2 Spur serves a variety of classic steakhouse cuts both on and off the bone. When deciding on a cut of beef, the amount of marbling is important. Marbling the small streaks of fat spread through the meat differs from cut to cut and adds flavour and succulence. The position of the cut also influences the tenderness of the steak. 1. T-Bone Steak The original speciality steak. This cut gives you the best of two worlds: the tenderness of fillet and the juicy flavour of sirloin joined at the bone in a T that can only stand for one thing: TASTY! 2. Chargrilled Rump With the most marbling and a coarser texture, this cut is extra juicy, and exceptionally flavoursome. As far as steaks go, the rump is every meat lover s unsung hero. 3. New York Sirloin Reputed to be the tastiest cut of beef, the sirloin falls somewhere between the fillet and the rump in terms of texture. If you re looking for that perfect combination of tenderness and flavour, you simply can t go wrong with a perfectly prepared sirloin. 4. Fillet The most tender cut of all. With almost no marbling, this cut is lean and healthy. Its American name, tenderloin, perfectly describes its buttery smooth texture. 5. Lazy Aged Rump For the true connoisseur, we recommend our 500g Lazy Aged Steak a prime cut of rump, matured for 28 days.
