1 NIC CARDINAL CATERING Banquet and Reception Menu
2 North Idaho College Food and Beverage Practices: - NIC Dining Services is charged with providing food, beverage and related services for the college community and guests of the college. Accordingly, NIC Dining Services shall provide all food, beverage, and related services for all groups, events and organizations utilizing facilities under the jurisdiction of North Idaho College. In the event NIC Dining Services cannot directly provide the services requested, NIC Dining Services shall approve of all services and items provided by outside vendors. Requests for exemptions from this policy must be submitted in writing to the Food Service Manager not less than 15 business days prior to the date of the desired event. - The primary purpose of this policy is to ensure that the NIC community and guests utilizing NIC facilities receive the highest quality of food, beverage and services in accordance with applicable federal, state and local laws. This also protects the NIC community by insuring all food and beverages are prepared and served with critical health and sanitation standards such as those developed by the National Sanitation Foundation (NSF) and the National Association of College and University Food Services (NACUFS). - In accordance with health and sanitation efforts, there is a policy of zero leftovers allowed to be taken from all buffets and served meals provided by NIC Dinning Services. How to Place an Order or Seek Assistance Planning a Special Event - Routine food service requests can be made in person by visiting the NIC Dining Services in the Edminster Student Union Building or by calling or Food, beverage, or related service requests that require greater detail can be arranged with an appointment with the Food Service Manager or the Food Service Production Manager. - All food service orders must have a guaranteed count of participants in the event no later than 48 hours before the event. Minimum Orders: - The minimum order numbers listed in this menu, represent the lowest number of items Dining Services can provide at the price listed. Requests below the lowest number of items may require a change in pricing. Delivery Charges: There will be a $20.00 delivery fee for off campus food service orders. Additional Charges: - For large events there could be additional charges for equipment rental, extra linen, and/or service ware rental. - Labor charges for all events will be included in the price for 3 hours. Any events that go over 3 hours will have additional labor charge added. This amount will be pre arranged with the event planner, and will be in the signed contract.
3 Breakfast Buffet Selections 25 person minimum All breakfasts include regular & decaffeinated coffee, orange Juice, water and hot tea. Oatmeal Breakfast Hot Steel Cut Oatmeal, raisins, dried cranberries, Almond and Soy Milk, half and half, brown sugar, fresh fruit salad, muffins & yogurt cups $6.95 Market Breakfast Scrambled eggs, golden hash browns, choice of smoked bacon, sausage or honey baked ham, choice of toast, English muffins, buttermilk biscuits or bagels. $7.45 Quiche & Fresh Fruit Vegetable or Quiche Loraine Served with sour cream and a fresh vegetable relish, fresh fruit salad and assorted fresh baked muffins. $7.45 Continental Breakfast An assortment of fresh pastries including bagels, Danishes and muffins; served with a display of fresh fruit, yogurt, granola, fruit juice, fresh brewed coffee and hot tea. $7.95 North Idaho College Breakfast Scrambled Eggs Saratoga, apple sausage, smoked bacon, roasted red home fries with country gravy, fresh baked croissants & muffins and a fresh fruit display. $10.95 A la Carte Breakfast Selections: 1 Dozen Assorted Jumbo Muffins $ Dozen Sweet Danish $ Dozen Assorted Bagels $ Dozen Assorted Filled Croissants $ Dozen Jumbo Cinnamon Rolls $10.95 Assorted tray of pastries for 15 $15.95 Fresh Fruit Tray For 30 - $55.95 For 15 $29.95 Granola and Yogurt for 15 $26.95 Fresh Baked Quiche For12 - $29.95 Wrapped Jumbo Breakfast Burritos $4.95

Accompanied with mayonnaise, mustard, sliced tomatoes, onions and lettuce. $9.95 Add Soup du Jour $1.75 Lasagna Our own vegetarian or meat lasagna served with a Tossed Anti Pasto Salad & toasted garlic bread. $9.95 Gyro Buffet Two styles of Gyro meat (beef & lamb, and chicken) warm pita bread, Greek salad, roasted garlic hummus, roasted veggies, Mediterranean tomato relish and Tzatziki sauce. $10.45 Taco Bar Carne Asada, Carnitas & Shredded Chicken; served with Caesar Salad home style pinto beans, seasoned rice, salsa, sour cream cheese, shredded lettuce, corn or flour tortillas $11.95 Plated Luncheons All plated luncheons include a salad, fresh rolls, a small dessert and either lemonade or ice tea. We then bake it to a golden brown and serve it with fresh steamed vegetables and toasted garlic bread. Pan Seared Yellow Fin Tuna Served with steamed brown rice, seasonal fresh vegetables, Wasabi Ginger butter. $12.95 Broiled Sirloin Steak Topped with sautéed mushrooms, and served with roasted red potatoes and steamed vegetables. $12.95 Served Entree Salads All entrée salads are served with fresh rolls, coffee and your choice of lemonade or iced tea. Greek Salad Fresh Romaine lettuce tossed with diced tomatoes, sliced olives, sliced red onions, cucumbers, and green bell peppers.
