2 Hi Bert here, Welcome to Britain s Best Breakfast, a fundraising initiative set up by Carers Trust to raise money and awareness for Britain s 7 million unpaid carers. 3 in 5 of us will provide unpaid care for someone in our lifetime, probably to someone close to us, like a family member or friend. So, I m asking you to hold a Britain s Best Breakfast. Will you join us? To help you hold Britain s Best Breakfast, here are some tasty, delicious recipes that I and a bunch of lovely people have written. We have pancakes, spicy eggs, a traditional Swedish breakfast and even a new way with baked beans from Joanna Lumley! There are recipes to sit down and eat and some to grab and go whatever your breakfast style, we have a recipe for you. Which dishes will you make when hosting Britain s Best Breakfast? I want to say a big thank you for getting involved and taking the time out to raise much-needed funds for unpaid carers. Many unpaid carers don t have time to eat breakfast. With our campaign we want to make sure that breakfast is not only the most important meal of the day, but the most important meal of the year. 3 Joanna Lumley s Baked Bean Pâté serves 2 1 tin of Baked Beans 1 large onion 2 cloves of garlic and cumin seeds (or powder) 2 tbsp olive oil Tabasco, black pepper, sea salt Fresh mint and chives Gently fry one large diced onion, some cumin seeds and 2 chopped cloves of garlic in 2 tbsp of olive oil. When they are pale gold and soft put them into a blender with one medium size tin of baked beans. Whiz till smooth season to taste with salt, black pepper and Tabasco. Put into a dish and sprinkle with chopped leaves of mint and chives. Serve with hot brown toast. We were delighted when Joanna offered her support with this recipe. Having grown up in the Far East, Joanna loves eating spicy food for breakfast. I m sure you ll agree, this recipe is Absolutely Fabulous

4 Gluten Free Granola 300g gluten-free rolled oats 180g nuts and seeds (any combination of your choice) 120ml apple juice 130ml maple syrup 60ml coconut oil 1 tbsp vanilla extract 1/2 teaspoon ground cinnamon 1 teaspoon fine sea salt 1/4 teaspoon black pepper 150g dried fruit 1 Preheat oven to 160C. 2 Combine the oats, nuts and seeds in a large bowl. 3 Mix the apple juice, maple syrup, coconut oil, vanilla extract, cinnamon, sea salt and black pepper in a saucepan. Gently heat all together until salt is dissolved and coconut oil becomes liquid. Pour liquid over the dry ingredients and mix to coat. Spread the mixture evenly on a baking tray. 4 Bake for 40 minutes until golden. Make sure to stir the mixture about every 15 minutes to make sure it is evenly baked. 5 Let the granola cool completely before eating it, preferably over night as it will become crunchier as it sits. Stir in the dried fruit when completely cool. 6 Serve with yoghurt and fresh fruit. Delicious and healthy. If you store your granola in an airtight container, it will keep fresh for a few weeks.

5 Eggs Benedict serves 2 4 slices of bacon 4 whole eggs 2 egg yolks 115g of butter A pinch of cayenne pepper A pinch of salt 1 teaspoon lemon juice 1/2 teaspoon white vinegar 2 English muffins - toasted 1 Heat the grill and place bacon on grill tray grill to preference. 2 Meanwhile, melt the butter until bubbly in a small pan or in the microwave. Remove from heat before butter browns. 3 4 Fill a large saucepan with about 10cm water, and bring to a simmer. Add the white vinegar. Carefully break the eggs into the water, and cook for two to three minutes, until whites are set but yolks are still soft. Remove eggs with a slotted spoon. 5 Whilst the eggs are cooking, whisk the egg yolks, cayenne pepper, and salt until smooth. Whilst the whisk is still running, add half of the hot butter in a thin steady stream, slow enough so that it blends in. Add in the lemon juice using the same method, then the remaining butter. 6 Drizzle with the hollandaise sauce, and serve at once. Or for Eggs Royale, substitute with smoked salmon.

6 Shakshuka serves tbsp olive oil 1 onion, peeled and diced 1 clove garlic, crushed 1 medium red pepper, chopped fine 2 cans chopped tomatoes 2 tbsp tomato paste 1 teaspoon chilli powder (use the strength of your choice) 1 teaspoon cumin 1 teaspoon paprika Pinch of cayenne pepper (or more if you like it spicy) 1 teaspoon of sugar Salt and pepper to taste 5-6 eggs 1/2 tbsp fresh chopped parsley 1 Heat a large pan on medium-low with the olive oil. Add the chopped onion and sauté for a few minutes until it begins to soften. Add garlic and continue to sauté for another minute, and then add the red pepper and continue to cook until soft. 2 Add the tinned tomatoes and tomato paste to the pan, stir until blended. Add the spices and sugar, then simmer over a medium heat for ten minutes until it starts to reduce. 3 Add salt and pepper to taste, at this point you can also add more sugar for a sweeter sauce and more 4 Crack the eggs one at a time directly onto the tomato mixture, making sure you space them out. Cover the pan and allow them to simmer for minutes till the eggs are cooked and the tomato is slightly reduced. 5 Garnish with fresh parsley and serve with pitta bread. A Middle Eastern favourite. Try adding crumbled feta cheese!

7 American pancakes serves 4 300g plain flour 1 tbsp castor sugar 4 teaspoons baking powder 1 teaspoon salt 2 eggs, lightly beaten 350ml milk 60g melted butter 1 Combine all the dry ingredients and sift into a mixing bowl. 2 Combine eggs, milk and butter and mix into the dry ingredients until the large lumps disappear. You want to get to the consistency of double cream. 3 To cook, lightly grease a frying pan and place on a high heat. When it is hot, drop to medium and then pour in a small ladle of batter for each pancake depending on the size of your pan, will depend on how many pancakes you can make at once. Leave lots of space between each pancake in the pan, or just cook one at once. 4 They are ready to turn when bubbles form and burst and the edges seem cooked, turn and brown lightly on the other side. 5 These are best served with melted butter, maple syrup and fresh fruit of your choice. Why not add blueberries to the batter before you start to cook them to make blueberry pancakes?

8 French toast serves 6 12 slices of chocolate chip brioche 6 large eggs 175ml cup of whole milk 3 tbsp golden caster sugar 1 teaspoon cinnamon 500ml Greek yoghurt Honey Fresh fruit strawberries, blueberries, raspberries 1 In a large baking dish whisk eggs, milk, sugar and cinnamon. 2 Heat a large frying pan and grease with butter. 3 Dip each slice of brioche in the egg mixture and transfer to the pan. Cook over moderate heat, turning once, until the French toast is golden and cooked through, about 4 minutes. 4 Transfer the French toast to a baking sheet and cover with aluminium foil and put in a warm (about 100 C) oven to keep warm. 5 Repeat process with all the slices of brioche. 6 Serve with fresh fruit, a good dollop of Greek yoghurt and a squeeze of honey. French toast is not from France! It took its name from American chef, Joseph French.

9 Peanut Flapjacks serves g rolled oats 50g soft light brown sugar 225g unsalted butter 50g honey 50g crunchy peanut butter Recipe kindly donated by Cookie Crumbles 1 Preheat oven to 150C/Gas 3 and butter a 23cm square brownie tin. 2 Place the oats and brown sugar into a mixing bowl and mix together. 3 Melt the butter, honey and peanut butter together in a saucepan over a low heat and pour the mixture over the oats. 4 Mix together and press the mixture into the tin. Sprinkle with sesame seeds. 5 Bake for 25 minutes until lightly golden brown. Leave to cool for 10 minutes and while still warm cut into 10 squares. Thanks Cookie Crumbles - a nice sweet treat for breakfast time.

10 BBQ Breakfast Skewers Per person: 2 rashers streaky bacon 1 chipolata (chopped into bite-sized pieces) 3 button mushrooms 3 cherry tomatoes 1 Simply thread each ingredient on the skewers alternating them as you go (concertina the bacon), brush with olive oil and then pop on the BBQ and until cooked, turning regularly. 2 If you re feeling adventurous, brush with chipotle or hot sauce. If you don t fancy cranking out the BBQ for breakfast, pop these under a medium grill and turn every couple of minutes until done. Everyone loves a BBQ, so why not enjoy one at breakfast time?

11 Spicy Mexican eggs serves 4 1 small onion, diced 2 cloves garlic, crushed 1 large handful mushrooms, sliced 1 can butter beans 1 can mixed beans 1 large handful spinach Dash of Worcestershire sauce 1 tbsp of chilli pesto or paste (less or more depending on how hot you like it) 1 teaspoon smoked paprika 1 heaped teaspoon of brown sugar 4 eggs 1 can chopped tomatoes 1/2 teaspoon ground coriander 1/2 teaspoon cumin 1 Soften the onions and garlic in a deep frying pan on a medium heat. 2 Add the paprika, as well as the ground coriander and cumin. Feel free to vary the amount of these spices to match your own taste. Stir. 3 Add the chopped tomatoes, sugar, Worcester sauce and chilli pesto/paste. Stir and allow this to simmer on a fairly high heat for 5 or more minutes. 4 Add the butter beans and mixed beans and reduce the heat. Once the sauce has started to thicken you can go on to add the spinach and mushrooms. 5 and a lot of the liquid reduced by now. Crack the eggs onto its surface. 6 Ensure the heat is well distributed and move your pan around the hob to keep the eggs cooking evenly. You want to keep the eggs runny, but cook the whites. 7 Top with snipped chives, rustic bread and sliced avocado. Don t mix once you ve added the eggs, let them cook. Unless you fancy a strange scrambled egg baked beans scenario!

12 Pytt i Panna serves 4 900g cooked potatoes, cubed 250g smoked sausage, chopped 150g bacon, diced 150g leftover meat, chopped 2 onions, sliced 2 tbsp fresh herbs of your choice, chopped 1 tbsp butter 1 tbsp cooking oil 4 eggs 1 Melt the butter and oil over a medium heat in a large, non-stick frying pan. Add the onions and potato and fry until golden brown. 2 Put the onions and potato in a bowl to one side, in the empty frying pan add the bacon and when that starts giving off fat, add the other meat(s). 3 Whilst the meat is cooking, fry the four eggs in a separate pan. 4 Once the meat is cooked through, add the onions and potato back into the pan, stir to combine and season to taste. 5 Split the potato/meat mixture between four plates, top each with a fried egg and snip the herbs over. It s customary to eat this with pickled beetroot in Sweden, so add at your discretion. Pytt i Panna is a Swedish favourite, which translated means small pieces in a pan.

13 Happy Brunch Eggs serves 1, scale up as required 1 large knob of butter 1 small clove garlic, sliced fine 1 small red chilli, sliced fine (leave the seeds in if you like it mega hot) 2 chestnut mushrooms, chopped roughly but fine 5 cherry tomatoes, quartered 2 large free range eggs 1/4 bunch fresh coriander, chopped Salt and black pepper Buttered toast 1 Put the butter in a small frying pan on a medium heat. 2 Add the garlic and chilli and soften (keep stirring so they don t stick and burn). 3 Once softened add the chopped mushrooms and cherry tomatoes, then give it a few stirs and move onto the eggs. 4 Whilst everything in the pan is softening, whisk the eggs in a bowl with a fork until very well combined and a little frothy. Add a pinch of salt and a good grinding of pepper, then pour into the frying pan. Snip over the coriander. 5 Turn the heat down to low and keep stirring until the eggs are done the curds will be a little smaller and wetter than traditional scrambled eggs. 6 Serve on buttered toast and add sliced avocado for a healthy topping and add some smoked bacon for a bit of a treat. With the added spice from the chilli, this will really kick start your day.

14 Baked Apple Pie Oatmeal serves 2 80g Mornflake Organic Oats 20g mixed seeds (sunflower & pumpkin) 1 apple coarsely grated 1/2 tsp mixed spices 1/2 tsp baking powder 160ml semi skimmed milk or plant milk of your choice 1 tbs rice or maple syrup, or honey 1/2 tsp vanilla essence 1 Preheat the oven to 190C (fan 180) / Gas Mark 5. 2 Mix all the ingredients together and divide between two greased mini casseroles smoothing the mixture down with the back of a spoon. 3 Bake uncovered for minutes, until risen and golden around the edges. 4 Allow to stand for 5 minutes before serving. Keeps in the fridge for 2 days and can be reheated in the microwave. Recipe kindly donated by Helen at Fuss Free Flavours, with morning. This recipe will remind you of baked apple pie.

15 Bert s Brazilian Olympic Breakfast serves 8 Brazilian Cheese Breads Oil or butter, for greasing 250ml full-fat milk 1 Heat the oven to 220C/200C fan/gas 7. Grease a baking sheet with oil or butter and set aside. 125g unsalted butter 2 In a medium saucepan add the milk, butter and salt 1 tsp salt and bring to a boil. Remove from heat and add the 300g tapioca flour 2 eggs 100g Parmesan, grated (or vegetarian alternative) Cornmeal cake 3 eggs 250ml oil 500ml wheat flour 250ml milk 500ml sugar 250ml cornmeal 1 tbsp yeast (powder) 3 Pour the dough into a standing mixer or use a bowl and an electric hand whisk. Beat the dough until its cool. Beat the eggs in one at a time waiting until each one is completely incorporated before adding the next. When the dough is glossy and mixed add in the cheese. Beat again until mixed. Spoon the dough onto the baking sheet in 1 tbsp balls, 5cm apart. 4 Bake for 30 minutes until crisp and golden. Remove from the oven and eat while still warm. 1 Preheat the oven to 220C/200C fan/gas 7. Grease 2 Incorporate yeast, then bake for 30 minutes. 3 Cut and serve. Serve with fruit juice, coffee and fresh fruit. A perfect way to start your day during our Olympic Summer.

16 Avocado and Parma Ham serves 2 2 tbsp olive oil 1 avocado 1 pack of Parma Ham 2-3 new potatoes 2 eggs Sea salt/black pepper Dried herbs/spices 1 Preheat the oven to 425F/220C/ gas 7. 2 avocado to allow an egg to sit inside, this will be used to dress your plate at the end. 3 Crack an egg into each half of the avocado shell, season with salt, pepper and your choice of herbs and spices. Place the avocado onto a baking tray and into the oven. They should be ready in around 15 minutes. 4 On another tray place the Parma ham and add this into the oven at the same time. 5 Chop the potatoes into small 1 inch cubes, heat up a frying pan over a medium heat and add the olive oil. 6 Place the chopped potatoes into the pan and add salt and pepper and cook through gently. 7 Turn them over as they become golden and crisp up ready to serve. 8 Plate up the avocado, parma ham and potatoes, and don t forget to add the avocado fruit you removed to the plate. 17 Make a breakfast, Make a difference Make a difference Hopefully, I ve now given you inspiration to hold your own Britain s Best Breakfast event in order to raise awareness and funds for Britain s 7 Million unpaid carers. Here are a few tips to ensure that your event is a success Get permission: If you re planning an event at home, then clear it with your parent/guardian(s). If you re planning an event at work, or school, then make sure your boss or teacher is happy with what you are doing. Enlist help: Many hands make light work so to make things easier, ask friends or colleagues to help you plan and carry out your event. Save the date: Make sure the people you want to invite are given plenty of notice. Spread the word: Plan your event: It might be obvious but you should think about how you would like to run your event. Consider whether you would like to buy a selection of ready-made breakfast items to sell, would prefer to make your own breakfast or a mixture of both. Make money: Think about how you will make money. Selling items individually might make more money, but asking for a minimum donation from each guest might be more straightforward.
