Following a very bumpy road trip the group enjoyed a wonderful tour and lunch. 2 San Patricio County Texas Treasure Award Don t forget to turn in your club nominee to the San Patricio County Extension Office by Friday, May 11. You can only nominate one member per club. Application is enclosed. Fruits and Veggies that won t break your budget Seasonal Fruits and Vegetables Look at the store ads. Buy the fruits and vegetables that are in season and on sale. Visit your local farmers market often this summer. Fruits and veggies taste the best when they are in season! Frozen Vegetables Frozen green beans, peas, corn, broccoli, cauliflower and spinach can add vitamins, minerals and fiber to your meals. Warm the amount needed for a meal and put the rest of the bag back into the freezer. Add a few veggies to your soup, pasta or casserole. Sweet Potatoes They are packed with vitamin A, potassium and fiber. Bake a sweet potato instead of a white potato for an easy side dish. Carrots A veggie that is always a good buy in the grocery store or farmers market. Shredded carrots can be added to soups, casseroles, stir frys, salads and tacos. Potatoes A healthy carbohydrate that can be used in a variety of dishes. Use baked or mashed potatoes instead of pasta, rice and bread in some of your meals. Avoid fried potatoes and French fries which are high in fat and calories. Ingredients: 4 medium potatoes Canola oil Salt and pepper Potato Skin Nachos Directions: 1. Scrub potatoes and place on a baking tray. Bake in a 400 oven for 50 to 60 minutes, or until tender. 2. Remove potatoes from the oven and let cool. Cut potatoes in half. Scoop out the middle, leaving about ¼ inch of potato on the skin. Cut potato skin into 2 inch pieces. Save the leftover potato that you scooped out to make a smashed potato dish later. 3. Sprinkle lightly with oil, salt and pepper. Return to oven and bake for 4 to 5 minutes. Topping Ingredients: ½ pound lean ground turkey or beef ½ cup chopped onion ½ cup chopped red or green pepper 1 teaspoon taco seasoning ½ cup shredded cheddar cheese Topping Directions: 1. Cook ground meat, onion and peppers in skillet until the meat is no longer pink. Add taco seasoning. 2. Place a small amount of cooked meat mixture on each potato skin. Sprinkle with a little cheddar cheese. 3. Place the potato skins in the oven and heat until cheese melts. Serve with salsa. Upcoming Events April Pink Event May Extension Office closed June 4... 3 More Potato Skin Toppers: Refried beans, shredded cheddar cheese and salsa. Combine finely chopped cooked pepper and onion with chopped ham. Combine finely chopped cooked broccoli and grated parmesan cheese. Smashed Potatoes Smash cooked potato (from baked potatoes) until fluffy. Add a little skim milk if needed while mashing. Add your favorite flavor: Broccoli - Finely chopped cooked broccoli and a little shredded cheddar cheese. Cauliflower finely chopped cooked cauliflower and a little parmesan cheese. Garlic cook 1 to 2 minced garlic cloves in 1 tablespoon of oil for 1 minute over low heat. Add to potatoes. Sweet Potatoes combine ½ cooked white potato and ½ cooked sweet potatoes. Place the Smashed Potatoes in a small casserole dish. Bake in a 375 oven for 15 minutes and serve! A delicious side dish with grilled chicken or pork chops. Choose healthy potatoes: Baked Potato 150 calories 0 fat calories (1 medium potato with skin) Mashed Potatoes 111 calories 36 fat calories (1/2 cup mashed potatoes) French Fries 316 calories 144 fat calories (20 french fries) Potatoes are our favorite vegetable. However, most of the potatoes we eat are French fries. French fries are high in fat and very low in nutrition. Skip the French fries! These fruits and vegetables are nutrient dense - they have lots of vitamins, minerals and other nutrients in a serving compared to other foods. Apricots Broccoli Peaches Carrots Kiwi Romaine and Leaf Lettuce Strawberries Spinach Oranges Sweet Potatoes Snack on a kiwi. Peel an orange and break it into segments. Serve sliced strawberries on yogurt. Chop dark green leaf lettuce or romaine and add to a sandwich. Mini Potatoes Red potatoes have a delicious flavor in the spring. 1. Scrub small red potatoes. 2. Bake in the microwave until tender. 3. Slice potatoes on top and push open. 4. Top with veggies: Cooked chopped broccoli. Heated frozen peas or corn. Cooked carrot slices. Have extra bananas? Make a smoothie. The sweet flavor of a banana will make a great smoothie. 1 large ripe banana 1 cup frozen berries 1 cup skim milk Place the banana, berries and milk in a blender. Blend until smooth. 3 servings (6 ounce serving) - 82 calories,.3 gram fat, 4% calories from fat and 2 grams of fiber in a serving.
