Time: 25 minutes Ingredients: 5 slices bacon 4 English Muffins cut into cubes 3/4 cup whole milk 3/4 cup heavy cream 4 large eggs 1 cup cheddar cheese, shredded salt and pepper to taste Directions: Preheat oven to 400 degrees. Place bacon on a baking sheet lined with foil. Bake bacon in the oven for about 15 minutes or until crispy. Remove bacon from sheet and pour leftover
2 bacon grease into a skillet. Heat skillet to medium high heat and add the English muffin cubes. Toss the cubes to make sure nothing burns. Once semi-crispy remove from skillet and set aside. In a large bowl, whisk together milk, cream, eggs, 1/2 cup cheddar cheese, salt and pepper. Spray an 8-inch baking dish with non-stick cooking spray. Add the English muffin cubes to the egg mixture and let it soak for about 3 to 4 minutes. Stir in three chopped pieces of bacon and pour the pudding mixture into the baking dish. Garnish top with remaining cheese and two pieces of chopped bacon. Place back in oven for about 25 minutes or until golden brown. Acharuli Khachapuri (Cheese and Egg Bread) Ingredients 1 tsp. active dry yeast ¼ tsp. sugar 1 tbsp. olive oil, plus more for greasing
3 1 ¼ cups flour, plus more for dusting 1 tsp. kosher salt 2 ¼ cups shredded Muenster cheese (14 oz.) 1 cup crumbled feta cheese (6 oz.) 2 eggs 4 tbsp. unsalted butter, cubed Instructions 1. Combine yeast, sugar, and ⅔ cup water heated to 115 in a bowl; let stand until foamy, about 10 minutes. Add oil, flour, and salt; mix with a wooden spoon until a soft dough forms. Transfer to a lightly floured surface and knead until smooth and elastic, about 4 minutes. Transfer to a lightly greased bowl and cover loosely with plastic wrap; set in a warm place until doubled in size, about 45 minutes. 2. Place a pizza stone on a rack in lower third of oven. Heat oven to 500 for 1 hour. Combine cheeses in a bowl; set aside. Punch down dough and divide in half. On a piece of lightly floured parchment paper, roll half of dough into a 10 circle about ⅛ thick. Spread a quarter of the cheese mixture over dough, leaving a ½ border. On one side of the circle, tightly roll dough about a third of the way toward the center. Repeat on the opposite end. There should be a 2-3 space between the two rolls. Pinch the open ends of the rolls together and twist to seal, making a boat shape; place another quarter of the cheese mixture in the middle; repeat with remaining dough and cheese. Transfer boats on paper to stone; bake until golden brown, minutes. Crack 1 egg into the center of each boat. Return to oven until egg white is slightly set, 3-4 minutes. Place 2 tbsp. butter on each bread; serve hot.

In a large bowl, toss together the potatoes, 1/4 cup of the oil or butter, salt, and pepper. Spoon about 1/3 cup of the potato mixture into each cup of a
6 12-serving muffin tin. Press the mixture into the bottom and up the sides of each cup, then bake until golden brown, about 30 to 35 minutes. Remove the nests from the oven and allow them to cool. Meanwhile, whisk together the eggs and milk. Heat a large nonstick saute pan over medium-high heat. Add the remaining oil or butter to the pan and heat. Add the onions and peppers to the pan and saute until both are soft and the onions are slightly golden, about 2 to 3 minutes. Add the sausage and cook until heated through. Add the egg mixture and stir until the eggs have set and small curds have formed. Season with salt and pepper to taste. Remove the potato nests from the muffin tin and place them on an ovenproof platter or cookie sheet. Fill each cup with some of the egg mixture, top with a sprinkling of the cheese, and place the nests in a 375 oven until the cheese is melted, about 2 to 3 minutes. If you like, garnish each nest with a little parsley. Serve warm. Scrambled Eggs in Puff Pastry Ingredients 1 sheet of puff pastry 6 eggs, beaten 1 cup sliced mushrooms 1 cup kielbasa, chopped
7 ½ cup Swiss cheese, shredded ¼ cup parsley, chopped 1 tbsp butter salt and pepper to taste 1 egg for egg wash Instructions Preheat oven to 375 F degrees. Roll out the puff pastry a bit, so that it s about 18 inches x 14 inches. You ll need about 4 inches down the center of the pastry, so start cutting 1 inch strips, leaving the 4 inches in the center. Add a tablespoon of butter to a skillet and melt it. Add the mushrooms and kielbasa and fry for a couple minutes. In the meantime, whisk together 6 eggs and mix with the shredded Swiss cheese.add the eggs to the skillet and cook. Add the parsley for color and season with salt and pepper. Let the scrambled eggs cool. Place the scrambled eggs in the center of the pastry. Take a strip from each side and fold over the eggs. One from each side at a time, sort of forming this braid. Brush the pastry with the egg wash and bake in the oven for about half hour or until nice and golden brown. Hash brown Egg Nests
8 Ingredients 1 box (5.2 oz) Betty Crocker Seasoned Skillets hash brown potatoes with hot water, salt and margarine called for on potato box 1/4 cup crumbled bacon or ham, if desired 6 eggs 1 teaspoon salt 1/2 teaspoon pepper Instructions Heat oven to 400 degrees. Spray 6 regular-size muffin cups with cooking spray. Make potatoes as directed on box. When done, place in medium bowl. Stir in crumbled bacon. Divide mixture evenly among muffin cups. Bake about 15 minutes or until starting to turn golden brown on edges. Reduce oven temperature to 350 F. Crack 1 egg over each muffin cup. Sprinkle with salt and pepper. Bake at 350 F about minutes or until egg whites and yolks are firm, not runny. Cool 5 minutes before removing from muffin cups. Baked Egg Potato Bowls

Slice a layer off the top of each potato. Using a spoon, gently scoop out insides, leaving a thin layer of potato against the skin and avoiding puncturing the bottom.
10 Reserve the scooped potato for another use. 7. Brush the inside of each potato with the olive oil. 8. Add a little salt, pepper and red pepper flakes. 9. Sprinkle a layer of bacon, thin slices of green onions and some shredded cheese into each potato. Fill each potato about ½ full. 10. Crack one egg into each potato. 11. Sprinkle with a little more bacon, onion slices and cheese. Then top with more salt, pepper and red pepper flakes. 12. Place the potatoes on a baking sheet and cook for about 20 minutes.egg whites should be set and yolks soft.
