2 SWEET MANDARIN FROM US TO YOU Our Story; Sweet Mandarin is our family restaurant with recipes which have been cooking and simmering for three generations over a hundred years with recipes written down on the back of envelopes and memorized by heart as if they were nursery rhymes. My grandmother and mother are the unsung heroes behind these dishes - their lives take place in Guangzhou China in the 1920s, colonial Hong Kong in the 1930s, the Japanese invasion of Hong Kong, and a changing England from the 1950s to present day. My grandmother, Lily Kwok, was forced to work as an amah (servant) after the violent murder of her family. Crossing the ocean from Hong Kong in the 1950s, Lily went to open one of Manchester s first Chinese restaurants - where her daughter, Mabel, my mother, worked from the tender age of nine. But gambling and Triads were pervasive in the Chinese immigrant community and tragically my grandmother and mother lost the restaurant. It was up to my sisters and me to reestablish my grandmother s dream. We vow to continue the family culinary journey through the Sweet Mandarin restaurant, our cooking school and range of Sweet Mandarin sauces. We are also passionate about making the dining experience inclusive to all especially those who are gluten free, dairy free or follow a vegetarian or vegan diet. 3 SWEET MANDARIN MUST T RY SIGNAT URE DISHES 37. Lily Kwok s Chicken Curry urry Lily Kwok s Chicken C Our grandmother, Lily Kwok came to the UK in the 1950s. The ship took 35 days to sail from Hong Kong to Liverpool, taking in Singapore, Penang, Ceylon, Bombay, the Suez Canal, Gibralta, and Southampton along the way. It was on this journey that Lily perfected her curry recipes, which wooed the local community in Manchester on her arrival. Elements of the dish were learned in Singapore, where Lily stopped off to visit her sister (who had relocated there with her husband) and the secret blend of spices was perfected in Bombay. Distinctly creamy, subtly spiced filled with melt in the mouth chicken pieces. This is a special recipe that takes 24 hours to make and stems three generation from Lily Kwok our grandmother. It was a hit with her customers such as the Beatles, Cliff Richard and we hope you will enjoy it too. 31. Mabel s Chicken Pot Mabel s Chicken Pot Our mother, Mabel, remarked that she lost her childhood innocence when she arrived in England in Her mother, Lily had left her and her brother, Arthur in Hong Kong for three years whilst Lily carved out her business in the UK. When Lily brought Mabel, aged 9, and Arthur, aged 12, to England, Mabel hated the country immediately, and she hated Lily for bringing her there. Mabel missed the sunshine, her friends, the food, and most of all her grandmother who had become like a surrogate mother. Mabel arrived on a dark winter afternoon and remembers shivering in the street while Lily unloaded the bags. It was through this dish that the animosity between mother and daughter melted away. As the chicken was stir-fried and the rice wine added, my mother was instantly transported back to Hong Kong and she picked up her chopsticks with relish. This was her comfort food. We cooked this dish for Gordon Ramsay on the F Word and it won us the title of Best Local Chinese Restaurant in the UK. We dedicated the award to our mother. This chicken dish is delicately flavoured with Chinese mushrooms, Chinese sausage, Chinese cabbage, slow braised chicken and infused with ginger, spring onion and home cooked stock. 40C. Cantonese Fillet Steak Steak Cantonese Fillet When we returned to the village where my grandmother grew up, the streets were deadly quiet. There were no cars, motorcycles, or bicycles. No bells, no horns, no 21st century beeps. Only the delighted shrieks of awestruck children receiving sweets from our grandmother resonated. In the fields behind the house, there was a shout from a martial arts competition. We observed the deep, introspective silence of the old barber, sitting in his brown silk pajamas on a plastic stool, waiting for someone to come in for a shave. And elsewhere there was the soft whirring of an old sewing machine, pedalled by the dressmaker in his shop. To our surprise, this was all that remained of the village where our grandmother grew up. It was a memorable visit for our grandmother, returning to her village after 60 years of absence, but one of the remarkable memories for me was the food we enjoyed that day, which was cooked for us by an old relative from another era. This is one of the truly inspirational dishes he prepared for us.

4 SWEET MANDARIN TAST E OF SICHUAN 100 Ma Po Tofu (Pork) 麻婆豆腐 9.95 In Chinese mapo means pock-marked woman who ran a restaurant in Chengdu and was renowned for her spectacular braised bean curd dish, hence the name. 101 Signature dish - Sliced Fish Sichuan in hot & spicy broth 水煮鱼 Translating literally to water-cooked fish, it s fish slices gently poached in a broth infused with dried chillies, Sichuan peppercorns and chilli bean sauce. It s a tingly, vermilion deep flavour, loaded with slivered vegetables like beansprouts and cabbage. The flavours are moreish, addictive and full of heat. A must try! FISH IN SLICED SICHUAN OT H HOT & SPICY BR signature dish - Sliced Beef Sichuan Style in hot & spicy broth 水煮牛肉 Gong Bao Chicken 宫保鸡丁 9.95 This is a classic Chinese dish with a kick of scorched chilli, tingle of Sichuan pepper and gentle sweet & sour sauce, it s a typically Sichuanese combination of flavours Dry Fried Green Beans with Minced Pork 干煸四季豆 Hot & Numbing Chicken 辣子雞 Numbing and hot dishes date back to the Emperor of the Qing dynasty and originates from the famous Huanese dish. This dish has very little sauce as the key flavours are imparted from the hot chilli and Sichuan pepper powder to give the lip tingling taste of numbing and heat. 106 Hot & Numbing King Prawns 辣子蝦 Fragrant Spicy Pot Special (pork Ball, King Prawn, Potato, chicken, beef and chinese leaf) 麻辣火鍋 CHICKEN Numbing and hot dishes date back to the Emperor of the Qing dynasty and originates from the famous Huanese dish. This dish has very little sauce as the key flavours are imparted from the hot chilli and Sichuan pepper powder to give the lip tingling taste of numbing and heat HOT & NU MBING 109 Y NT SPIC FRAGRA ECIAL POT SP This dish is a special medley with an aromatic base of cinnamon, bay leaf, cloves, cardamon, shaoxing wine, light soy, dried chillies, Sichuan peppers, fennel seeds and ginger. 110 Mala Paste with Crispy Fish 麻辣魚 Mala paste is the fragrant Suchuanese paste made with lots of garlic, black pepper, Sichuan pepper, chilli pepper, sesame paste and cooked into a spicy sauce with the crispy fish placed on top to soak up the spicy goodness MALA P AST E W IT H CRISPY FISH

This is the ultimate pick me up soup - with a clear broth that warms the organs and delicious dumplings which comforts the soul. 3 Chicken and Sweet Corn Soup 鸡蓉玉米汤 4.50 Using homemade chicken stock - this soup was served at my parent s wedding banquet in Light Bites 6 Prawn Crackers 香脆虾片 B Home Made Beijing Dumplings with Pork & Chives 私房芹菜猪肉饺子 Crispy Seaweed 香脆海苔 Sesame Prawn Toast 芝麻虾吐司 Vegetable Spring Rolls 鲜蔬春卷 Skewer Satay Chicken Sticks 串烧咸香鸡柳 Crispy Won Tons 炸云吞 SQ Salt and Chilli Squid 椒盐鲜鱿 We cooked this dish for the final of Gordon Ramsay s F Word Best Local Chinese Restaurant in the UK in We finished service at Sweet Mandarin at midnight and after just two hours of sleep we were picked up by a shiny black car and driven to a secret destination in London. We were whisked into a fancy kitchen with a boiling hot Aga and told we had just one hour to prepare our squid for 50 people. Our Salt and Chilli Squid was one of three dishes that helped us win the competition. A mild spicy sauce made from soya beans, red chillies and garlic. Winner winner chicken dinner. 30 Lemon Chicken Deluxe 酥炸鸡扒伴柠檬汁 9.95 Our lemon chicken is lightly dusted in gluten free crispy batter. A delicate zesty lemon sauce is paired with this finest chicken deluxe. A Chinese favourite. 35 The General Tse s Sweet and Sour Chicken 谢氏酸甜鸡块 9.95 Chicken tender pieces coated in gluten free batter and wok tossed with pepper cubes, onion cubes, carrot slices and pineapple in our bestselling Sweet and Sour sauce. The Genereal is Lisa and Helen s dad who used to give stern instructions on how to make the sauce step by step to create the perfect balance of sweet and sour. 32 Chicken and Sweet Peppers with Black Bean 豉椒鸡柳 9.95 A savoury fragrant sauce made from fermented black beans and garlic which is sautéed with the chicken pieces, peppers and onions. A classic Chinese favourite and versatile sauce. 33 Twin winters chicken 9.95 Button mushrooms and Shiitake mushrooms stir fried to perfection then cooked with a gluten free Tamari sauce and tender chicken pieces. A smooth savoury sauce made from the finest chicken stock to give the dish a umami flavour. 37T Jungle Green Chicken Curry 青咖喱鸡 9.95 Our green curry is made from fiery fresh green chillies, fragrant lemongrass, shallots, garlic, spices, spring onions and coconut milk. A pungent and spicy curry with authentic character with the chicken pieces absorbing all the flavour. Our curry is oozing taste and perfect for spicy curry lovers. 36 Nut Free Satay Sauce Chicken 9.95 How can a satay be nut free? We substitute the nuts for carefully sourced sunflower seeds to give it that texture and add in expertly blended spices to create the satay flavour. Added with sliced chicken, peppers and onions it ceates the most incredible flavoursome satay. By the way, the Nut Free Satay Sauce has won a Highly Commended in the Free From Awards and is the only one in the world. Must Try. C2C Volcano Chicken 湘式香辣鸡 Looking for a savoury, spicy, hot dish? We use our Sweet Mandarin Szechewan sauce paste to infuse our slow cooked stock to create this special sauce. The sauce is quick tossed into the sliced chicken which infuses into the meat and creates an intense spicy chicken dish. 37R Emperor Red Chicken Curry 红咖喱鸡 9.95 Spicy and packed with aromatic flavours.

It was also a dish our mother enjoyed eating when she was a child growing up in Hong Kong, as it was popular with the street hawkers. On one occasion, Mabel said her stomach was growling so much as she walked past a street vendor cooking this delicious noodle dish that a passerby gave her money to buy a portion! 37RBEEF Emperor Red Beef Curry 红咖喱牛肉 9.95 Spicy and packed with aromatic flavours. My mother told me that this dish would be our inheritance, the living part of our family tree, she taught me how to make it as part of my birthright. It seemed as if school work and life s other little frustrations all seemed to evaporate as we sat down to enjoy it. We add heat and dimension to the potato by stewing it in Sichuan chilli paste which is hot spicy and mouth tingling. 32TOFU Tofu and Sweet Peppers with Blackbean Sauce 8.95 A savoury fragrant sauce made from fermented black beans, and garlic which is sautéed with the tofu, peppers and onions. 11 SWEET MANDARIN RICE NOODLES SIDES SAUCES Rice 69 Yangzhou Fried Rice 扬州炒饭 9.95 Despite its name, this dish did not originate from Yangzhou. The recipe was invented by Yi Bingshou ( ) during the Qing Dynasty, and the dish was named Yangzhou Fried Rice because Yi was once the regional magistrate of Yangzhou. If you want something different from the usual fried rice try this dish which includes char siu (Chinese pork), baby shrimp, rice, scallions and egg.
