4 History of Ice Cream In George Washington s day, ice cream was made by what was called the pot-freezer method. Milk, cream and sugar were put in a large bowl, and the bowl was set in a large tub that was filled by ice and salt. It was stirred occasionally and took about four hours to harden. In the 18th century, ice and sugar were scarce and expensive. How was ice cream made in George Washington's day? Before the development of modern refrigeration, ice cream was a luxury reserved for special occasions. Making it was a lot of work; ice was cut from lakes and ponds during the winter and stored in holes in the ground, or in wood-frame or brick ice houses, insulated by straw. Many farmers and plantation owners, including U.S. Presidents George Washington and Thomas Jefferson, cut and stored ice in the winter for use in the summer. 5 Frederic Tudor (September 4, February 6, 1864) was known as Boston's "Ice King", and was the founder of the Tudor Ice Company of Boston. He turned ice harvesting and shipping into a big business, cutting ice in New England and shipping it around the world. What was Fredric Tudor famous for? Ice cream was introduced to the United States by Quaker colonists who brought their ice cream recipes with them. Confectioners sold ice cream at their shops in New York and other cities during the colonial era. Ben Franklin, George Washington, and Thomas Jefferson were known to have regularly eaten and served ice cream. What three famous men ate ice cream regularly?
6 First Lady Dolley Madison is also closely associated with the early history of ice cream in the United States. One respected history of ice cream states that, as the wife of U.S. President James Madison, she served ice cream at her husband's Inaugural Ball in Who was Dolley Madison's famous husband and when did she serve him ice cream? In 1843, Nancy Johnson, a New England housewife tired of the time and effort involved in hand-making ice cream, invented and patented the first hand-cranked ice cream freezer. Powered by a hand crank, her invention featured an S-shaped dasher that efficiently scraped the sides of the pot as it revolved to prevent ice crystals from forming. Compared to the old pot freezers, it froze the mixture faster and with much less effort. Not long after, Nancy Johnson sold the rights to her invention for $200 to William G. Young, a Philadelphia wholesaler. He named the new ice cream maker the "Johnson Patent Ice-Cream Freezer" when he patented it on May 30, Young began to manufacture and market the Johnson freezers for three dollars each. And glue to the front of the booklet. Ithaca, New York in 1892 On Sunday, April 3, 1892 in Ithaca, John M. Scott, a Unitarian Church minister, and Chester Platt, co-owner of Platt & Colt Pharmacy, created the first historically documented sundae. Platt covered dishes of ice cream with cherry syrup and candied cherries on a whim. The men named the dish "Cherry Sunday" in honor of the day it was created. The oldest-known written evidence of a sundae is Platt & Colt's newspaper ad for a "Cherry Sunday" placed in the Ithaca Daily Journal on April 5, By May, 1892, the Platt & Colt soda fountain also served "Strawberry Sundays," and later, "Chocolate Sundays." Platt & Colt's "Sundays" grew so popular that by 1894, Chester Platt attempted to trademark the term ice cream "Sunday."
9 Evanston, Illinois in 1890 Evanston was one of the first locations to pass a blue law (a blue law is a type of law, typically found in the United States, designed to enforce religious standards, particularly the observance of Sunday as a day of worship or rest, and a restriction on Sunday shopping.) against selling ice cream sodas in "Some ingenious confectioners and drug store operators in Evanston... obeying the law, served ice cream with the syrup of your choice without the soda. Thereby complying with the law... This sodaless soda was the Sunday soda." As sales of the dessert continued on Mondays, local leaders then objected to naming the dish after the Sabbath. So the spelling of the name was changed to Sundae. Cut on this dotted line. Types of Sundae' s Hot fudge sundae The classic hot fudge sundae is often a creation of vanilla ice cream, hot chocolate sauce, whipped cream, nuts, and a single bright-red maraschino cherry on top. A hot fudge sundae can be made with any flavor of ice cream. Black & White Cut on this dotted line. This sundae features a scoop of vanilla ice cream with chocolate sauce and a scoop of chocolate ice cream with marshamallow topping. Brownie sundae A rich sundae made with brownies, vanilla ice cream, chocolate syrup, peanuts, hot fudge, and whipped cream, often topped with a single bright-red maraschino cherry. In its classic form it is served in a long dish called a "boat". A banana is cut or split in two lengthwise and laid in the dish. Variations abound, but the classic banana split is made with scoops of vanilla, chocolate and strawberry ice cream served in a row between the split banana. Pineapple topping is spooned over the strawberry ice cream, chocolate syrup over the vanilla, and marshmallow topping over the chocolate. It is garnished with crushed nuts, whipped cream and maraschino cherries. What is a banana split? Directions: cut out the above card and glue it in the bananna splt book above. This First Banana Split David Evans Strickler, a 23-year-old apprentice pharmacist at Tassel Pharmacy in Latrobe, Pennsylvania, who enjoyed inventing sundaes at the store's soda fountain, invented the banana-based tripleice cream sundae in The sundae originally cost 10 cents, twice the price of other sundaes, and caught on with students of nearby Saint Vincent College. News of the sundae spread by word-of-mouth by students. Strickler went on to buy the pharmacy, naming it Strickler's Pharmacy. The city of Latrobe celebrated the 100th anniversary of the invention of the banana split in 2004, and in the same year the National Ice Cream Retailers Association certified the city as its birthplace.
11 Ice Cream Cones In the United States, ice-cream cones were made popular in the early 1900's. 12 Did you know? During World War II, cone manufacturers had trouble getting wheat flour since it was needed to make bread and other food products for American soldiers overseas. Several companies in Philadelphia solved this problem by making ice cream cones out of crushed, sweetened popcorn! Ice Cream Cone Shapes Ice Cream Cone Treats Ingredients: * 1 (18.25 ounce) package yellow cake mix * 1 (16 ounce) package vanilla frosting * 1 ounce colored candy sprinkles Directions: 1. Prepare cake mix batter according to directions, or make any standard cake recipe batter (i.e. white, chocolate, etc.). 2. Place flat-bottomed ice cream cones in the cups of a regular muffin pan. Pour enough batter into each cone to fill from 1/2 to 2/3 full. 3. Bake at time and temperature as recommended for cupcakes. After they have cooled, frost with your favorite canned or home-prepared frosting recipe. Decorate with sprinkles or other decorations of your choice.
13 Easy Ice Cream ( Ice Cream in a Bag ) You will need: 1 cup heavy whipping cream 1 tablespoon sugar 1 teaspoon vanilla extract 2 cups ice cubes (about two large handsful) 6 tablespoons rock salt 1 Ziploc brand sandwich bag, or other sandwich-size plastic sealable bag 1 Ziploc brand freezer bag (quart-sized), or other large, plastic sealable freezer bag 1 pair of oven mitts 1 dishtowel 1 spoon Directions: 1. Pour the cream into the sandwich-sized bag. 2. Add sugar and vanilla extract to the same bag. 3. Seal the bag. (Make sure it's tightly closed, otherwise your ingredients will leak.) 4. Place the closed sandwich bag inside the freezer bag. 5. Pour the ice into the freezer bag. 6. Pour the rock salt into the freezer bag. 7.Seal the freezer bag tightly. 8. Put on your oven mitts; or wrap the dishtowel loosely around the freezer bag. 9.Shake, rock, roll, and squeeze the bag for a full 5 minutes. (Note: the bag is going to get very cold, between degrees F. The mitts or dishtowel will keep your hands from freezing.) 10. Open the freezer bag and remove the sandwich bag. Using the dish towel, quickly wipe away any rock salt and water from the outside of the sandwich bag. (The ice will have almost completely melted, so the outside of your sandwich bag will be wet.) This will keep the salt and water out of your sandwich bag - - and your ice cream! -- when you open it. 11. Open the sandwich bag and... enjoy! You may eat the ice cream right out of the bag, or spoon it into a bowl. To remove every last delicious bit of the ice cream, turn the bag inside out and scrape the sides with your spoon. Makes 1 serving.
14 Why is rock salt needed fo r making ic e c ream? What is rock salt? Halite is the mineral form of sodium chlorhide, NaCl, commonly known as rock salt. Halite forms isometric or cube shaped crystals. The mineral is usually colorless or white, but may also be light blue, dark blue, purple, pink, red, orange, yellow or gray depending on the amount and type of impurities. What is another name for rock salt? What shape are the crystals? How is rock salt used to make ice cream? Rock salt forces the ice surrounding the can of ice cream mix to melt. The liquid (water and salt) that forms in the wooden bucket absorbs heat from the mix and gradually lowers the temperature of the mix until it begins to freeze. If there were no salt added to the ice, it would melt at 32 degrees Fahrenheit and eventually the ice water and mix would come to 32 degrees.
15 What would happen if you did not use rock salt when making ice cream? The ice cream mix, however, does not begin to freeze until its temperature falls below 27 degrees. Therefore, in order to freeze the mix, we need a salt concentration, or a ratio of 5 cups of ice to 1 cup of salt. At this concentration, the water/ice and salt mixture temperature should remain constant at 8 to 12 degrees F. This will give the rapid cooling and freezing that is needed to making smooth creamy ice cream. What temperature is needed to make ice cream? Did you know? It takes 12 pounds of milk to make 1 gallon of ice cream!
16 Brain Freeze What is brain freeze? An ice-cream headache, also known as brain freeze, cold-stimulus headache, or its given scientific name sphenopalatine ganglioneuralgia meaning "nerve pain of the sphenopalatine ganglion", is a form of brief cranial pain or headache usually associated with quickly eating cold beverages or foods such as ice cream and popsicles. What is the scientific name for brain freeze? What does it mean?
17 How long does brain freeze last? Usually brain freeze headaches last from 10 to 20 seconds, but can last longer. Pain usually is on the same side of the head as the cold substance was applied to. The most effective way to prevent it is to consume the cold food or liquid at a slower rate. Keeping it in your mouth long enough for your mouth to become used to the temperature. How long does brain freeze last? How can you prevent brain freeze? What happens? Ice cream headaches are the direct result of the fast cooling and rewarming of the capillaries in the sinuses (nose). (Capillaries are the smallest of a body's blood vessels. They are only 1 cell thick.) The cold temperature causes the capillaries in the sinuses (nose) to constrict (squeeze) and then experience extreme dilation (open up/ getting bigger) as they warm up again.
18 What are capillaries? In the mouth, this dilation (opening up) is sensed by nearby pain receptors, which then send signals back to the brain through the trigeminal nerve, one of the major nerves of the facial area. This nerve also senses facial pain, so as the nerval signals are conducted the brain interprets the pain as coming from the forehead. Brain-freeze pain may last from a few seconds to a few minutes. To relieve pain, some doctors suggest pressing the tongue against the roof of the mouth to warm the area. What nerve is the major nerve in the facial area?

21 Presidents and Ice Cream Ronald Reagan designated July as National Ice Cream Month in 1984.He also appointed the third Sunday in July as National Ice Cream Day. Reagan recognized the popularity of ice cream in the United States (90% of the nation's population consumes ice cream) and stated that these two events should be observed with "appropriate ceremonies and activities." Thomas Jefferson acquired a stock of standard French recipes. Among the most popular of these recipes at Monticello was this one for vanilla ice cream-- written by Jefferson, with his own recipe for Savoy cookies to accompany the dessert on the back. In 1790, a New York merchant reported that according to his records, president George Washington spent about $200 for ice cream that summer. Directions: Cut out cards. Cut out pocket on next page.
