7 Safe burger handling for your employees Have employees wash their hands, front and back, with lathered soap, right up to their forearms, for at least 20 seconds. Only now may they handle the meat. After handling the meat, they should wash their hands thoroughly once more. Have staff keep burgers away from any surface where other food may have been. Do not thaw. Get your cooks to prepare your burgers directly from frozen. Never let kitchen staff or servers reuse any dish for cooked burgers that touched the uncooked meat. Cooking instructions: How to cook the perfect burger 1 Your beef burger is only done at 74 C (165 F). It s a matter of safety to kill any harmful bacteria. That s 74 C throughout! Only trust the temperature of the patty, not its colour. Use a food thermometer with digital readout. (That is a stovetop thermometer, not one of these oven-safe models for poultry or roasts.) Take the patty off the grill, then immediately test the temperature one inch through the side of the patty at its middle. If it s not yet 74 C, keep cooking. If it starts to burn, simply lower the heat or raise the grill. Cooking in bulk? To ensure all patties are ready, take the temperature of several of the thickest.
