It s a favorite of almost everyone and has become a part of African American culinary heritage. During the times when traveling meant facing the vagaries of racial laws on southern roads and being hungry without a place to eat, a shoebox of fried chicken became a virtual talisman against starvation on the road. This custom became so ingrained that long after the need ended, many African American families would no more think of starting out on a trip without a box of fried chicken than they would think of driving without first filling the car with gas. This is a dish that is truly a part of America s Black history.
