2 Whether it is at the start of school or months into the school year, we are always looking for new breakfast and lunch ideas for our children. What makes a great recipe? One that tastes great and has nutritional value. What makes it even better? When it is easy to make ahead and freeze for later! Here are five recipes to try and the best part is you can freeze them all and the kids can take any of the five meals for lunch and not just for breakfast! I love hosting my annual Christmas Bake Exchange, so this year I am going to host a Back To School Lunch Exchange with a few other moms I will just pick one of the following recipes! 3 Shopping List (For all 5 recipes!) Dairy & Freezer 1 cup Butter ¼ cup Milk 10 individual Eggs 4 cups Shredded Cheese (Mozzarella, Cheddar or mixed) 5 tablespoons Cream Cheese 2 packages of Refrigerated Crescent Rolls Meat 2/3 cup chopped up sliced Pepperoni 1 ½ cups Cooked Ground Beef 2 cups of Cooked Chicken Breast (cut into 1/2 cubes) Seasoning & Baking 1 packet of Taco Seasoning 1 small can of Pizza Sauce Salsa for serving with packed lunches 1/3 cup Honey 1 cup Brown Sugar 2 teaspoons Baking Soda 2 teaspoon Salt 2 teaspoons Vanilla Extract 1 ½ cups Chocolate Chips Cooking Spray Grains 3 cups Rolled Oats 3 cups Flour 2 cups Whole-grain Cereal Flakes 2 cups Oat or Bran O-shaped Cereal 1 package of 10 Small Whole Wheat Tortillas Wraps Fruits & Veggies Optional - 2 tablespoons chopped, dried Cranberries 3 mashed Bananas ¼ cup Onion 1 cup Spinach A bag of Apples or Grapes or Mini-carrots
4 #1 - Breakfast BananaChoco-Oat Cookies (makes 4 dozen one to have now and 3 to freeze!) Ingredients: ½ cup soften Butter 1 cup Brown Sugar 2 Eggs 2 teaspoons Vanilla Extract 3 mashed Bananas 3 cups Flour 3 cups Rolled Oats 2 teaspoon Salt 2 teaspoons Baking Soda 1 bag of Chocolate Chips Why this recipe? Your child(ren) will have fun making these bite-sized cookies with you. Great for grabbing and dashing in the busy rush out the door! Quick & Easy Steps to Yumminess: 1) Preheat oven to 350 degrees. 2) Cream butter and sugar together in a bowl. 3) Add in egg, vanilla, and banana and mix. 4) Add in dry ingredients. 5) Stir in the entire bag of chocolate chips. 6) Spray two cookie sheets and drop teaspoons of batter onto the baking sheets. 7) Bake at 350 degrees for 8-10 minutes, until golden around the edges. 8) Allow cookies to cool. 9) Eat and enjoy. And freeze the remaining cookies for breakfasts and for after school snacking! Pack with apple slices or grapes or mini-carrots.

6 #2 - Cereal Squares (makes 9 squares some to eat right away and some to freeze!) Why this recipe? Ingredients: 1/3 cup Butter 1/3 cup Honey 2 cups Whole-grain Cereal Flakes 2 cups Oat or Bran O-shaped Cereal Optional - 2 tablespoons chopped, dried Cranberries These simple cereal bars use nonsugary cereals and the recipe uses no added sugar. The sweetness comes from the honey and optional cranberries. Quick & Easy Steps to Yumminess: 1) Coat an 8-inch square baking pan with cooking spray. In a small microwave-safe bowl, melt the butter and honey on high for 30 seconds, then stir until blended. 2) In a large microwave-safe bowl, combine the cereal flakes, O s, and optionally the dried cranberries. 3) Microwave on high for 1½ minutes, stirring every 30 seconds, until warmed. 4) Gradually stir the butter mixture into the cereal until thoroughly and evenly coated. Press into the prepared pan. Refrigerate until set and firm. Cut into 9 squares. 5) When they are cooled to room temperature, simply wrap individual pieces and toss in the freezer for grab and go breakfasts! 6) Pack with apple slices or grapes or mini-carrots!

8 #3 - Omelette Muffins (makes 12 muffins) Why this recipe? Ingredients: 8 whole eggs 1 cup Shredded Cheese ¼ cup Diced Onion 1 cup Spinach, chopped finely (or another favorite vegetable) ¼ cup Milk Eating eggs and vegetables for breakfast (or lunch) is great for your child(ren) s health and a strong brain food! Quick & Easy Steps to Yumminess: 1) Preheat oven to 350 degrees. 2) Whisk, pour into lined muffin tins. 3) Bake for 25 minutes. 4) When they are cooled to room temperature, simply wrap individual pieces and toss in the freezer. Refrigerate the night before to thaw, and microwave in the morning for 30 seconds to serve hot if you wish! 5) Pack with apple slices or grapes or mini-carrots!

10 #4 - Pizza or Taco Calzone (makes 8 mini-calzones some to eat right away and some to freeze!) Ingredients: 1 Refrigerated Crescent Roll 5 tablespoons Cream Cheese For PIZZA Calzone: 1 small can of Pizza Sauce ½ cup sliced Pepperoni 1 cup Shredded Mozzarella Cheese Why this recipe? Kids love pizza, this is something they will be excited to have as a treat for lunch! And if they help you make the calzones, they will love them even more :) For TACO Calzone: 1½ cups cooked Ground Beef 1 packet of Taco Seasoning 1 cup shredded Cheddar or Tex-Mex Cheese Quick & Easy Steps to Yumminess: 1) Unroll crescent roll dough. 2) Get cream cheese to room temperature and spread a thin layer over dough. 3) For making Pizza Calzone: Spread pizza sauce over the top of the cream cheese. Chop pepperoni, sprinkle pepperoni and mozzarella cheese evenly over the top. Tightly roll up each rectangle. 4) Cut each of the rolls in half and place on parchment paper lined baking sheet. 5) Bake at 375 for minutes or until golden brown. 6) When they are cooled to room temperature, simply wrap individual pieces and toss in the freezer for grab and go lunches! 7) Pack with apple slices or grapes or mini carrots! For making Taco Calzone, replace Step #3 with this process: Sprinkle cooked, drained ground beef cooked with taco seasoning and shredded cheese evenly over the top of cream cheese. Tightly roll up each rectangle.

12 #5 - Cheesy Chicken Quesadillas (makes 10 servings some to eat right away and some to freeze!) Ingredients: 2 cups of Cooked Chicken Breast (cut into 1/2 cubes) 1 package of 10 Small Whole Wheat Tortilla Wraps 2 cups Shredded Mexican Cheese Blend Cooking Spray Salsa for packed lunches Why this recipe? This recipe makes for a filling meal, and is also easy to switch up. For example substitute the chicken with taco seasoned beef, or leftover ham, or a mix of cheeses, or with breakfast sausage! Quick & Easy Steps to Yumminess: 1) Pre-heat large skillet or griddle to medium-low temperature and spray lightly with cooking spray. 2) Lay a tortilla on the hot skillet and quickly layer shredded cheese on the entire tortilla. 3) Carefully place chicken pieces on half the cheese covered tortilla. 4) When you see that cheese has melted, take a spatula and quickly fold over the tortilla so that the chicken is covered and the tortilla is a perfect half moon. 5) Remove and allow to cool on a plate. Cut each moon into three or four parts and freeze in serving portions for quick and easy grab and go lunches. Serve with salsa for dipping. 6) Pack with apple slices or grapes or mini-carrots!
