The tall tales and the bad jokes. It s what we all love and it s what happens when we finally get together. In this issue we ve invited anyone and everyone to talk about everything, and to talk about nothing. To savour the multitude of flavours from grand experiments to simple, honest and homecooked favourites. Come rain or shine, there s something here for everyone, from beginners to experts to uncles who know more than anyone else. LET S CELEBRATE TOGETHER It s a fact that at Weber we ve always taken great pride in bringing people together from near and far, for sparking new friendships and rekindling old ones. 4 The moment that changed BBQ THE STORY OF WEBER It all started with a fire a fire that sparked George Stephen s interest in creating a better barbecue for everybody. 5 Life is a string of pearls pearls that represent all kinds of moments. Moments of happiness, of joy, of success, of excitement, and inevitably of failure. These moments define us and we carry them with us throughout life. Looking back at the story of Weber, one moment in particular stands out a moment that was in fact the very beginning of what we know as Weber today. A moment of failure. Back in around 1950 my mum and dad built their first home, in a town called Mount Prospect, close to Chicago. At that time brick fireplace barbecues were very popular in the US, so my dad decided to build one. After finishing it he invited everybody over for a big party and the food went into flames. It was all burnt because Dad couldn t control the fire. In my dad s mind the barbecue dinner was a disaster. He was working at Weber Brothers Metal Works where they made buoys for the Chicago harbour system. Their speciality was to spin half spheres, then weld them together to make a complete sphere to make a buoy. After the flop of the barbecue, Dad s mind had started spinning on how to make a better barbecue. He took one of the half spheres, put legs on it, punched holes in the bottom of it to get air moving through and put a lid on top. Over time Dad s first barbecue evolved with dampers, a deeper lid, etc. essentially into what is the Weber kettle today. So you know how you deal with your failures is what determines your success in life. I always say this to my kids because if Dad hadn t experienced that disaster barbecue in the backyard, Weber probably wouldn t be here today. Failure wasn t an option for Dad - it was just a source of inspiration. He had a simple dream to create the best barbecue possible and build a company that reflected his personality, values and vision. All he wanted was to make an amazing barbecue that s what George Stephen Inventor and founder CELEBRATING A LIFETIME OF BBQ EVOLUTION 2017 marks Weber s 65th anniversary. It s been an incredible journey and for no one more so than Chairman of the board, Jim Stephen. He was literally born into the barbecue business as his father George invented the world s first kettle barbecue and by doing so founded Weber. he did and that s what he passed on to everyone at Weber today. A Weber barbecue is the perfect focal point of the special moments we all have in common. They are personal and unique, but we all know them. Those moments where we get together, talk and enjoy each other's company. That s exactly what Dad did and loved to do and now 65 years later, that s exactly what a Grill Academy experience is like, what our demonstrations are like and what it s like to cook in your own backyard. For Weber, our finest task is to make these moments possible to inspire and keep on surprising you. It s a great pride to be one of the children of the man who started this and revolutionised BBQ by introducing the world to barbecuing with a lid. Some years ago my brother Ken and I visited the house we grew up in and it turned out that Dad s original fireplace barbecue was still there. So we made a deal with owner that he couldn t resist. He got a brand new Summit and we got the old fireplace barbecue. We had a bricklayer take it down and re-build it exactly the same at the office. Why? 6 REMEMBER RESTING TIME The core temperature of the meat actually rises a few degrees after you take it off of the braai. Therefore, it is a good idea to let the meat rest and reach the right core temperature before you carve it. 7 THE CORE OF PERFECT MEAT The chefs from Weber's Grill Academy all agree the most important thing when braaing meat is to closely monitor the core temperature, so that you can adjust the braai as needed. Weber's new igrill gives you easy and precise temperature control, meaning you have the freedom to enjoy the company of your friends or to watch the match on TV. Whatever your favourite, there is one element which is more important than any other when you braai meat the core temperature. This is what determines when the meat is perfect whether you prefer your meat rare, medium or well done. The core temperature gives you control, so that you can serve a delicious, juicy result, just how you like it. EVERYTHING YOU NEED When you measure the core temperature, you can forget about imprecise methods like calculating cooking time based on weight, pressing the meat to check it or, heaven forbid, cutting the meat. Let the meat cook in peace and instead spend time socialising with your friends, watching that important match on TV or chopping vegetables and preparing side dishes. As long as you can monitor the temperature you have the situation under control, and all you need for that is a thermometer. You can even move around freely as you watch what is happening to the temperature. IGRILL STOP THE GUESSWORK With Weber's igrill and the free igrill app you can keep an eye on the temperature from anywhere in the house. Using Bluetooth, it's easy to connect igrill to your mobile phone or smart device so that you can keep tabs on what is happening. This means that you can put an end to all of the guesswork about whether or not the meat is ready to serve. It also leaves you free to focus on what really matters spending time with your guests. Once the meat has reached the desired core temperature, igrill notifies you via an alarm so that you can take the meat off of the braai. Depending on the model, you can connect from one to four probes, so you can even cook multiple pieces of meat at the same time. THE FUTURE OF BRAAING Use the predefined core temperatures or ask igrill to notify you when your preferred temperature has been reached. igrill offers countless options. For example, you can upgrade it with a handy Ambient Pro Probe which measures the temperature inside the braai, rather than the meat's temperature like a normal probe. This can be useful when you are smoking meat or fish in the braai, or when you want to slowroast your meat. It's important to keep the braai at a constant low temperature for this, and igrill helps you to monitor it. Times to celebrate, times to cherish. The Genesis is a classic braai that has been with you for over 35 years. But even classics need updating eventually. It has now been reimagined for the 21st Century with the all-new Genesis II braais. They re designed to be the perfect companion for whatever, whenever and wherever you re cooking. PERFECTING PERFECTION It s a big year for the world of braaing. It s a big year for every braai enthusiast and a big year for Weber. An icon is being relaunched and it s finally ready for the world. Ready for backyards, patios, gardens and balconies all over the globe. For more than two years, engineers and designers at Weber have been working on a seemingly impossible project: improving on perfection. 11 I HAVE TO GIVE A LOT OF CREDIT TO THE TEAM THAT DESIGNED THE ORIGINAL GENESIS, IT WAS SUCH A DRAMATIC STEP IN TERMS OF THE APPROACH TO HOW THE GRILL WOULD WORK Marc Colavitti Vice President, Research & Development History, research, design, imagination they have all played a part in developing this new benchmark of braais. The objective was to create a braai that could be a part of people s lives and fits with every stage of those lives. Above all it should be a catalyst for fun among friends and family, a focal point for getting together with the ones you love. The original Genesis was so well designed that the first major challenge was researching what to improve. We didn t have any kind of baggage. We started from a standpoint an excellent standpoint. Maybe that is an even bigger challenge actually, because you have to improve perfection, says Marc Colavitti, Vice President for Research and Development at Weber-Stephen Products. The research showed that the size of braai people choose has nothing to do with the amount of features they want. Some actually want a larger braai with more burners without the need for lots of features. But they were forced to buy both. On the other hand, someone who would love a fully featured gas braai for a small area, such as their balcony, had to settle with less because they didn t have room for a big braai. A GRILL FOR LIFE The idea really was that there should be a model for whatever life stage you re in, and that you only have to choose between which feature set and which size is right for you, explains Marc. The solution is to have the Genesis II available in two platforms. Genesis II has the basic features and Genesis II LX has a more extended set of features. Both come with two, three, four or six burner models. With the two burner models you have the perfect solution for your balcony or small patio not least because of the folding side table that will save you some space. On the other hand, the six burner models give you space you need to cook for the entire neighbourhood and their friends. GS4: POWERING THE REVOLUTION Talking about features and changes a lot of exciting innovations have been introduced with Genesis II. For instance the gas bottle has been moved to the side of the braai, as research showed that people wanted the handling of the bottle to be easier. This move actually has an effect on the very heart of the Genesis II models; the engine that is called GS4. There are a lot of great elements on the braai, but GS4 is the heart of it, and here we ve been working with all parts of it. To improve and make it even stronger. So by moving the gas bottle, there was room for moving the grease management system to the centre under the braai. This makes the system more effective as it leads grease more directly into the collection tray, Marc explains. In addition, the Genesis II LX takes it up a notch with a side burner, High+ heat setting for searing at any point on the cooking grate, and illuminated control knobs. But a lot of what we invent consumers will never see or notice. It s things like the improved ignition system, the burners and so on. But people WILL know that when they go to use their Weber, they're going to have a great experience and that s actually what s it s all about. GROWING FROM THE ROOTS The first Genesis was introduced in 1985 setting a whole new standard for gas braais. Back then all gas braais looked the same, and people were troubled with issues like flare-ups and uneven heat. With Jim Stephen and Mike Kempster who were the Head of Gas Grill Sales and National Sales Manager back then, and the legendary Weber engineer Erich Schlosser as the lead, a group was put together with the ambition to create the best gas braai the market had ever seen. After intensive work, testing and pushing themselves even further, they came up with the Genesis and introduced new features that have since become legendary. For the past years Weber s Senior Manager for Industrial Design, Carmen Lira, has been tapping into these roots and channelling Weber DNA. I quickly found out that the personality of the brand is to be familiar, uncomplicated, knowledgeable and authentic. People use words like performance and timeless to describe Weber, she says. Not least when it comes to Genesis. There have been a lot of elements to lean up against in the development of the new design. The way I see Genesis is that it is a classic. So this project was about what we could do to evolve the design without losing the equity that we have in our design elements. So Carmen started by trying to determine which design elements are specific to Genesis. When you look at the shroud from a side profile, there are three curvatures that are very Weber. No one else is executing their lids in this way. These curvatures are very relevant to the identity of the Genesis ; when you see the shroud without the bands, straps and rivets you ll recognise that it is a Weber braai. So I wanted to ensure that we would continue this. The end result is surely signature Weber. Good-looking and wonderfully easy to use. What more do you want from a braai? ~ 11~

13 GREASE MANAGEMENT SYSTEM The grease management system helps with the removal of grease while reducing the risk of flareups. Drippings that are not vaporized by the Flavorizer bars are funneled away from the burners into the disposable drip tray, located within the catch pan under the cookbox. Simply remove the catch pan and replace the drip tray as needed. Using firelighter cubes will make the lighting of the braai faster and smokeless Fuelling the braai Place the filled chimney starter on top of the cubes while they are burning. Let the metal handle rest on the edge of the braai and open the vent at the base. 4 ESSENTIAL ACCESSORIES: 1 Firelighter Cubes: Use for quick, easy lighting of charcoal briquettes. 2 Chimney Starter: The Rapidfire Chimney Starter is super-efficient and makes it possible to light the briquettes in just 20 minutes in a simple, quick and safe way. 3 Charcoal Baskets: Using charcoal baskets makes it easy to shift between different braaing methods, e.g. from direct to indirect heat and to control the temperature. 4 Braai Gloves: Protect your hands from the heat with the comfortable gloves or mitts. 3 Preparing the braai Wait until the flames are visible at the top of the briquettes. Using a mitt or gloves, pour the briquettes out onto the charcoal grate or into the charcoal baskets according to your chosen braai method. ~ 14~

This method is used for food that need more than 20 minutes of braaing. Skewers Beef H Evenly distribute the lit briquettes across the entire charcoal grate or pour them into the charcoal baskets and push them together in the middle. Place the cooking grate in the braai, put the lid on and allow the braai to preheat. Make sure that both the top and bottom vents are open. H Brush the grate lightly to clean it. Then oil the grate and place the food above the briquettes or charcoal. H Place the lit briquettes on both sides of the charcoal grate, for example by using charcoal baskets. H Place a disposable aluminium drip tray between the fuel. Place the cooking grate in the braai, close the lid and allow the braai to preheat. The drip tray will catch any drips from the food, making cleaning easier. You can also add a bit of water to the tray. Chicken Fish H Put the lid on and make sure that both the top and bottom vents are open for optimal airflow. H Place the food in the middle of the cooking grate above the drip tray. H Position the lid so that the top vent is placed between the fuel make sure that both top and bottom vents are open.! The lid Close the lid and let the braai preheat. The lid makes all the difference as it makes the braai work like an oven. Always remember to use the lid when you braai. 16 easy start guide GAS & Q BRAAIS 1 Connect the gas Connect the gas supply to your braai. Regulators for larger gas bottles are easily snapped on. Please note that gas bottles and regulators vary from country to country. Click / Turn! Check CHECK FOR POTENTIAL GAS LEAKS If the gas hose has holes, cracks or damage, or if it has turned white due to prolonged exposure to the sun, you ll need to change it. On weber.com or in your user manual you can see how to thoroughly check for gas leaks. 2 OPEN THE LID AND TURN ON THE GAS Open the lid. For safety reasons it is very important to open the lid before you turn on the gas supply otherwise gas can accumulate under the lid. Turn on the valve at the gas supply all the way. Turn 3 Light the burners Turn the burner control knob that is next to the ignition button. Press the ignition button to turn on the braai. Allow a few moments for the gas to travel through the gas line before turning on more burners. Turn Click 4 Close the lid Close the lid and let the braai preheat. The lid makes all the difference as it makes the braai work like an oven. Always remember to use the lid when you braai. No matter which braai you use, make sure to preheat it to at least 200 C before cooking. ~ 16~

H When the braai has reached the right temperature, brush the grate lightly to clean it. Then oil it before cooking. Place the food onto the cooking grate directly above the burners. Close the lid. H Light the outer burners. If you are using a two-burner braai, just light the one to the side of the braai. If you are using a one-burner braai, light that burner. Close the lid. H When the braai has reached the right temperature, brush the grate lightly to clean it. Oil the cooking grate and place the food in the middle so that the hot burners are not directly under it. If you are using a one-burner braai, place the food in a roast rack in the middle of the grate in order to elevate the food off of the grate. Close the lid. Chicken Fish When you use electric braais 1 Open the lid and make sure that the control knob is in the off position. 2 Plug in the power cord. 3 On the braai, turn the controller to high. 4 Close the lid and let the braai preheat. Brush the grate to clean it. Oil the grate if you're placing the food directly onto the grate. Adjust the temperature before you start braaing. 18 easy start guide FUEL AND CLEANING FUEL GUIDE Briquettes Weber Briquettes are made from 100% natural components carbonized hardwood, starch and water. It is a high density, good quality briquette, which results in less powder in the bag, which in turn means that it is less dirty to handle. Our briquettes will have you ready to braai in 20 minutes when used with the Weber Chimney Starter and two firelighters, and will deliver a consistent heat for up to 3 hours. Find more tips at weber.com 1/1 chimney starter C How to reach the right temperature With Weber Briquettes Use the right amount of fuel needed to reach the temperature requested in the recipe. Do not fill the chimney starter above the top. How much fuel you will need all depends on weather, which food you re braaing, etc. Here s a rough guide to the amount of Weber Briquettes you will need. 1/2 chimney starter C 1/3 chimney starter C CLEANING GUIDE Charcoal braais H If your braai has a built-in One-Touch cleaning system, you simply slide the handle from side to side in order to empty the bowl of ash. The ash falls into the catcher below, empty this when the ash has completely cooled. H Remove the grates and clean them with a grill brush, remove the dirt and wipe them clean with warm soapy water. You can ease the process by using Weber cleaning products. H If you notice something that appears to be paint peelings on the inside of the lid, these are actually grease deposits and moisture that are baked onto your braai. These aren't dangerous but they should be removed regularly, either with a cookbox scraper or a sponge, then washed with soapy water and rinsed with clean water. Gas & Q Braais H Check the hose for damage, holes, cracks, etc. regularly. If you find any issues, replace it with a new hose. H To clean the inside of your braai make sure it s completely cooled off. Clean the burner tubes with a grill brush in an up and down motion. Never use the same brush as the one you use to clean the grates as this could block the small holes in the tubes with leftover grease. If you have an electric braai, you should never brush the heating element. Preheat the braai for 10 minutes. Brush the grates and, if your braai has them, the Flavorizer Bars. H Use a cookbox scraper or a sponge to remove the harmless grease deposits that may have built up inside the lid over time. Wash it with warm soapy water. Scrape away any debris from the tray and wash it. Make sure to repeat this on a regular basis. Replace the disposable aluminium drip tray in the catch pan with a new one in order to avoid flare-ups. ~ 18~

Due not only to its round shape, but equally because of the lid. The lid simply opened the door to a whole new universe of cooking methods that had not been possible on an open grill and today the lid is still as important as ever! THE SIMPLE RULE Cooking with the lid on and the vents open controls airflow and allows the heat to circulate throughout the braai. This gives you complete control over the temperature and eliminates unexpected flare-ups, which can char your food and detract from its taste. 20 PIZZA WITH SMOKED SALMON AND CREAMED SPINACH SERVES 2 INGREDIENTS: Pizza dough (2 bases) 15 g fresh yeast (approx. 5 g dry yeast) 200 ml cold water 1 tsp salt 100 ml olive oil 50 g durum flour for rolling out pizza bases 360 g plain flour, tipo 00 Topping 300 g spinach leaves 2 cloves of garlic 1 tbsp vegetable oil 250 g ricotta 100 g mozzarella Garnish 10 slices of cold-smoked salmon 10 leaves IN THE KITCHEN: 1 Dissolve the yeast in the water. 2 Add salt and olive oil. 3 Stir some of the durum flour into the yeast mixture until it is smooth and does not contain any lumps. 4 Stir the plain flour in a little at a time until the dough no longer sticks to the bowl. The dough should feel a little sticky. 5 Divide the dough in two. 6 Roll out the pizza dough on remaining durum flour and place on the baking tray. 7 Wash the spinach and crush the garlic. 8 Grate the mozzarella and mix with spinach, garlic and ricotta. Add oil to smooth texture. 9 Spread creamed spinach on the bases before putting them on the braai. 21 PORTOBELLO MUSHROOMS WITH PARSLEY PESTO AND GOAT CHEESE SERVES 2 INGREDIENTS: 4-6 portobello mushrooms 1 roll of goat s cheese (8-12 slices) Parsley pesto 150 ml vegetable oil 30 g broad-leafed parsley 25 g parmesan ½ clove of garlic 30 g hazelnuts Salt Pepper IN THE KITCHEN: 1 Grate the parmesan. 2 Combine the parsley, olive oil, hazelnuts, parmesan and garlic into a smooth pesto. 3 Clean the mushrooms and brush them with the pesto. 4 Place the mushrooms bottom up on a grill pan. 5 Place 2 slices of goat cheese on each mushroom. AT THE BRAAI: Tip The mushrooms can be sprinkled with coarsely chopped, crispy bacon before serving 1 Prepare the braai for indirect heat C. 2 Place the grill pan on the grate and place mushrooms on it. Cook for approx min until the goat cheese is melted. Recipe Recipe WHOLE CHICKEN WITH LEMON AND HERBS SERVES 4 INGREDIENTS: 1 whole chicken (approx. 1,0-1,4 kg) ½ lemon 75 g of fresh herbs (parsley, basil, oregano) 2 sprigs of fresh rosemary 4 bay leaves 4 tbsp. olive oil Salt Pepper IN THE KITCHEN: 1 Rub the chicken with salt inside. 2 Cut the lemon and finely chop the herbs. 3 Stuff the chicken with lemon and herbs and place the chicken on the rotisserie. 4 Rub the chicken in oil and season with plenty of salt and pepper. AT THE BRAAI: 1 Prepare the braai for indirect heat, approx. 180 C. 38 Fuel FOR ANY OCCASION Briquettes are carbonised wood that is crushed and mixed with a binder usually a natural starch and then pressed into compact little pillows. It normally takes a little longer to light briquettes, but the advantage is that they burn longer. Therefore it s always a good idea to choose fuel according to the food you are cooking. WEBER BRIQUETTES Weber briquettes are made from 100% natural components carbonized hardwood, starch and water. It is a high density, good quality briquette, which results in less powder in the bag, which in turn means that it is less dirty to handle. Our briquettes will have you ready to braai in 20 minutes when used with the Weber Chimney Starter and two firelighters, and will deliver a consistent heat for up to 3 hours. Weber Briquettes 4kg Art. No Recipe Chili con carne SERVES 4 INGREDIENTS: 200 g dried white beans 1 kg beef shoulder 2 red chilies 2 green chilies 6 shalottes 6 cloves garlic 3 carrots oil ½ bottle red wine 3 bay leaves 2 tbsp. paprika 1 tbsp. cumin 2 cans of peeled tomatoes 500 ml water salt pepper sugar to taste crème fraiche for serving IN THE KITCHEN: Soak the beans during the night. Pour away the water and wash the beans a couple of times. Cut the meat in rustic cubes. Wash the chilies, peel the shallots, garlic and carrots and then cut all of the veggie in rustic cubes. AT THE BRAAI: Prepare the braai for indirect heat approx. 200 C. Place the wok in the grate and let it preheat for 10 minutes. Pour and let it preheat. Add a bit of oil and fry the veggies lightly. Remove and add a bit of extra oil to the wok. Now sear the meat on all sides. Add red wine and let it boil for 15 minutes under lid. Now add bay leaves, spices, tomatoes and water. Put the lid on the braai and let it simmer for 1 hour. Taste and adjust with salt, pepper and bit of sugar. Serve with a good crème fraiche. ~ 38~
