1 Eau-de-Vie Whisk(e)y List Unlike wine and Champagne, within the world of whisky there are no hard and fast rules connecting region to flavour characteristics. In saying this there are many other factors that historically have come to give each region and country their own style of whisky production. We have given a brief on each region but this is merely a guide to what each region has become known for and not a description of every whisky within. Lowlands Scotch Whisky Lowland whiskies are commonly referenced as feminine drams, the Lowland Ladies. The terrain of the Lowlands is characterised by rolling fields that are ideally suited to growing grain for whisky. The softer landscape is mirrored in the region s single malts that tend to be lighter in both colour and body than those of the Highlands. With little or no peat used in the drying of the malt, the whiskies distilled here are generally fresh and light, fragrant and floral with cereal flavours. 2 Highlands Known as one of the most scenic regions in Scotland, this land of rugged peaks and heather covered moor-land is geographically the largest of the whisky-producing regions. As a very vague rule of thumb, the Highland region is one of big-bodied whiskies, often have a subtle peated and smokiness and can be very powerful. The Highlands are such a large, diverse region that is difficult to categorize their whiskies accurately. Technically speaking, the Islands have not been officially recognised as a region of its own and, as such, is included in the Highlands appellation. For the sake of precise classification, we choose to note the separation. 4 Speyside Over half of Scotland s malt whisky distilleries can be found within this one region. Speyside the lush, fertile valley of the River Spey - is undoubtedly the heart of single malt whisky distilling in Scotland. It s classic flavours of honey, vanilla and fresh fruits (apples, pears) combine to create whiskies that are both sophisticated and elegant. With age, and especially when matured in sherry casks, they evolve to deliver dried fruit and sweet spice flavours. 7 Campbeltown Campbeltown whiskies are a curious mix. Characteristics include a defined dryness with a pungency, smoke and a solid salinity. Imagine a cross between the Lowlands and the Western Highlands with a pinch of salt thrown in for good measure. There was a time when Campbeltown was the most prolific of all of Scotland s whisky regions. Around a century ago there were as many as twenty-eight distilleries in this the geographically smallest of Scottish whisky producing regions; today there are but three. Campbeltown sits on the Mull of Kintyre peninsula protruding from the western coast, where mist commonly rolls in from the sea. It is the proximity to the coast that gives the whisky its salty tang. Campbeltown single malts are often superb aperitifs. It is most probably for geographic ease that this small group of islands is lumped together. There are so many different characters to be found, although usually a slight salinity is to be found, thanks to the vicinity to the sea. To the very north there is Orkney, whose single malts are coastal and full in the case of Highland Park, with plenty of honey, malt and heather and smoky malt. Others can have delightful citrus and herbal qualities. Then there is the Isle of Skye with its sole distillery: Talisker. Single malts here are often described as being 'volcanic' in character with plenty of body.

8 There's Arran, who make a malty, rich whisky. Finally, there's Mull and Jura. Each with a single distillery a piece. On Mull the Tobermory distillery produces a sweet, thick, slightly herbal whisky (and a heavily peated version called Ledaig) whilst on the Isle of Jura, the distillery with the same name produces some slightly maritime, oily drams with a nutty cereal character. Often with plenty of peat and smoke, brine and medicinal flavours, of all the whisky regions of Scotland Islay has attained a truly iconic status. When compared to the various drink producing regions of the world, be it the Grande Champagne designation of Cognac or the first growths of Bordeaux, or that distant island, Madeira, there is something magical about the illustrious Scottish Isle, some 35 miles from the coast of Northern Ireland. There are some nine distilleries on the Isle. To the North there lies Bunnahabhain and Caol Ila, to the west of Loch Indaal sits Bruichladdich and further west, the newly founded Kilchoman - Scotland s most westerly distillery. To the centre of the isle sits the mighty Bowmore, but it is from the southern coast, not far from Port Ellen and the closed distillery of the same name, that the most pungent whiskies emanates, produced by the trio: Ardbeg, Lagavulin and of course Laphroaig. There is a defined power to the whisky, peat being the obvious attribute, certainly the best associated. Smoke is both a flavour of its own, but is intrinsically linked with peat. The peat flavour is imparted during the barley malting process, the smoke used to dry out the barley is produced by burning peat. There is a marked reduction in peaty power to the far north. Islay single malts also have a refined salinity; there is a profusion of seaweedy, kelp-rich whiskies. It is the largest selling category of all whisky, and fills back bars and liquor cabinets the world over, whether it's Ballantine's, Johnnie Walker or Haig. Blended Scotch whisky, like all Scotch whisky, must be matured for at least three years and a day in oak casks. Blended Scotch whisky is made from grain whisky, which is cheaper and more efficient to produce, as it has a more neutral character. They include malt whisky as well, this peps everything up and brings body and complexity. A vatted malt is essentially a blend of single malt whiskies. No grain whisky can be added. Vatted malts are sometimes referred to as pure malts though the term has generated much controversy for it is deemed to be misleading. This is in large part due to corn being used as the predominant grain for Bourbon and the generous use of new charred oak in their ageing process which lends stunning sweet flavours such as vanilla, coconut and spice. Rye whiskey is made with a mashbill that mainly features rye. The result of this is a more spicy whisky with lots of complexity. Great examples include Sazerac rye whiskey and Pappy Van Winkle's Rye. Tennessee whiskeys are essentially bourbons which undergo the "Lincoln County Process", developed by the world famous Jack Daniel. This involves filtering the spirit through sugar maple charcoal. White dog and Moonshine are becoming increasingly popular, and you'll find a small selection on our back bar, as well as rarer artisanal US whiskeys such as single barrel and small batch bourbon, straight wheat and straight corn whiskey.
