6 Greetings! Although I m writing this just as it seems like winter has finally arrived and we ve had the first big snowfall of the season, it s important to remember that February and March signal the start of Spring vacation season for many clients and staff. When Home Care staff members are out of town, I will do my very best to reassign clients to other caregivers and give clients ample notice regarding any change in caregiver and/ or time. Sometimes this means that the day or time of a regularly scheduled visit must be changed for the short term. Thank you, and please know that I appreciate your understanding and flexibility so that we can take Home Care care of all of our clients. When you re planning to be out of town, please remember that it is your responsibility to notify me directly (or leave a message) of any absences or cancellation of visits. If you re not able to keep a scheduled appointment, please provide at least 24 hours advance notice, so that staff members can be re-assigned to help other clients. If you plan on being out of town for any amount of time, please notify me at or pstern@seniorcenterjh.org as early as possible. Thanks very much. 7 February Health Focus Beat Cabin Fever! It is cold and snowy outside all the time now and it is also the time that Cabin Fever begins to set it. While Cabin Fever is not an official diagnosis, it usually leave people feeling restless, uncomfortable and unhappy about being inside for too long. Here are a few tricks you can try to improve your mood and get rid of the winter blues. Get Outside When the snow stops flying and the sun is shining try and get outside to get some sunlight on your face. Even this small area of sun exposed skin can produce Vitamin D. Vitamin D is proven to help fight off depression and improve bone density. If the snow doesn t stop, increase your Vitamin D intake with fortified foods such as: Fresh Salmon, Catfish, and Oyster or Canned Tuna, Salmon and Sardines Cod Liver Oil Beef liver Eggs Mushrooms Cow s milk and yogurt, but not cheese and ice cream Fortified orange juice Fortified Tofu Cereals Get Moving If you can get outside to get some exercise, you should. If it is too icy and cold, try exercising inside. The Senior Center offers exercise classes, treadmills and stationary bikes to ensure you are able to get enough exercise throughout the winter months. The Center for Disease Control recommends older adults should get 20 minutes of exercise a day. Get an Indoor Hobby Doing puzzles, Sudoku, cross-words, knitting, indoor gardening, art or scrapbooking can help keep your brain active and unconcerned about being inside for long periods of time. Hopefully making a few changes to your current lifestyle will improve your mood and your overall health. Included is a delicious recipe for Mushroom Egg Bake from the Sunset Magazine as a good source of vitamin D. This recipe is delicious for breakfast or dinner and contains 3 great sources of Vitamin D. Vitamin D helps fight off depression. Mushroom Egg Bake Ingredients: About 2 tablespoons butter 8 ounces fresh mushroom of your choice, cleaned and sliced 1 1/2 cups shredded or jack cheese (about 4 oz.) 1/2 cup whipping cream 1/2 teaspoon dry mustard 1/4 teaspoon minced fresh thyme leaves 1/4 teaspoon salt 1/4 teaspoon pepper 6 large eggs, lightly beaten Directions: Preheat oven to 325. In a large frying pan over high heat, melt 2 tablespoons butter. Add mushrooms and cook, stirring often, until lightly browned, about 5 minutes. Butter an 8-inch square baking dish and sprinkle cheese on the bottom. In a small bowl, mix cream, mustard, thyme, salt, and pepper. Pour half the cream mixture over the cheese. Top with mushrooms and eggs. Pour remaining cream mixture over the top. Bake until eggs are set, about 35 minutes. Chef s Notes: The soft, creamy texture comes from layering the cream with the eggs rather than beating them together. **The health articles in this newsletter are intended for information only.
