2 Irish whiskey is one of the world's great styles of whiskey. Traditionally, Irish whiskies are distilled three times for extra smoothness (Scotch whiskies by comparison are traditionally double distilled). By Irish law, all whiskies must be aged a minimum of three years in barrels. Styles of Irish Whiskey: Single Malt Irish whiskey is made from 100% malted barley by a single distillery in a pot still. Grain whiskey is particularly light in style. Made from corn or wheat, grain whiskey is produced in column stills. Blended whiskey constitutes 90% all Irish whiskey production. Pure Pot Still whiskey is a blend of both malted and unmalted barley distilled in a pot still. 4 BOURBON A whiskey distilled in Kentucky, from maize, containing at least 51 per cent maize (the rest being malt and rye) and aged in charred white-oak barrels. RYE Whiskey made from at least 51 per cent rye. Production is similar to that of Bourbon SMALL BATCH No legal definition exists to define small-batch. SINGLE BARREL Unlike "small-batch," the phrase "single-barrel" has real meaning. 5 ISLANDS Peaty & Maritime LOWLANDS Light & Fresh HIGHLANDS Smooth & Floral SPEYSIDE Fruity & Delicate ISLANDS Peaty & Maritime Sitting amongst the Inner Hebridean Scottish Isles, are the malt whisky producing islands of Islay and Skye. Rugged, windswept and barren, the island landscapes generally produce single malt whiskies with strong peaty, maritime aromas. The Islands malts are unmistakeably powerful, bursting with flavour, from the recognised smokiness apparent in almost all offerings. HIGHLANDS Smooth & Floral Known as one of the most scenic regions in Scotland, this land of rugged peaks and heather covered moor-land is geographically the largest of the whiskyproducing regions. SPEYSIDE Fruity & Delicate Over half of Scotland s malt whisky distilleries can be found within this one region. Speyside the lush, fertile valley of the River Spey - is undoubtedly the heart of single malt whisky distilling in Scotland. It s classic flavours of honey, vanilla and fresh fruits (apples, pears) combine to create whiskies that are both sophisticated and elegant. With age, and especially when matured in sherry casks, they evolve to deliver dried fruit and sweet spice flavours. LOWLANDS Light & Fresh The terrain of the Lowlands is characterised by rolling fields which are ideally suited to growing grain for whisky. The softer landscape is mirrored in the region s single malts which tend to be lighter in both colour and body, than those of the Highlands. With little or no peat used in the drying of the malt, the whiskies distilled here are generally fresh and light, fragrant and floral with cereal flavourings.
