1 PEANUT BUTTER HONEY YOGURT DIP INGREDIENTS: 1 (6 z) cntainer plain lw fat Greek ygurt 3 tablespns creamy peanut butter 3 teaspns hney DIRECTIONS: In a small bwl, cmbine Greek ygurt, peanut butter, and hney. Stir until cmbined and smth. Serve with apple slices r ther cut up fruit. Nte this dip is als great with graham crackers, pretzels, r ckies!

3 Ingredients: 2-3 cups brccli flrets, stems remved 1 cup rz Juice frm 1/2 Lemn 1 teaspn Dijn 1 tablespn balsamic vinegar 2 tablespns plus 1/2 teaspn salt 1/4 teaspn black pepper 1/4 cup live il 1 red Bell Pepper, diced 1/2 medium red nin, finely chpped 1 tablespn chpped parsley 1 (16 unce can) chickpeas, drained Find it nline: hps:// pasta salad/ Instructins: Place ice cubes and water in a medium-sized bwl. Bring a pt f water t a bil. Add the brccli flrets and let them bil fr 2 minutes. Scp them ut f the water and submerge them in the bwl with the ice and water t stp them cking. Drain them and set them aside. In the same pt that yu used t blanche the brccli, bil the rz. There s n need t change the water, just be sure and bring it back t a rlling bil and add 2 tablespns f salt befre adding the rz. Ck the rz accrding t package directins. While the rz is biling, chp the cled brccli flrets int small pieces. In a large bwl, cmbine the lemn juice, balsamic vinegar, 1/2 teaspn salt and pepper. While whisking, slwly add the live il. Whisk until the il is fully incrprated. Drain the rz and transfer it t the bwl with the dressing. Add the brccli, bell pepper, red nin, chpped parsley, and chickpeas and tss Yields:6-8,prep time:10 min, ck

Carefully puree in a fd prcessr r blender (dn't fill t full; split int tw prtins if needed) until smth.

5 Watermeln & Tmat Salad Serves: 8 Serving Size: 1 Cup Preparatin Time: 15 Minutes Chilling Time: 30 Minutes Ingredients: 3 large red r yellw tmates, chpped int ½ inch cubes 2 cups cubed ( ½ inch pieces) seedless watermeln ½ cup sliced fresh basil 1/3 cup thinly sliced red nin 2 tbsp. live il 1 ½ tbsp. balsamic vinegar ¼ tsp. sea salt ¼ tsp. freshly grund black pepper ¼ tsp. chili pwder 2 tbsp. minced fresh chives Directins: 1. In a large bwl, mix tgether the tmates, watermeln, basil, and red nin. 2. In a small bwl, whisk tgether the live il, balsalmic vinegar, salt, pepper, and chili pwder. Add the dressing t the tmat-watermeln mixture. Cver and refrigerate 30 minutes. 3. Befre serving, tp the salad with the chives. Pack in an airtight cntainer fr transprt.

6 Chili Lime Sweet Crn Salad Serves: 4-6 Ingredients: 6 ears f crn, husk and silk remved 2 tablespns melted butter 2 tablespns freshly squeezed lime juice 1/2 teaspn chili pwder 1 tablespns chpped cilantr 1/2 cup crumbled feta 1/4 teaspn salt (r t taste) Directins: 1. In a large pt, bring water t a bil. Bil the crn fr 3 minutes, then remve and allw t cl slightly s that they can be handled. 2. Cut kernels ff the cb int a large bwl. Set aside. 3. In a small bwl, whisk tgether butter, lime juice, chili pwder, and chpped cilantr. 4. Pur the chili lime mixture ver the crn and mix t cat. 5. Add the crumbled feta and stir. Seasn with salt t taste. 6. Serve at rm temperature. Refrigerate leftvers.

7 Fresh Green Bean Salad with Balsamic Dressing Yield: Serves 4-6 as a side dish Ingredients 2 punds fresh green beans, ends trimmed if desired 1 pint cherry r grape tmates, halved 1/4 cup live il 3 tablespns freshly squeezed lemn juice (frm abut 2-3 lemns) 3 tablespns balsamic vinegar 1/4 teaspn salt 1/4 teaspn garlic pwder 1/8 teaspn pepper 4 unces feta cheese Directins 1. Bring a large pt f water t a bil. Add 1 teaspn salt. Ck green beans until tender, 5-10 minutes. While they ck, prepare a large bwl with an ice water bath. Immediately drain the beans int a clander (r scp them ut with a sltted spn) and place the drained beans in the ice water fr a few minutes t stp the cking. This will keep them bright green and perfectly tender. 2. Drain the beans and pat them dry. Tss them in a bwl with the tmates. 3. Fr the dressing, whisk tgether the live il, lemn juice, vinegar, salt, garlic pwder, and pepper. Pur the mixture ver the green beans and tss t cat. Cver the bwl and chill fr at least an hur r up t 3 hurs befre ready t serve. 4. Stir in the feta cheese right befre serving. Serve chilled r at rm temperature.

8 Pic De Gall Prep 20 m Ready In 50 m Ingredients 1 medium tmat, diced 1 nin, finely chpped 1/2 fresh jalapen pepper, seeded and chpped 2 sprigs fresh cilantr, finely chpped 1 green nin, finely chpped 1/2 teaspn garlic pwder 1/8 teaspn salt 1/8 teaspn pepper Directins 1. In a medium bwl, cmbine tmat, nin, jalapen pepper (t taste,) cilantr and green nin. Seasn with garlic pwder, salt and pepper. Stir until evenly distributed. Refrigerate fr 30 minutes.

9 Graham Cracker Ygurt Bars Ingredients: 14 Graham crackers brken int quarters 1 1/2 cup vanilla Greek nnfat ygurt 1 1/2 cup fat free whipped tpping 1 tsp vanilla extract 1 cup chpped fruit pieces f yur chice Nutritinal Infrmatin: Serving Size: 1 piece Calries: 50 Fat: 1 g Carbhydrates: 9 g Prtein: 2 g Sdium: 45 mg Fiber: 1 g Directins: Line 9 pan with tin fil Break apart graham crackers and arrange half f the graham crackers in the pan Mix ygurt, whipped tpping, vanilla extract, and chpped fruit pieces until fluffy Refrigerate fr 30 minutes Spn mixture ver graham crackers and tp with remaining graham cracker pieces Freeze fr 2 hurs

10 6 cups fresh chpped rhubarb, washed ½ cup water ½ cup brwn sugar 2 packages lw calrie raspberry Jell-O 2 cups lw calrie whipped tpping Raspberries fr garnish Rhubarb Dream In a saucepan ver medium heat, cmbine rhubarb, brwn sugar, and enugh water t cver the bttm f the pan (abut 2 tablespns). Bring t a bil, stirring ccasinally. Cver and simmer gently fr abut 5 minutes (rhubarb will be mushy). Taste mixture t ensure tartness. In a medium bwl, stir tgether Jell-O and ht rhubarb mixture until Jell-O is disslved. Stir in 1 cup cld water and refrigerate until nearly set. Fld whipped tpping in t Jell-O, and allw t set vernight. Garnish with raspberries.

11 Mediterranean Ptat Salad Prep 15 m Ck 45 m Ready In 1 h Ingredients 2 punds ptates 1 green bell pepper, minced 1 cucumber, sliced and quartered 1/2 cup sliced red nin 8 unces crumbled feta cheese 1 lemn, juiced 1/2 cup Italian-style salad dressing salt and pepper t taste 3 pita breads, cut int wedges Directins 1. Bring a large pt f salted water t a bil. Add ptates and ck until tender but still firm, abut 15 minutes. Drain, cl and chp. 2. In a large bwl, cmbine the ptates, green peppers, cucumbers, red nin and cheese. 3. Whisk tgether the lemn juice, salad dressing, salt and pepper. Pur ver salad and tss t cat. Serve with pita bread wedges if desired.

Peel and slice yur cucumber, slice yur tmat, and slice yur nin. I like t slice, then quarter the nin because it s easier t eat. 2. In a bwl, cmbine dill and salt. 3. Add sur cream r ygurt and lemn juice t taste. Mix well. 4. Add nin, cucumber, and tmat t the mixture and stir until the veggies are cated with the dressing.
