FREE Festival & donations to horse group appreciated. ***OPEN 12PM 4PM DURING TOUR DATES*** Maple Gingerbread 1/2 cup Pure Ohio Maple Syrup 2 cups flour 1 teaspoon soda 1/2 teaspoon salt 2 eggs 1 teaspoon ginger 1 cup sour cream Then PREHEAT oven to 325 F. degrees. Combine and sift dry ingredients. Mix Pure Ohio Maple Syrup with beaten eggs and add sour cream. Combine the mixture and bake in greased 8 x 8 pan for 20 to 30 minutes. Serve warm with whipped cream or favorite ice cream. Yield: About 8 to 10 servings. Maple-Mustard Green Beans 2lbs green beans, ends trimmed 2TBSP coarse-grained Dijon mustard 3TBSP balsamic vinegar 1 ½ TBSP Pure Ohio Maple Syrup 2tsp extra-virgin olive oil 2TBSP chopped scallions Sea salt Freshly ground black pepper to taste NOTE: choose slender, crisp green beans that are bright and blemish free. Avoid mature beans with large seeds and swollen pods. Cook the beans in a saucepan, bring 2 quarts of water to a boil over high heat. Add beans and cook uncovered until crisp-tender. (Begin checking after 5 minutes) Drain and place beans in a serving bowl. Prepare the dressing while beans are cooking, in a small bowl whisk together the mustard, vinegar, Pure Ohio Maple syrup and oil. Pour dressing over hot beans, and mix to coat well, then sprinkle with scallions. Season to taste with salt and pepper. Ohio Maple Madness Tour

Located in Know County and the Heart of Ohio, the 35-acre sugar bush has been in the family for over 50 years. Eric remembers making syrup with his father and he re-opened the operation 35 years ago. He started his operation out in the woods with a roof supported by four trees and with help and wisdom from his father, he began making syrup. Since then, making maple syrup has been a yearly event shared by family and friends. They offer maple syrup, maple cream and maple sugar. ***TOUR DATES MARCH 9th & 10th, 10am to 4pm ONLY*** Maple Cream Pie (makes 8-10 servings) 1 can sweetened condensed milk 2/3 cup Pure Ohio Maple Syrup ½ cup toasted salted pecans or walnuts 2 cups real whipped cream 1 baked graham cracker pie shell Combine condensed milk and Pure Ohio Maple Syrup in a heavy saucepan. Cook over low heat, stirring constantly, until boiling. If mixture does not start to thicken, boil an additional minute or two until it does. Cool. 22 Mashed Maple Sweet Potatoes 3 medium sweet potatoes, peeled and quartered 1/4 cup Pure Ohio Maple Syrup 2 tablespoons margarine or butter 1/4 teaspoon salt 1/4 to 1/3 cup half-and-half, light cream, or milk 1. In a medium saucepan cook potatoes, covered, in a small amount of boiling water for 30 to 35 minutes or until very tender; drain. Mash with a potato masher or beat with an electric mixer on low speed. 2. Add maple syrup, margarine or butter, and salt. Gradually beat in enough half-andhalf, light cream, or milk to make potato mixture light and fluffy. Pipe or spoon potato mixture onto serving plates. Makes 6 side-dish servings. Maple Apple Pie Prepared double crust for 9 pie 5 cups fresh picked apples, peeled and sliced 3/4 cup Pure Ohio Maple Syrup 3 tablespoons cornstarch 1 egg 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon salt (optional) Maple granulated sugar (optional but really adds to the pie) PREHEAT oven to 425 F. degrees. Place peeled and sliced apples in pie shell. Mix remaining ingredients in a bowl, and pour over apples. Place top crust over filling, cut steam vents, and sprinkle with maple sugar (optional). Bake for 10 minutes, then reduce oven heat to 350 F. degrees and continue baking 25 to 30 minutes. Yield: 8 delicious servings. Serve warm with Vanilla Ice Cream...!!! Hot Maple Syrup Fruit 1cup Pure Ohio Maple Syrup 1TBSP Butter ½ tsp Cinnamon 1 tsp Vanilla Your choice~ 3 to 4 sliced apples, 3 to 4 sliced bananas, 3 to 4 sliced peaches, or a combo of your favorite fruits In a sauce pan, combine all the above ingredients except for the fruit. Bring it to a boil, reduce heat & let simmer for 5 minutes. Add your fruit, let fruit simmer in sauce for 10 minutes, stirring often. This is fantastic in the bottom of a bowl with vanilla ice cream on top. Also good by itself, or atop a slice of Angel Food or Bunt Cake. Ohio Maple Madness Tour

23 Light & Chewy Maple Bars Makes at least 6 servings ½ cup Sugar ½ cup Shortening ½ cup Pure Maple Syrup 1 Egg 2/3 cup Flour ½ tsp Baking Powder ½ tsp Vanilla 1 cup Oats 1 cup Walnuts Heat oven to 350 degrees. Generously grease an 11 x7 baking pan. Prepare the batter: beat sugar and shortening until creamy. Add Pure Maple Syrup and egg, and beat well. Scrape bowl. Combine flour and baking powder, stirring briskly, and add to creamed mixture. Add vanilla, then oats and walnuts. Spread into prepared baking pan, and bake in the preheated oven for 35 minutes. Cut squares while still warm Parker s Lodge Maple Syrup Squares Base: ½ cup butter ¼ cup brown sugar 1 cup all-purpose flour Topping: 2/3 cup brown sugar, firmly packed 2 eggs, beaten ¼ tsp salt 1 cup walnuts or pecans chopped 1 cup pure maple syrup 2 tbsp all-purpose flour 1 tsp vanilla Preheat oven to 350 degrees F. In a food processor or mixing bowl, combine butter, brown sugar and flour and mix well. Pres into a greased and floured 8-inch square baking pan; bake 15 minutes. In a large bowl, combine topping ingredients and pour over base. Return to oven and bake an additional 30 minutes or until topping is browned and bubble. Cool and cut into squares. This March our trees will be tapped, sap gathered and boiled, pancakes and sausage cooked, and coffee brewed for thousands more people who for over 67 years have made this a yearly tradition. The Burton Log Cabin* will be making maple syrup and maple candy, a tradition in the area which dates back for centuries. An Antique and Craft Show will be in full swing at the High School where Beaches & Dreams Travel Co. will be waiting to see you. The Burton Public Library will host book sales and Century Village Museum will bustle with activity. Local antiques stores and shops stocked with new ideas for spring are ready for visitors. But don t despair... you can still have unique & delicious pancakes even after the season ends.
