In 1838, he developed a preservation process to dry vegetables while maintaining their natural nutritional value and flavor while reducing cook time. 5 Short Ribs Yield: 10 servings 5 lbs. Short Ribs Salt and Pepper, as needed Oil, as needed 8 oz. Onion, large dice 4 oz. Carrot, large dice 4 oz. Celery, large dice 1 c. Red Wine 1 Sachet garlic, bay, peppercorns, thyme 2 qts. KNORR Demi-Glace Sauce Mix, prepared Crispy Fried Onions, for garnish 1. Season ribs with salt and pepper. 2. Heat oil in braising pan. 3. Sear ribs in hot oil to a deep brown color remove and reserve. 4. In same oil, caramelize onions, carrots, and celery. 5. Deglaze with red wine and reduce dry. 6. Add ribs back to pan. Add KNORR Demi-Glace Sauce to cover ribs, ¾ of the way up. 7. Add sachet and bring to a simmer. 8. Cover and place into a 325 F oven. Braise for 1½ hours or until fork tender. 9. Strain sauce and reserve. 10. Place ribs on plate. Cover with sauce and garnish with fried onions. Serve with your favorite sides. Santa Fe Pork Yield: 10 servings 10 (6-oz.) Pork Loin Medallions Green Chile and Tomato Hollandaise Sauce 6 cloves Garlic, minced 3 T. Cilantro, chopped 3 c. KNORR Hollandaise Sauce Mix, prepared 3 oz. Olive Oil 3 oz. Green Chiles, diced 1 oz. Lime Juice, freshly squeezed 2 oz. Tomatoes, seeded and diced ¼ t. Pepper ¼ t. Red Jalapeño, seeded and minced ½ t. Sugar 1 T. Cilantro, chopped 20 oz. Green Chile and Tomato Hollandaise Sauce; recipe to right 1 oz. Lime Juice, freshly squeezed 1. Combine all ingredients and marinate for 1 to 2 hours. 2. Remove pork from marinade; discard marinade. Grill pork, turning as necessary, until internal temperature of 145 F is reached. 3. Ladle 2 oz. Green Chile and Tomato Hollandaise Sauce over pork; serve immediately. 1. Add chiles, tomatoes and jalapeño to heated KNORR Hollandaise Sauce. 2. Finish with cilantro and lime juice.
