3 Berry Acai Bowl 10 mins Serves 1 2 packages Acai mix 1/2 cup almond milk Fresh Wish Farms raspberries Fresh Wish Farms blackberries Fresh Wish Farms blueberries Fresh Wish Farms strawberries, sliced Granola of your choice Coconut chips 1. 4 Blueberry Broccoli Salad 10 mins Serves pound fresh broccoli (chop if pieces are too large) 1 package fresh Wish Farms blueberries (washed) garlic, salt, pepper (to taste) 1 lemon 3 tablespoons mayonnaise 4 tablespoons olive oil 1/2 cup sliced almonds 1/2 cup of pine nuts 1/2 of a small radicchio 1. Chop broccoli if needed and place into a bowl 2. Chop radicchio and place into the same bowl with broccoli 3. 5 Raspberry Chipotle Chicken Tacos 4 hrs 15 mins Serves 4-6 For chicken 2 pounds boneless skinless chicken breasts 1 cup BBQ sauce ½ cup seedless raspberry preserves 1/2 cup fresh Wish Farm raspberries 2 tablespoons adobo sauce For chicken 1. Add chicken to slow cooker For salsa 2 cups canned corn kernels 1½ tablespoons olive oil 2 avocados 1 jalapeño pepper ¼ cup fresh chopped cilantro 2 tablespoons lime juice salt and pepper to taste 2. Whisk together BBQ sauce, preserves raspberries and adobo sauce 3. Pour half over chicken in slow cooker and reserve the other half in an airtight container in the fridge for later 4. Cover and cook on high for 3-4 hours 5. Remove chicken and shred with forks 6. Add reserved BBQ sauce mixture to taste and toss well to coat. For Salsa 1. 6 Summer Strawberry Tart 1 hr 30 mins Serves 5-8 For crust: 2 ½ cups finely crushed graham crackers 1 ½ sticks unsalted butter, melted 3 ½ tbsp sugar For the topping: 12 oz Wish Farms strawberries, sliced 1/3 cup strawberry jam 1 tsp water For filling: 1/2 cup sour cream 8 oz cream cheese 1/3 cup light brown sugar 1/2 tsp vanilla extract 1 tsp lemon zest 3 tbsp fresh lemon juice 1. Preheat oven to 350 F. 2. In a small bowl, stir together graham cracker crumbs, melted butter, and sugar. Press mixture into bottom and sides of baking dish. 3. Bake crust until darkened in color, about 15 minutes. Let crust cool. 4. In a medium bowl, beat together cream cheese, sour cream, and light brown sugar until smooth and sugar has dissolved. 5. Mix in vanilla, lemon zest, and lemon juice. 6. Spread lemon filling evenly over cooled pie crust. Starting on the outside, line circumference of tart with strawberries, just barely overlapping. 7. Put strawberry jam and water in a small bowl and mix to combine. Microwave until jam is loose, about 20 seconds. Brush berries with strawberry glaze. 7 Honey n Thyme Triple Berry Flatbread 25 mins Serves 8 5 oz goat cheese, softened 3 tablespoon honey, divided 1 tsp minced fresh thyme leaves, divided 2 rectangular pieces of flatbread, about 12 in x 5 in each 1 tablespoon extra virgin olive oil 2 oz serrano ham ½ cup each blueberries, sliced strawberries and blackberries 1. Pre-heat oven to 400 degrees F 2. In a medium bowl, combine goat cheese, 2 tbsp honey, and 1 tsp thyme; spread over both flatbread rectangles 3. In a medium bowl, combine remaining honey, thyme and olive oil; gentle toss in berries till slightly coated; dot goat cheese mixture with berries all over; add pieces of Serrano ham in between berries; bake in pre-heated oven for 10 minutes or till edges are slightly brown For More Berry Recipes Visit 7
8 Mascarpone Blackberry Stuffed Peaches 10 mins Serves 4 2 peaches, cut in half and pitted ½ cup Mascarpone cheese Honey to drizzle ¼ cup fresh Wish Farms blackberries 1. Place peach half face up on a cookie sheet and broil for about 5-7 minutes, or until you see the edges slightly brown 2. Place a dollop of mascarpone cheese where the pit would have been and top with blackberries 3. Drizzle with honey and enjoy! For More Berry Recipes Visit 8
9 Fun in the Sun Strawberry Salsa 10 mins Serves 4 1 lb fresh Wish Farms strawberries, diced ¼ cup red onion, finely diced 1 jalapeno, finely diced 1 lime, juice and zest 2 tbsp cilantro, chopped Salt to taste Cinnamon sugar pita chips to dip (optional) 1. Mix ingredients in a bowl 2. Dip your cinnamon sugar pita chips (or regular tortilla chips) and enjoy!) For More Berry Recipes Visit 9
10 Blueberry Bourbon BBQ Sauce 45 mins Serves 6 1 pound of fresh Wish Farms blueberries 1 cup ketchup 1/2 cup brown sugar 1/2 3/4 cup apple cider vinegar 1/2 cup bourbon 1 small red onion, diced 1 jalapeño, diced 1 teaspoon kosher salt 1/2 teaspoon black pepper 1 teaspoon crushed red pepper 1 tablespoon olive oil 2 bay leaves 2 cloves garlic, minced 1. Heat canola oil over medium heat and sauté onions and garlic until cooked through and translucent. Combine everything in a large pot and cook down for approximately 30 minutes, until thickened. 2. Remove bay leaves and let cool slightly. 3. Transfer to a blender and pureé until smooth. 4. Store in airtight container in refrigerator until ready to use! 5. Enjoy! For More Berry Recipes Visit 10
11 Spicy Blueberry Basil Boneless Pork Chops 25 mins Serves 4 4 boneless pork chops Salt & pepper 2 tsp olive oil 1 tbsp butter 1 small shallot minced 2/3 cup beef broth 1 tbsp balsamic glaze 2 tsp blueberry fruit jam (see note) 1 tsp chili paste ½ cup Wish Farms blueberries, plus additional for garnish ¼ cup thinly sliced basil leaves *Note: if you can make blueberry jalapeno pepper jelly you can substitute for the jam 1. Season both sides of pork chops with slat and pepper. Heat 2 tsp of olive oil and the tbsp of butter in a cast iron skillet over med heat. When the pan is hot, add the boneless pork chops and cook for 3-4 minutes per side or until a meat thermometer registers 145 degrees. 2. Remove pork from skillet, add shallot to pan and cook for 1 minute; stir in broth, balsamic glaze, jam, chili paste and fresh Wish Farms blueberries. Bring to a boil and cook until the sauce is reduced in half and thickened, about 5-8 minutes. Return the pork to the pan (along with any accumulated juices) and cook for an additional minute. Serve the pork drizzled with the sauce and garnished with the fresh basil and additional fresh blueberries. For More Berry Recipes Visit 11
12 Watermelon Berry Summer Salad 10 mins Serves small watermelon, chopped into 1 inch pieces 1 package fresh Wish Farms blueberries 1 package fresh Wish Farms raspberries 1 package fresh Wish Farms blackberries 2 tablespoons fresh lime juice 1. Place the berries and watermelon into a mixing bowl. 2. Pour in the fresh lime juice and mix well. 3. Enjoy! For More Berry Recipes Visit 12
13 Strawberry Hazelnut Choco Tacos 30 mins Serves 6 Cinnamon Sugar Taco Shells: 6 (6-in) flour tortillas (or you can get regular sized tortillas and use a bowl to cut them down to size) 3 tablespoons granulated sugar 1 tablespoon ground cinnamon 3 tablespoons unsalted butter, melted For filling: 1 cup whipped cream 1/2 cup hazelnutchocolate spread (such as Nutella) For topping: 1 cup sliced Wish Farms strawberries to top your tacos Cinnamon Sugar Taco Shells: 1. Preheat oven to 400 F. Roll sheets of aluminum foil into loose rolls, so your flour tortillas can fold over top creating the taco shape. 2. Stir together sugar and cinnamon in a small bowl with melted butter evenly brush mixture on both sides of tortillas. 3. Bake tortillas in preheated oven until tortillas hold their shape and are lightly browned, about minutes. Allow taco shells to cool completely. 4. Once cooled, use a butter knife to spread a 1-inch layer of hazelnut chocolate spread on the rims of each taco shell. For filling: 1. Combine whipped cream and hazelnut chocolate spread in a large bowl. Mix together until blended completely. For assembly: 1. Spoon about 1/3 cup (or desired amount) of Filling into each Taco Shell. 2. Top tacos with sliced Wish Farms strawberries. 3. Dust tacos with powdered sugar and enjoy! For More Berry Recipes Visit 13
14 Strawberry Breezy Brie 5 mins Serves 10 1 (6-in) wheel brie cheese 3 tbsp strawberry jam or preserves 2 tsp balsamic vinegar 1 cup Wish Farms strawberries, chopped ½ cup pecans, chopped ½ cup fresh mint leaves, chopped 1. Preheat oven to 275 degrees, in a small sauce pot, cook jam and vinegar over med heat until bubbly 2. Place brie on an oven-safe serving platter or dish 3. Place chopped strawberries and pecans on top of brie wheel 4. Cover with jam mixture, bake brie wheel until it is warm and soft, about 15minutes 5. Garnish with chopped mint leaves 6.
