1 Chicken & Onions Christy Schubkegel 1 large chicken or equal amount of boneless chicken - cut up 2 onions chopped 2 cloves garlic minced 2 T oil dash ground pepper 1 bay leaf 1 T salt 3 c water approx. Saute onions in oil until tender in a large, high-sided skillet. Add chicken & spices. Add water to cover the chicken. Bring to a simmer cover and cook approximately 1 ½ hours. Serve hot over rice. (If I use bone in chicken I debone it after it is cooked and then reheat it)
2 4 ½ lb over grown zucchini dash salt dash pepper pinch caraway seed ¼ c goose fat or oil 1 onion finely chopped 1 clove garlic minced 1 t sweet Hungarian paprika 1 T tomato puree 1 t chopped dill 1/8 c flour 8 T sour cream 1 c water or chicken broth approximate Zucchini in Cream Sauce Mary Wagner Peal zucchini and remove seeds with a spoon. Cut into zulienned strips about the size of french fries. Salt lightly and let stand to marinate minutes. Brown onion in fat add flour, garlic, and all spices and lightly brown mixture. Add water or broth slowly, stirring well to make a thin sauce. Squeeze squash gently to remove some of the liquid, then add to sauce. Cook until soft. Add sour cream at the end and gently heat. *************************************************************** 3 large peppers mixed colors sliced 3 medium onions sliced 4 tomatoes peeled and cut into chunks 4 T olive oil 1 ½ T paprika 1 ½ t salt to taste ½ c uncooked rice Satarsch (Juwetsch) Was gibts zum Essen Hedy Nuspl Saute onions till glossy. Add peppers, tomatoes, paprika, and salt and simmer for about 40 minutes. Pour rice into mixture and simmer until the rice is done, around 20 minutes. Kraut Salat

Add vinegar, water, sugar, and oil Put in a pot and cook over medium heat until mixture comes to a simmer. Remove from heat and let cool. 4 Poppy Seed Bread / Mon Strudel Leah Duda 2 t. sugar 5 t. yeast 1 c. warm water 6 T. butter/shortening 1 t. salt 2 eggs 1 c. warm milk ½ c. sugar 7 c. flour (approximately) Dissolve yeast in water with 2 t. sugar. Combine rest of ingredients adding enough flour to make a fairly stiff dough. Knead until smooth and elastic. Let rise covered until doubled. Divide in half and roll each to ¼ thickness. Spread with ½ the filling. Repeat with remaining dough. Roll up and seal edges. Place on greased baking sheet. Let rise until doubled. Bake at 375 F for approximately 50 minutes. Filling: 2 c. poppy seeds they stay in bread better if you grind them. 2 c. sugar 2 c. milk, ½ and ½, or cream Combine and cook together on medium stirring occasionally until thickened. Cool. *This recipe can be made in the breadmaker. Combine all liquid ingredients first then add dry ingredients, and then put yeast on top. Set to dough setting. When done finish instructions above.
5 FRESH PFLAUME KUCHEN Ms. Lyle Talbot 1 ½ c. sifted flour 3 t. baking powder ¾ t. salt sugar 1/3 c. shortening ¾ c. milk 12 fresh Italian prunes ¼ t. nutmeg 3 T. butter Sift together flour, baking powder, salt and 1/3 c. sugar. Cut in shortening until fine. Stir in milk Spread in bottom of a buttered 12x8x2 baking dish. Arrange pitted and cut pruned over top. Mix ¾ c. sugar and nutmeg and cut in butter to form crumbs. Sprinkle over prunes. Bake at 375 F for minutes. (Better after a day or two.) ************************************************* Easy Apple Cake Katharina Juhn 3 eggs 1 ¾ c sugar ¾ c oil 2 c flour ½ t salt ½ t baking soda 1-2 t cinnamon ¾ c nuts chopped (optional) 4-5 medium apples peeled and either grated or cut in large chunks Combine eggs, sugar and oil and mix thoroughly. Add the dry ingredients. Add the nuts and apples and mix well. Pour batter into greased baking pan. Bake at 350 degrees F for 1 hour

Sit overnight for the flavors to mix. Stuff into casings with a sausage press. Simmer till cooked through. Lieblinger Hungarian Sausage Vicky Stumpf Note: Certain assumptions are made...mostly that you already know how to make sausage! 4 large red potatoes dash salt 2 c elbow macaroni 4 T oil 1 medium-large onion diced 1 t red Hungarian paprika ***************************************** Granadiermarsch Barbara Schied Boil the potatoes in salt water until soft. Peel and cut into slices. Cook elbow macaroni in salt water. Drain well. In large pan heat oil and cook the onion until soft but NOT brown. Add a pinch of salt and the paprika. Add the potatoes and macaroni and roast thoroughly.
