1 AMEDEI SELECTED CRU CHOCOLATES AT VINCENTS. The crus come from individual production areas and, like grapes, are the product of a particular climate andsunshine in a particular region and have their own individual characteristics and distinctive flavours. They are themost immediate and wild expression of the cocoa bean. The raw material arrives pure, the aroma has a bite of strength and the acidity of the flavour is intense, giving way to a clean, fresh after taste. The crus come from individual plantations: Trinidad: with flavors of walnut husk and vanilla cocoa, with faint notes of wood and bark. Madagascar: captivating full acidic flavour with a vague hint of menthol, leaving a slight spiciness at the finish. Jamaica: sensation of citrus and candied citron rind, butter, fruit preserve. Persistent on the palate, rich yet not bitter. Grenada: delicate, unaggressive with an extraordinary lack of bitterness, creamy, extremely elegant and balanced. Ecuador: flavours of green tea with a touch of pistachio, almondine sauces and a hint of celery at the finish. Venezuela: particularly powerful, liqueur aroma, of hazelnut, walnut, almond and cashew, slightly spicy. Our sommelier will recommend a special Cru chocolate from Amedei with your chosen digestive.
