13 T H E P R O D U C T I O N P RO C E S S STAGE 1 STAGE 2 STAGE 3 Water and grains are cooked at different temperatures to convert starches to sugars (mashing in) Mash is chilled down to 80 degrees once conversion is achieved Mash is transferred to fermenters, where yeast is added. After 3-5 days of fermentation, 8-10% alcohol is achieved (beer) STAGE 4 STAGE 5 STAGE 6 Mash is then transferred to the pot still to strip out alcohol (beer striping run). After collecting the alcohol (low wines), it is transferred to its appropriate column 5-plate column for whiskey, or 20-plate column for vodka Whiskey is distilled under 160-proof and cut to 125-proof for barreling Vodka is distilled to 190-proof and cut to 80-proof for bottling did you know? All products are cut with rainwater, which is harvested on-site and double filtered through our reverse osmosis system. Each batch uses around 500 gallons of rainwater.
