3 Our Analytical Equipment Breeze 2 High HPLC Our Breeze 2 HPLC is used to accurately determine the sugar profile (the varying amounts of un-fermentable and fermentable sugars) of both wort and finished beer samples. Additionally, it can determine alcohol content in beer. Ellutia Gas Chromatograph Analytics AutoSample Our gas chromatograph can analyze varying levels of off-flavours that include diacetyl and 2,3 pentanedione. Anton Parr Alcolyzer ME and Density Meter ME The Anton Parr Density Meter can determine the alcohol content in beer. Some additional features include the measurement of specific gravity; extract levels, ph and colour.

6 METHODS OF ANALYSIS Barley Quality Sizing: o Plump, >7/64: The percentage of kernels by weight remaining over a 7/64 x 3/4 sieve. (ASBC, Method Barley-2C) o Plump, >6/64: The percentage of kernels by weight remaining over a 6/64 x 3/4" sieve. (ASBC, Method Barley-2C) 1000 Kernel Weight: Thousand Kernel Weight (1000 K. Wt.) is determined by counting the number of seeds in a 40 gram portion of cleaned barley. (ASBC, Method Barley-2D) Protein: Protein content of barley is predicted by Near Infrared Transmittance on whole grain using FOSS Infratek analyzer. (ASBC, Method Barley-7C) Germination: Germination energy is determined by a standardized three day test using either 4mL or 8mL of water. (ASBC Barley-3C) Malt Quality Friability: Friability is determined on a 50 gram sample of malt. (ASBC, Method Malt-12) Diastatic Power: Diastatic Power of malt iss determined using a reducing sugar assay automated by segmented flow analysis. (ASBC, Method Malt-6C) Alpha-Amylase: Alpha-amylase activity iss determined by segmented flow analysis using the iodine/dextrin method. (ASBC, Method Malt-7C)
7 Fine Extract: Extract is determined on finely ground malt by the Congress mashing procedure. Density of the wort is measured using a digital densitometer. (ASBC, Method Malt-4) Soluble Protein: Soluble protein content of wort is determined by UV spectrophotometry. (ASBC, Method Wort-17) Kolbach Index: Kolbach Index is calculated as ratio of soluble protein to total malt protein expressed as a percentage. β-glucan: β-glucan content in wort is determined by segmented flow analysis using the caclofluor fluorescence method. (ASBC, Method Wort-18C) Viscosity (Visc.): Viscosity of wort is determined using a rolling ball viscometer. (ASBC, Method Wort-13B) Free Amino Nitrogen (FAN): Free amino nitrogen content of wort is determined by segmented flow analysis using ninhydrin. (ASBC, Method Wort-12)
