1 AN ODE TO WHISKY AQUA VITAE Water of life There is a mystique that surrounds whisky lore which allures to the promise of some ancient connection to a simpler time in our existence, a bygone era that we gaze back upon longingly in starry-eyed wonderment. The very incantation of its name brings to mind vivid tableaux of misty moors and emerald fields; rocky outcrops and tortuous sheep-worn trails that snake their way through the highland countryside; of salt sprayed promontories, and jagged rock faces carved since time immemorial by the minions of Odin s wrath; where the benediction of monks can be heard wafting from lofty peaks of roughly-hewn stone; and tartan-clad warriors cross hand-forged steel on the battlefield, and by night, in the flickering light of the great hall, drink deeply from bottomless tankards. This extant elixir transcends time and place and allows us, at least for the briefest moment, a glimpse into the zeitgeist of our forefathers. #bar1806

5 WHISKY OF SCOTLAND The whisky of this country is a most rascally liquor & by consequence only drunk by the most rascally part of the inhabitants Robert Burns 1788 No one knows the exact identity of the first Scotsman to distill spirits, nor are they sure when or where the first malt whisky was made, but one fact of which we can be certain is that whisky is endemic in Scottish culture. As with all great enterprise mass whisky production was born out of economic necessity, Highland farmers burdened with a surplus of grain discovered through fermentation and distillation a supplementary source of income to be made. Barley was most commonly used, although wheat and oats were also turned into whisky. The leap toward a global industry started with the invention of the Coffey still in For many early imbibers malt whisky was an acquired taste but this new still produced a much lighter, less robust and therefore a more widely appealing whisky than its predecessor and at a far greater volume to boot. Abrogation of laws restricting the use of continuous still whisky in the 1860s paved the way for blended whiskies to consumers great delight. In the 1870s a rampant strain of phylloxera devastated Cognac production. Naturally, a suitable replacement was needed. Scotch whisky was suddenly lauded as the drink du jour.

6 THIS IS ISLAY A region renowned for its heavily peated whiskies, such as Laphroaig and Lagavulin, it is understandable why one would assume that the areas titular whisky is exclusively peat-centric. However, Islay is home to several distinct styles, some of these contrastingly light and floral, with barely discernable notes of peat. BOWMORE This iconic distillery is nestled on the banks of Loch Indaal, and is the first Islay distillery to receive a license to produce whisky in Bowmore is among the few remaining distilleries that malt their own barely, up to two tonnes a week using their traditional malting floors and peat fires. LEGEND 40% $12.00 Aged in American bourbon barrels, this non-age statement from Bowmore has notes of lemon zest, honey and a distinctive islay smoke. 12 YEAR OLD 40% $13.00 Remarkably long and complex, finishing with hints of vanilla ice cream. DARKEST 15 YEAR OLD 43% $15.00 Maturated in a combination of bourbon and sherry casks, this dram spends its final three years in Oloroso casks. A robust and complex dram from a well-established distillery. 18 YEAR OLD 43% $24.00 The official replacement for Bowmore seventeen year old, this whisky has become a fan favourite from the Bowmore portfolio. It is a fresh dram, with notes of salty kippers and coal smoke.

7 BRUICHLADDICH Built in 1881, this distillery is the heart of the town Port Charlotte and employs close to a whopping 100 people. The distillery is filled with original equipment such as their original grain mill and mash tun. Dissimilar to most Scottish distilleries, these guys use three different types of malt in their core range, the Classic Laddie, Port Charlotte, and the Octomore. BLACK ART % $35.00 The make up of this whisky is a well-kept secret, however as you will discover yourself this is a highly complex whisky, full of character. THE CLASSIC LADDIE UNPEATED 46% $13.00 This classic laddie is a non-aged statement from a fast emerging distillery. An aroma of pear and melon dances on the nose; with a finish of vanilla and tropical fruits. It is certainly a dram to please the most ardent whisky connoisseur. THE LADDIE 10 50% $15.00 Bright fruits and spiced aromas on the nose with a palate of salt and cereal notes make this whisky a great example of distillery character. OCTORMORE % $28.00 Famous for being made with the most heavily peated barley on earth, this experimental dram from the Octormore range is quite intense at first, but it surprises you with a delicate and graceful finish. OCTOMORE % $45.00 This 5-year-old whisky has the badge of being the smokiest whisky in the world, sitting at 258 ppm. Made using barley harvested from the Lorgba field on the Octomore farm on Islay this drams flavour never seems to leave OCTOMORE % $34.00 Using barley only harvested from mainland Scotland and peated to 208ppm it is then matured in American bourbon barrels for 5 years and bottled at cask strength. Like sea spray and caramel, lemon balm and pipe tobacco. Slowly, the peat rises from the glass, gentle but strong, lifting vanilla, mint, toffee, golden syrup and almond. OCTOMORE % $35.00 The latest release for the Octomore range, 167ppm Octomore spirit has been rested in virgin oak. Find out the result of the combination of smoke-rich Octomore and sweet, honeyed vanilla derived from the great French oak forests of Allier. PORT CHARLOTTE 10 YEAR OLD 50% $15.00 Light tar aromas jump from the glass, with a tongue-coating liquid hitting the palate, flavours of peat and charred fruits develop. 8 MORE FROM ISLAY BUNNAHABHAIN 12 YEAR OLD 46.3% $15.00 Recently Bunnahabhain has changed the distillation process of this classic whisky to be nonchilled filtered, producing stronger, bolder flavours. Starting with hints of apples, sea salt and vanilla, and finishing with light smokiness. BUNNAHABHAIN 18 YEAR OLD 46.3% $17.00 This non-chilled filtered malt has dense rich sherry notes, heading towards mixed spice and sticky toffee pudding. CAOL ILA 12 YEAR OLD 43% $15.00 The Caol Ila twelve year old is of medium weight but still packing plenty of potent phenols. This is a refined, powerful dram with compensating oiliness. CAOL ILA STITCHELL RESERVE 59.6% $20.00 The unpeated, limited edition, natural cask strength Caol Ila, has been aged in refill American oak, ex-bodega European oak then rejuvenated American oak and is named after retired master distiller Billy Stitchell. Wispy smoke combines with gingerbread, sweet-cured meat and smoked fish, with a refreshing lemony note. CAOL ILA DISTILLERS EDITION 43% $23.00 This distiller s edition from Caol Ila is finished off in sweet muscatel wine casks for an extra depth of sweetness. It hits the nose with the smell of crisp smoky bonfires, then providing complexity on the palate with bold notes of cinnamon spice. CAOL ILA CADENHEAD 10 YEAR OLD 46% $21.50 A release from Scotland s oldest independent bottlers, distilled in 2003 and bottled in 2014, this whisky has been aged in Bourbon Hogsheads and is limited to 738 bottles globally. KILCHOMAN MACHIR BAY 46% $19.00 Matured in ex-bourbon barrels from Buffalo Trace then finished in Oloroso sherry butts, this dram is smoky on the nose with a sherried oak palate. LAGAVULIN 8 YEAR OLD 48% $16.00 Released in celebration of their 200 th anniversary, this whisky packs a powerful smoky punch. A complete palate hit, with notes of sweet spice that come forward with a touch of water.

9 LAGAVULIN 12 YEAR OLD CASK STRENGTH 54.4% $23.00 A special whisky from a very special distillery, this dram dances on the nose with hints of nut integrated with citrus, then provides the palate with a large well-balanced mouthful of cocoa & seaweed. LAGAVULIN 16 YEAR OLD 43% $18.00 Thick and rich with flavours of lapsang souchong tea on the palate, and a finish of sweet spices with thick peated smoke. LAGAVULIN DISTILLERS EDITION 43% $24.00 A bold malt, rich in complexity. This dram was distilled in 1998 and bottled in 2014 following a finishing period in Pedro Ximenez casks. LAPHROAIG 10 YEAR OLD 40% $14.00 Smoky and iodine rich, this is one of Scotland s most distinctive and complex drams. Laphroaig is known for their medicinal malts and the ten year old is no exception. 10 WELCOME TO THE HIGHLANDS No region is more diverse in styles than the Highlands. Ranging from the bold, peated flavours of Highland Park to the rich and heavy drams of Dalmore, to light citrus notes of Glenmorangie. HIGHLAND PARK Highland Park is Scotland s northmost whisky distillery, lying just north of fellow distillers Orcadian, Scapa. Although initially founded in 1798 by a notorious smuggler the distillery wasn t officially licensed until In recent years it has collected countless awards and remains one of a small group of distilleries that still do onsite floor malting. 12 YEAR OLD 40% $14.00 The expression that started it all. First introduced in 1979 and still at the heart of the range for Highland Park. DARK ORIGINS 46.8% $16.00 This welcome addition to the core range uses twice as many first fill sherry casks than the classic Highland Park twelve year old, resulting in a darker, richer flavour. 18 YEAR OLD 43% $26.00 Previously named Worlds Best Spirit in 2005, this is a dram that just gets better every time you return to it. Sweet honey, dried fruit, marzipan and subtle smoke, it is a dram that reveals more layers with every sip. ABERFELDY 12 YEAR OLD 40% $12.00 Strongly scented with honey notes, green apple and slight notes of raspberry jam. On the palate sweetness develops with hints of peach and butterscotch. CLYNELISH 14 YEAR OLD 46% $15.00 The fourteen year old single malt offers sweet floral fragrances and maritime flavours with a light and dry finish. CLYNELISH DISTILLERS EDITION 46% $18.00 Each distillers edition on the Clynelish line undergoes a second maturation in casks that have previously held fortified wine. This dram has been double matured in selected Oloroso casks and this adds a great deal of rich sweetness. DALWHINNIE DISTILLERS EDITION 43% $19.00 Finished in Oloroso sherry casks, giving this edition rich caramel notes, Manuka honey, sweet vanilla and nutmeg. GLENDRONACH 12 YEAR OLD 43% $13.00 A heavily sherried Highland whisky that coats the mouth and brings flavours of Christmas cake and winter spice. A malt perfectly suited to sipping after dinner. GLENDRONACH 12 SAUTERNES CASK FINISHED 46% $18.00 Stone fruits and melon rind on the nose, with a long wine finish on the palate. The Sauternes definitely plays a big role in this whisky. GLENDRONACH CASK STRENGTH BATCH % $23.00 Released in 2015 it is a combination of whisky matured in Oloroso and Pedro Ximenez sherry casks and bottled at 54.7%. Warming spices with stone fruits and raisins to follow. GLENDRONACH 18 YEAR OLD 46% $23.00 Aromas of chocolate fudge and light citrus. It has a rounded palate, with a bitter, spicy finish from the 100% European oak maturation.

12 MORE FROM THE HIGHLANDS GLENMORANGIE THE ORIGINAL 40% $12.00 The core of the Glenmorangie range, the original was released to replace the 10 year old. A very thick and fruity offering with rich notes of vanilla and toffee, this dram has a sweet, creamy finish. A classic malt. GLENMORANGIE LASANTA 12 YEAR OLD 43% $13.00 Matured first in bourbon casks before moving to Oloroso and Pedro Ximenez sherry casks for a finishing period. Think of dark chocolate, dried fruit and fresh honey. GLENMORANGIE QUINTA RUBAN 12 YEAR OLD 46% $14.00 To craft this single malt specially selected port pipes from the Douro valley in Portugal are used in the distillation process. On the nose, there are notes of berry fruits with a bold and rich finish of chewy port. Delightful. GLENMORANGIE NECTAR D OR 46% $15 Aged for 12 years and finished off in Sauternes wine casks, this whisky is great for a dessert dram. Sweet and citrusy, with a dry chocolate finish. A popular one amongst the Glenmorangie range. GLENMORANGIE SIGNET 46% $28.00 Distilled in chocolate malt and heavily roasted malted barley then matured in virgin oak casks, this whisky has huge cocoa notes with vanilla, cinnamon, lychee and fruits shinning through. A beauty. ISLE OF JURA SUPERSTITION 43% $15.00 Made up of whiskies aged from thirteen to twenty one years, with 13% heavily peated malt this dram has strong notes of white pepper and hot buttered toast, finishing with forest honey. OBAN 14 YEAR OLD 43% $16.00 A superb, full-blooded fruity malt with a whiff of heather and more than a hint of smoke. OBAN DISTILLERS EDITION 43% $22.00 This distiller s edition has been given a finishing period in Montilla Fino casks for an interesting depth of flavour. A deeply intriguing expression of dry fruitiness. OLD PULTENEY 12 YEAR OLD 40% $13.00 A very popular Highland dram, with a big sherry presence alongside sweet citrus, fruit notes and a faint whiff of brine. Picked up the top prize in its category at the World Whisky Awards 2010.

13 OLD PULTENEY 17 YEAR OLD 46% $19.00 A seventeen year old comprised of 90% refill bourbon casks with the remainder being from Oloroso casks. This whisky boasts sweet aromas of butterscotch, honey and chocolate with faint salt and oak spice on the finish. ROYAL LOCHNAGAR 12 YEAR OLD 40% $17.00 A light dram with notes of toffee, brown sugar and lingering sandalwood. ROYAL BRACKLA 12 YEAR OLD 40% $16.00 Finished in first fill Oloroso casks, this dram is spicy with hints of vanilla and black pepper TALISKER 10 YEAR OLD 45.8% $14.00 This classic dram from the Talisker portfolio starts with low levels of smoke, heather and pear; finishing with dry seaweed, slight peppery notes and strong peat. TALISKER 18 YEAR OLD 45.8% $27.00 A must have for any Talisker fan. A house favourite and the winner of Best Whisky in the World at the 2007 World Whiskies Awards. The palate is thick, rich and full-bodied. TALISKER DISTILLERS EDITION 45.8% $24.00 After the initial maturation this malt is given a finishing period in Amoroso sherry casks. This process contributes some rich, juicy sherried notes to a traditionally smoky island dram. TALISKER PORT RUIGHE 45.8% $17.00 Finished in port casks after initial maturation in deeply charred American and European oak refill casks. On the nose there is faint orange whilst sweet chocolate and slight smoke dances on the palate. TOBERMORY LEDAIG 10 YEAR OLD 46.3% $13.00 A gold medal winner at the 2008 International Wine and Spirits Awards. It is light and well balanced on the nose, transitioning into a medium bodied palate with rich smoke and hints of black pepper, charred oak and spice. TOBERMORY 15 YEAR OLD 46.3% $26.00 Matured in Gonzalez Byass Oloroso sherry casks, this is a full-bodied dram, with notes of sherried peels and winter spice, complimented by oak.

14 WELCOME TO SPEYSIDE This region broadly divides into two main styles, the lighter style typified by Glenfiddich or Cragganmore, and the richer fruiter style exemplified by Balvenie and Mortlach. THE BALVENIE In early 1892 work began to convert an eighteenth century mansion (Balvenie New House) into a distillery. The building took fifteen months to complete and on May 1, 1893, the first distillation took place at the Balvenie Distillery. CARIBBEAN CASK AGED 14 YEARS 43% $16.00 Aged in American oak casks for a fourteen year period, then finished in casks that previously held Caribbean rum. Rich, sweet and creamy toffee. DOUBLEWOOD AGED 17 YEARS 43% $20.00 Aged in American oak then finished off in European sherry oak casks. This dram is rich and complex with notes of honey, green apple, vanilla and creamy toffee. PORTWOOD AGED 21 YEARS 47.6% $38.00 Aged in port pipes/casks that previously held fine port wine. The Portwood is non-chilled filtered displaying bold notes of fruit, raisin, honey and spice. ABERLOUR A BUNADH 60.8% $18.00 This dram is aged in Oloroso sherry butts, big, rich and full of fruit and nut flavours. AUCHROISK 10 YEAR OLD FLORA & FAUNA 43% $14.00 Tangy orange on the nose, the malt is amplified by the curious saltiness of the palate. AULTMORE 12 YEAR OLD 46% $13.00 A refreshing dram with plenty of vanilla, honey and citrus, alongside a touch of grassiness. CARDHU 12 YEAR OLD 40% $14.00 Sweet and rich, with apple peel and bruised pear on the nose. The palate is smooth and rounded with a gentle touch of soft peat. CARDHU 18 YEAR OLD 40% $25.00 A rich and complex Cardhu. Soft and approachable whilst staying true to the classic style of the distillery this dram has rich fruits on the nose with a leather and chocolate finish. CRAGGANMORE 12 YEAR OLD 40% $13.00 A sherried, twelve year old malt. A well rounded representation of the Speyside region, offering a rich, slightly floral finish with barley notes. CRAGGANMORE DISTILLERS EDITION 40% $17.00 This malt has been double matured in port pipes, yielding a sweet and deeply fruity flavour with smoked oak. CRAIGELLACHIE 13 YEAR OLD 46% $13.00 This thirteen year old malt handsomely shows off the bold, robust character of the distilleries output. A dram that boasts oodles of dynamic fruit notes with a distinctive current of smoke running through. CRAIGELLACHIE 23 YEAR OLD 46% $70.00 A whisky like no other. Well-refined citrus and tropical fruits on the nose and a waxy, sulphury palate with hints of menthol and beautiful herbaceous notes. DAILUAINE 16 YEAR OLD FLORA & FAUNA 43% $16.00 This whisky has a certain period in sherry casks which produces thick fruitcake notes and winter spice. A great digestive. GLEN ELGIN 12 YEAR OLD 43% $15.00 Smooth and mellow, with hints of honey. A great introduction to Scotch whisky. GLENFARCLAS 8 YEAR OLD 40% $14.00 A vibrant fresh whisky with aromas of honey, almonds and butterscotch. Always impeccably wellmade, this is a whisky that delivers in quality.

16 MORE FROM SPEYSIDE GLENFARCLAS 10 YEAR OLD 40% $16.00 Lots of malty characteristics, backed up with some sherry overtones and vanilla and spice. GLENFIDDICH 12 YEAR OLD 40% $12.00 Aged in American and European casks, this award winning malt has flavours of honey, apple and pear. GLENFIDDICH 15 YEAR OLD SOLERA 40% $15.00 Matured in American oak, Portuguese sherry and virgin oak, then married into a wooden vat and constantly topped up to ensure quality. This dram has rich flavours of dark fruit, sherry oak and marzipan. GLENFIDDICH IPA 43% $18.00 This is a whisky that has been finished for its last 3 months of maturation in casks seasoned with Indian Pale Ale. The result is an uplifting fruity dram. GLENROTHES SELECT RESERVE 43% $14.00 This non-aged statement release is a tremendous Speyside dram, with lots of zesty fresh fruit on the nose, with a vanilla and slight spice finish. GLENROTHES SHERRY CASK RESERVE 40% $15.00 Another non-aged statement whisky from Glenrothes. Distilled entirely in first filled sherry casks, this rich dram has notes of gingerbread, vanilla and crème brulee. GLEN SPEY 12 YEAR OLD FLORA & FAUNA 43% $13.00 The only official bottling from the Glen Spey distillery, this is a light, crisp malt with fresh and dried grass, finished off by hints of honey and fruity Calvados. KNOCKANDO 12 YEAR OLD 43% $13.00 Rich in fruity Speyside notes alongside good helpings of golden barley and candied ginger. 20 AMERICAN WHISKEY Distillation in North America dates back to the 17th century when Scottish and Irish settlers needed a nostalgic tipple to reminisce about the homeland they had left behind. It was made predominantly with grains imported from Europe, and was a raw, un-aged spirit, with few of the distinctive characteristics of bourbon or rye, that we know and love today. However, economic necessity forced many to look to native grains and corns for distillation and this would ultimately lead to a whiskey revolution. By the 19th century bourbon and rye whisky had become booming industries across the Northern and Confederate states and the future looked golden for whisky. Unfortunately, the early half of the twentieth century was not so fortunate for the industry. With the enforcement of prohibition, and the advent of dry states in Kentucky and Tennessee, distilleries were forced to close their doors. It would not be until 1945 that North American whisky would re-emerge and become the diverse powerhouse that it is today. 25 WHISKEY OF IRELAND Irish whiskey is uniquely different to its Scottish cousin, predominantly due to fewer regulations for ingredients and an emphasis on triple distillation. It must be distilled and aged in either Eire or Northern Ireland, and matured in wooden casks for a minimum of three years. The crucial difference, however, is in the use of unmalted barley, which is defined as the signature Irish style, this yields a whiskey that is oily, spicy and fruity. 27 WHISKY OF JAPAN The periodical rise of Japanese whisky can be largely attributed to one man, Masataka Taketsuru. In 1923 Taketsuru returned to Japan from an apprenticeship at Hazelburn distillery in Campbeltown, Scotland to help establish the Yamazaki distillery. Eleven years later he would establish his own distillery which would become known as the Nikka distillery. These days, Japanese whisky is highly awarded, and as a result, there is an ever-increasing demand for the reputable spirit. HAKUSHU DISTILLERS RESERVE 43% $15.00 A green and crunchy entry in the Hakushu Range, combining whiskies of a wide variety of ages, from across the range of casks used by the distillery to create a gentle smoky dram, packed with fruity flavour. With notes of cooked fruits and mixed peels complimented by faint hints of smoke and cacao and a nutty finish, this is truly a wellrounded whisky. Sweet and rich, with crisp notes of mixed peel, raisin and custard, followed by a long finish. Predominately distilling corn through their continuous Coffey stills which produces a bright and floral liquid, with citrus and tropical fruit jumping from the glass. On the palate it s smooth and soft with slight zesty notes. One of our all-time favourites! Full bodied, with nutty oils and zest, this is complimented by a pleasant floral character. 29 WELCOME TO AUSTRALIA The early 1990 s saw the kick-start of the modern Australian whisky industry, Bill Lark, the Grandfather of Aussie Whisky successfully lobbied for the removal of the law in the Licensing Act of 1901, which limited still sizes to a minimum of 2,700 litres. This allowed craft distillers such as Lark to focus on quality small batches of distillate and set out on a path that would soon lead to world recognition for their efforts. BAKERY HILL CLASSIC MALT 46% $24.00 Located a short 30 minute drive east of the city, you will find the distillery producing this fine malt. Using only malted barely from Tasmania, this whisky has an amazingly complex aroma, with a palate of cocoa and malt. BAKERY HILL PEATED SINGLE MALT 46% $24.00 Produced with an ever so slightly peated barley, this is one for a recently established drinker looking to broaden their horizons. LARK CLASSIC CASK 43% $30.00 With 50% of this malt peated, it represents a full-bodied Speyside or Highland whisky. Aged for 5-8 years in small 100 litre casks allows for more contact with the oak, resulting in a faster ageing spirit. STARWARD SINGLE MALT 43% $12.00 A great release from the distillery located at Port Melbourne. Aged completely in Australian Apera casks, aromas of banana and tropical fruit jump out of the glass, with a light body and a finish of toffee and malt. Dark fruits and chocolate with a desirable malty character.

30 INDEPENDENT BOTTLINGS Over the years, many distilleries have sold different casks to independent buyers that have then bottled it under their name. As every cask ages differently, these bottles offer flavours that could be considered a little bit left of field than its normal distillery bottling. Often sold as single cask, and very limited, these whiskies can be little pots of gold. BUNNAHABHAIN THE TEN #9 50.1% $21.00 Distilled in 2008 and bottled in 2015 this is a full bodied and peated expression of Bunnahabhain generating notes of spicy, peppery oak, espresso beans and wood smoke. CADENHEAD S SMALL BATCH MORTLACH 20 YEAR OLD 53.4% Bursts of honey, white pepper and gooseberries mingle with faint traces of heavier red fruits. CAOL ILA THE TEN #7 40.1% $16.00 Bottled in 2015, this seven-year-old whisky is a truly great expression of the distillery character of Caol Ila. An almost clear whisky resulted from being aged in tired oak barrels. CLYNELISH THE TEN #3 40.1% $13.00 Matured in bourbon casks, this super fruity, zesty dram is backed up with a complex finish. A great young expression of this Highland distillery. SIGNATORY VINTAGE BRUICHLADDICH YEAR OLD 58% $30.00 The un-peated Laddie malt from the Bruichladdich distillery, aged in a refill Sherry Butt, and limited to 619 bottles. SIGNATORY VINTAGE 1989 BUNNAHABHAIN 26 YEAR OLD 47.7% $24.00 This independent bottle by Signatory has been matured in Hogshead barrels (large bourbon barrel) for 26 years. There are not many independent bottling s of Bunnahabhain about these days. SIGNATORY VINTAGE DAILUAINE YEAR OLD 46% $19.00 Matured in Ex-bourbon hogsheads, this speyside dram is un-chill filtered and bursting with fruit, vanilla and tropical notes, a super complex whisky. 32 GLOSSARY OF TERMS Barrel A 200 litre American oak cask Blended Whisk(e)y A mix of grain and malt whisky (Scotland), or bourbon and rye (America). Bourbon Bourbon is a barrel-aged spirit that must be made primarily from corn to which a selection of small grains is added, most commonly rye; it then must be aged in new charred oak cask for a minimum of two years. The word bourbon can be traced back to the 1820s and is ultimately derived from the French Bourbon dynasty. Although bourbon can be made anywhere in the United States it is synonymous with the American South and predominantly the state of Kentucky. Butt A 500 litre ex-sherry cask used typically to mature scotch whisky. Caramel An additive used in many whiskies to adjust colour to make it consistent across batches, however it is not permitted to be used in bourbon. Overuse can dull the aroma and give a bitter finish to the whisky. Cask A term referring to all different types of oak containers used for maturing whisky Corn Whiskey Unlike its American whiskey cousins, no wood ageing is required at all for corn whisky, but if the product is aged, it must be in either non-charred casks or refill casks. These whiskies must be a minimum of eighty percent corn mash and a maximum strength of 160 proof. First Fill When a distiller refers to a barrel as being first fill, they mean it is the first time they have filled it with whisky. As these industries often use second hand casks it is not however the first time the cask has been filled with whisky. This can become quite confusing. Grain Whisk(e)y Made from a mix of a small amount of malted barley and then either corn or wheat and distilled to under 94.8% in a column still. Hogshead A type of cask commonly made from American oak, with a volume of 250 litres Phenols The chemical term for the aromatic compounds given off when peat is burned. Measured in phenolic parts per million, (ppm) the higher the ppm the smokier the whisky. Pure Pot Still A phrase used by the Irish whiskey industry used to describe a style of whiskey made from a mix of malted and un-malted barley in a pot still. Quarter Cask A small cask with a volume of 45 litres.
