6 SINGLE MALT SCOTCH WHISKY SPEYSIDE The river Spey, on the edge of the Highlands, has the greatest concentration of distilleries now in Scotland. Generally, whiskies from this area are sweet, clean and subtle, but can express different intensities and complexities. Some malts have pronounced fruit and honey notes, others are bone dry and a little salty, others spicy with exotic notes. GLENLIVET Aroma: a little peat, hot, nutty, honey, vanilla Flavours: smoky, woody, coffee, tobacco, long layered finish MACALLAN GOLD Aroma: fruity, sherried, vanilla Flavours: citrus, a touch salty, smoky & slightly oily finish BALVENIE DOUBLEWOOD Aroma: caramel with touch of vanilla Flavours: rich, mellow with depth & complexity GLENFIDDICH 12 Aroma: fresh, fruity with a hint of pear & delicately balanced Flavours: sweet, butterscotch, cream, malt & subtle oak flavours GLENFIDDICH Aroma: fruity, honey, vanilla Flavours: gentle spice, oak & fruit NORTHERN HIGHLANDS Whiskies from this area tend to be medium bodied. Clynlish however is spicy & salty; others such as Glenmorangie are rich and full-bodied. GLENMORANGIE Aroma: nutty, floral hints, oily tasting Flavours: smoky, coffee, tobacco, a touch of saltiness, full bodied.

7 WESTERN HIGHLANDS With few distilleries in the region, those such as Ben Nevis, Glengoyne, Loch Lomond and Oban share the characteristics of flavour with a persistent palate. OBAN Aroma: nutty, smoky, spicy Flavours: smoky, smooth CAMBLETON The region was once home to the largest number of distilleries but, through over production and unsavoury business tactics, it became associated with mediocre quality.. Springbank however, is a taste of how things used to be. SPRINGBANK 10 Aroma: briny, peppery, vanilla Flavours: sweet, salty, spicy, layered, long finish ISLAY Islay whiskies are easily identified by of their intensity and very specific flavour profile. These whiskies are powerful, salty, peaty, intense and reminiscent of the smell of the ocean. LAGAVULIN Aroma: peat, iodine, floral Flavours: smoky, very peaty, salty, full bodied LAPHROAIG 10 Aroma: peaty, smoky, medicinal Flavours: iodine, smoky, quite intense saltiness, finishes sharply BOWMORE Aroma: musky, earthy, nutty Flavours: dry, charcoal, moderate peat, smoky, a touch bitter ORKNEY Two whiskies are produced on this island: Highland Park & Scapa. Both are spicy, smoky salty and peaty. Scapa expresses more seaweedy and salty notes, Highland Park has more smoky aromatics.
