1 Bier is a huge part of Lowland Europe s culture as integral a part of the daily experience as waffles, frites, cafés, and bicycles. At Café Benelux, we take bier very seriously from sourcing the best biers to perfecting the way each is served. We take it so seriously, that our company has been honored and inducted into the Belgian Brewers Guild (The Knighthood of the Brewers Mash Staff) chosen as an international advocate and ambassador of Belgian bier. Each year, we comb the breweries, monasteries, and cobblestone streets of Belgium and Holland to locate rarities, oddities, and even exclusive selections to serve in our cafés. We visit plant managers, hop farmers, and importers of the world s greatest breweries. We meet (and taste) with the monks, brew masters, and families who have made these biers their passion for centuries. Café Benelux is proud to present this selection of hand-picked biers for you to enjoy.

Authentic versions of the bier must conform to several standards set by the International Trappist Association

Get to know DUBBEL The dubbel is a fairly strong (6-8% ABV) brown bier with pronounced dark-fruit fruitiness, and a rich body. Dubbels, tripels and quads TRIPEL The tripel is a stronger (8-10% ABV) often golden bier with a brighter fruitiness, and crisper finish than the dubbel. QUAD The quad is like a stronger (10-12% ABV) dubbel with richer and sweeter flavors of chocolate and raisin. A Different Kind of Brussels lace? In bier terms, lacing refers to the lines of foam residue left on the inside of the glass as you consume your bier. If they re distinct and long-lasting, you know you ve been served a bier with a beautiful, aroma-releasing head in a gloriously clean glass. When a bier is a dubbel or a tripel or a quad it means that the brewer added two, three or even four times the regular amount of malt to the brew kettle. The more malt means the more starches which may be converted into sugars. More sugar means more alcohol during the fermentation process, hence why the ABV often steps up with these types of biers

15 TRIPELS A style developed by Trappist monks, the tripel is a strong pale ale brewed with three times the amount of malt as a traditional Trappist single. Robust and satisfying, with hints of dark fruit, cumin, and apple. HARMONIOUS A Bier of STRENGTH A Belgian strong blond ale may be a close cousin to a tripel but a Belgian strong dark ale is not closely related to a dubbel. One important distinction is that the strong dark ale often uses roasted malt, which achieves a darker color and more toasty flavor than a dubbel. The color of strong dark ale ranges from deep amber to dark brown with a dense foamy head. The aroma may be described as rich, sweet, toasted, bready, caramel-like, peppery, herbal, with dark fruit notes like prunes, raisins, plums or figs. The flavor profile is similar to the aroma and is moderately sweet and malty with a low-to-moderate amount of bitterness, which provides balance and sometimes a spicy quality. Despite the complexity of flavors and aromas, a good Belgian strong dark ale will meld all of these attributes harmoniously

WHY SO MANY Bier GLASSES? Bier in Belgium is not just a beverage it is an experience. Many, if not most, breweries and specific types of bier have their own glass. Glass shape can greatly affect aromatic presentation, head formation, even how well carbonation will be sustained. The ideal in these areas varies from bier to bier, thus so do the glasses. And in Belgium, you d never serve bier in the wrong glass it would lessen the experience. Café Benelux subscribes to that same theory, keeping well over 40 different glasses behind the bar to ensure that your Belgian bier experience is the best it can be

19 STOUTS Stouts are dark, sometimes bitter biers that were first commercially produced in Ireland. Though all stouts are composed of roasted barley or malt, there is a wide variety to be had. STOUTS (continued) Ballast Point Indra Kunindra 7% 650mL $14 Ballast Point Brewing Co. // San Diego, CA Brewed with madras curry, cayenne pepper, cumin, toasted coconut, and kaffir lime leaf, this complex and nuanced India-style Export Stout is a truly memorable experience that reveals itself slowly as it warms. Central Waters Satin Solitude 7.5% 355mL $5 Central Waters Brewing Co. // Amherst, WI Dark black with layered lacing this Imperial Stout has notes of chocolate and caramel with such a thick body it is comparable to a milk stout! AleSmith Speedway Imperial Stout 12% 750mL $20 Alesmith Brewing Co. // San Diego, CA Starts with a strong coffee and dark chocolate sensation, then fades to a multitude of toasty, roasty and caramel malt flavors. Deschutes Obsidian Stout 6.4% 355mL $7 Deschutes Brewery // Bend, OR A take on a classic style, brewed with a generous amount of flaked oats, chocolate malt, roasted barley and a healthy helping of hops. This bier is nitrogen-infused to give it an extra smooth and creamy mouthfeel. The Color of the IRISH It s not black. It s not even brown. Hold your bier up to the light. Guinness is actually a deep, dark red, a color the company attributes in part to the roasting of malted barley during the bier's preparation. Benelux Welcomes Nitro And so should you! You see, unlike CO2, Nitrogen gas wants nothing to do with bier, meaning it quite literally leaves more for you! In a desperate effort to escape, these beautiful, tiny bubbles cascade upward in your glass to build a tight, thick, creamy head. But it s about more than just a silky smooth mouthfeel. is means you end up with less gas in your glass, and can enjoy more without becoming full. Savoring a bier on nitro also gives you a little insight into what it might have been like to enjoy a bier in 19th century Europe, before bars began pumping CO2 into their lines to get the bier from the keg to the faucet. Oh, and there s one more thing Nitrogen is born from the fusion of stars, which means your bier experience isn t just smooth it s stellar! 36 37

These fermenting yeasts and bacterias consume sugar just like regular yeast, but they produce lactic and acetic acids that cannot be made by the usual yeast. These acids provide the tart and rustic flavors associated with sour ales
