2 Almost 13 years ago, my family and I took a leap of faith and decided that the recipe for my mother s ham biscuits was worth sharing across the country - thankfully you all agreed even when Mom didn t. Carrie, don t you know everyone makes their own biscuits, she would say. What an adventure it has been - from mom s retirement to restoring a historic Officers Quarters on the former Charleston Navy Base for our bakery, to opening three Callie s Hot Little Biscuits in Atlanta and Charleston and oh, and let s not forget the cross country cookbook tour in an old RV coined Beatrice. You embraced and supported our goal of keeping the art of Southern biscuit making alive and today, our biscuits are still made-by-hand with no machinery whatsoever and our pimento cheeses hand-mixed. As we ve grown, we ve looked across the south to find the perfect pairings and in doing so found joy in sourcing pantry staples from our friends and neighbors. From our families both at home and in our bakery and bakeshops, thank you. We could not be more grateful to all of you who jumped on our biscuit bandwagon!
