1 Basil Gimlet Aromatic basil leads both flavor and aroma for a twist on a classic. 2 oz. Square One Organic Vodka 4-5 leaves of basil, torn (for a new twist try Thai or Lemon Basil) 1 oz. fresh lime juice 1/5 oz. Organic agave nectar In a mixing cup muddle basil briefly with a muddling stick or back of a wooden spoon. Add crushed ice and other ingredients. Shake vigorously for 10 seconds. Strain into a chilled martini glass. No need for a garnish as little bits of basil will be floating in the cocktail. (Credit: Neyah White)

2 Berry-go-Round An anti-oxidant powerhouse, along with good for you omega fats from acai. 2 oz. Square One Organic Vodka 1/2 oz. Crème de Cassis liqueur 1/2 oz. Sambazon brand organic acai juice 1/2 oz. organic blueberry juice 1/2 oz. Organic pomegranate juice 1/4 oz. fresh organic lime juice 2 mint leaves Fill cocktail shaker with ice. Tear mint leaves and put on top of ice. Pour liquid ingredients into shaker and shake for 20 seconds. Strain into martini glass. Some mint leave pieces may be visible. Optional: garnish with small mint leaf float. Note: For large groups pre-mix proportional amounts of fruit Juices into a large pitcher. Mix juices well. To serve, fill cocktail shaker with ice, tear a mint leaf and put on top of ice. Pour 2 oz. of Juice plus 2 oz. of Square One Organic Vodka into shaker. Shake well and strain into a martini glass. 3 Bit o Honey Playfully named after the childhood favorite that garnishes the glass, Bit o Honey! is a creamy, naturally sweet cocktail with a luxuriously smooth taste. 1 oz. Square One Organic Vodka 1/2 oz. Frangelico 1 oz. organic cream 2 dashes of raw, uncooked organic honey (roughly a tsp. of honey) 1 dash of organic cinnamon Place all ingredients in a shaker filled with cracked ice. 4 Country Thyme A cocktail that starts with fresh berries Yum! 1 oz. Square One Organic Vodka A handful (approximately 10-15) fresh blueberries, huckleberries, or blackberries 1/2 oz. fresh organic lemon cut into pieces 1/4 to 1/2 oz. organic agave nectar 2-3 sprigs of fresh thyme In a mixing cup add berries and lemon. Muddle to juice both. Add Square One Organic Vodka, agave nectar and ice. Shake vigorously for seconds. Take 3 sprigs of thyme and slap it between your palms to release the oils. Place 2 sprigs in bottom of 10-ounce highball glass and fill with ice. Strain the cocktail over ice and put the last thyme sprig and place it in top of cocktail as a garnish. It should stick out a bit like a small straw. Note: For a refreshing summer spritzer, add 1 tablespoon of Crème de Cassis or D Arbo Sour Cherry Syrup or Sonoma Black Currant Syrup and top with soda water. (Credit: H. Joseph Ehrmann)

5 Flower Child Free-spirited, this elixir is decidedly not a wallflower. 2 oz. Square One Organic Vodka infused with Numi Organic Velvet Garden white rose tea (see infusion recipe below) 1 oz. hibiscus flower unsweetened concentrate (Eva brand- buy online at 1/2 oz. organic agave nectar 1/2 oz. fresh lemon juice 1/4 oz. Conitreau dash of Peychaud s bitters Mix all ingredients in a cocktail shaker and shake for 30 seconds. Strain into martini glass. Garnish with a rose petal (if available) or a lemon twist. Infusion - Pour vodka into a glass pitcher and put in 6 tea bags per 750 ml of vodka. Let stand for 4-6 hours. Remove bags and pour infused vodka back into original vodka bottle for use. 6 Golden Fiddle A peachy-keen cocktail that will make you miss Georgia. 1 oz. Square One Organic Vodka 1 oz. peach puree (see recipe below) dash of apricot bitters club soda, as needed peach, cut into wedges for garnish Peach Puree 1 ripe peach 4 sage leaves 1 tsp. raw organic sugar Shake Square One Organic vodka, peach puree, and bitters together and pour over ice into a Collins glass. Top with club soda and garnish with a wedge of fresh peach on the side of the glass or a sage leaf dipped partially into the edge of the cocktail. (Credit: Jonny Raglin)

7 Golden Gate A delightful Holiday cocktail using seasonal persimmons and traditional Holiday spices, yet with a decidedly light and modern taste. Also known outside of the Bay Area as Square simmon. 2 oz. Square One Organic Vodka 2 oz. persimmons puree Persimmons Puree 4 Fuyu persimmons, chopped (do not substitute with other persimmon types) 1 fresh vanilla bean, split down the middle to open 2 tbsp. crystallized ginger, cut into small cubes 1 pinch of nutmeg 3/4 c. sugar 3 c. water juice of 1 lemon Place vodka and puree in a shaker with a lot of crushed ice. Shake vigorously for 30 seconds. This cocktail needs dilution or it will be too thick, so shake away! Strain into chilled martini glass. No garnish required as the vanilla bean specks float beautifully in the glass! Persimmon Puree - In a medium-sized stock pot, melt sugar over medium to mediumhigh heat until amber/golden brown, stirring occasionally to avoid burning. Once color is achieved, remove from heat and pour water slowly down the sides of the pot. Water will bubble, steam and sputter and sugar will immediately harden. Return to medium-high heat and cook until sugar is melted again, stirring occasionally. Once completely melted again, add chopped persimmons, vanilla bean and crystallized ginger. Cook on medium-low heat (strong simmer) for about 2 hours, or until persimmons are completely soft and liquid is reduced by almost half. Add pinch of nutmeg and stir in. Remove from heat and cool. Once cooled, remove vanilla bean, scrape any remaining pulp from inside bean and put into mixture. Discard vanilla bean pod. Pour lemon juice into mixture then puree all liquid and solids in a blender or food processor until finely pureed. Working in small batches, pour puree into a sieve strainer. Hold strainer over a large bowl and using the back of a large spoon, press and stir the puree solids against the sieve, extracting a finer liquid, leaving thicker solids in strainer. Use the fine liquid puree to make the cocktail. The remaining thick puree in the strainer can be jarred for a few days and used as a delicious jam on toast or muffins. (Credit: Allison Evanow)

8 Goodnight Ginger A flavorful blend of Square One Organic Vodka with Numi Organic Tea Sweet Meadows Chamomile Lemon Myrtle fresh ginger and lemon juice. The delicate chamomile and the kick of ginger provide a complex, mouthwatering cocktail. 2 oz. Square One Organic Vodka infused with Numi Organic Sweet Meadows Teasan Chamomile Lemon Myrtle (see infusion recipe below) 2 oz. fresh organic lemon juice 1/8 tsp. fresh grated ginger 1 oz. organic agave nectar (to taste -- may need more if lemons are tart) splash of Vya extra-dry vermouth or other aromatic white vermouth Put all ingredients in a cocktail shaker with crushed ice. Shake vigorously for 15 seconds. Strain into a martini glass and garnish with a lemon twist. Infusion - Pour vodka into a glass pitcher and put in 6 tea bags per 750 ml of vodka. 9 Green Machine A surprisingly delicious way to get your greens while still enjoying a social libation! 1 1/2 oz. Square One Organic Vodka 1 oz. Odwalla Supperfood Green juice 1/2 oz. Spa Nectar (see recipe below) 1/2 oz. organic pear juice 1/4 oz. Cinzano Bianco (sweet white vermouth) Juice of lime 4-5 leaves of fresh mint cut into thin strips Spa Nectar 2 whole cucumbers (preferably English Cucumber) 10 oz. Organic Agave Nectar 2 tsp. fresh, minced ginger This nectar recipe will make enough for approximately 8-10 cocktails. Peel cucumbers then slice in a food processor or mandolin slicer. Pour 10 oz of Agave Nectar into glass jar or other storage container. Add cucumber slices and any cucumber juices to nectar. Using a garlic press, put in 1 tsp. minced ginger. Hold press over cucumber-nectar mixture and press minced ginger until ginger juice is extracted. It will only yield a few drops per pressing. Clean out press and repeat with remaining ginger until all ginger is pressed and juice is extracted. Stir nectar-cucumber-ginger juice mixture, cover and let stand overnight in refrigerator. Place all ingredients into a cocktail shaker, adding a few cucumber wheels from the spa nectar, and pack with ice. Shake vigorously for 15 seconds, then strain into a chilled martini glass. 10 Honey I m Frisky Our sublime honey-infused martinis are perfect for the classic martini enthusiast seeking just a hint of exotic sweetness. 2 oz. Square One Organic Vodka 1 tsp, Lemon-Rosemary Infused Honey (see infusion below) Lemon twist for garnish Infusion 1 lemon 4 sprigs of rosemary, approximately 3 inches long 3 tbsp. clover honey 1 c. water Combine infused-honey mixture with vodka in a cocktail shaker with no ice. Shake vigorously for 10 seconds. Add crushed ice, shake again for 30 seconds, then strain and serve in a chilled martini glass. Garnish with lemon peel or a sprig of rosemary. Infusion - Pare off the outer skin of the entire lemon, taking as little of the white pith as possible. Strip needles from the rosemary sprigs. Combine the lemon peel, rosemary needles, honey and water in a saucepan and bring to a low boil. Lower heat and reduce to consistency of a light syrup (it should drizzle quickly from a spoon). Remove from heat and strain to remove rosemary needles and lemon peel solids. Cool to room temperature before using. Stores in refrigerator for up to 1 week (Credit: Allison Evanow)

11 Honey I m Sexy Our sublime honey-infused martinis are perfect for the classic martini enthusiast seeking just a hint of exotic sweetness. 2 oz. Square One Organic Vodka 1 tsp. Orange-Fennel Infused Honey (see infusion recipe below) orange peel for garnish Infusion 1 fresh orange 1/2 tbsp. funnel seed 3 tbsp. organic clover honey 1 c. water Combine infused-honey mixture with vodka in a cocktail shaker with no ice. Shake vigorously for 10 seconds. Add crushed ice, shake again for 30 seconds, strain and serve in a chilled martini glass. Garnish with orange peel and a few fennel seeds if desired. Infusion - Pare off the outer skin of the entire orange, taking as little of the white pith as possible. Combine all ingredients in a saucepan and bring to a low boil. Lower heat and cook until the honey mixture reduces to a light syrup (it should drizzle quickly from a spoon). Remove from heat and strain to remove fennel seeds and orange peel solids. Square One Organic Vodka 1 tsp. ginger-lemongrass infused honey (see infusion below) 1 blade of lemongrass for garnish 1 candied ginger for garnish Infusion 2 tbsp. minced lemongrass 1 tbsp. fresh ginger, peeled and minced 3 tbsp. organic clover honey 1 c. water Combine infused-honey mixture with vodka in a cocktail shaker with no ice, shake vigorously for 10 seconds. Add crushed ice, shake again for 30 seconds, strain and serve in a chilled martini glass. Garnish with a bright green blade of lemongrass or a cube of candied ginger. Infusion - To prepare the lemongrass: Remove the outer leaves from the bunch, cut off the woody tops and at least 1 inch of the bottom, and mince the soft, sweet core. Combine lemongrass, ginger, honey and water in a saucepan and bring to a low boil. Reduce heat and cook until the honey mixture becomes a light syrup (it should drizzle quickly from a spoon). 13 Indian Nightcap Inspired by combining after-dinner tea service with the traditional after-dinner cognac -- Masculine yet refined. 1 oz. Square One Organic Vodka infused with Numi Organic Indian Night Decaf Black Vanilla tea (see infusion recipe below) 1 oz. Navan liqueur (Natural Madagascar vanilla blended with French Cognac) Serve together in a snifter neat or with one ice cube. Infusion - Pour vodka into a glass pitcher and put in 6 tea bags per 750 ml of vodka. Let stand for 4-6 hours. Remove bags and pour infused vodka back into original vodka bottle for use. 14 Lavender Honey Cream A rich dessert cocktail inspired by Bi Rite Creamery, San Francisco, CA 1 oz. Square One Organic Vodka 1 oz. organic heavy cream 1 oz. organic egg white 1 oz. lavender honey syrup (see note below) lavender, for garnish Combine all ingredients over ice in a shaker and shake gently for 30 seconds. This will make a thick, creamy cocktail without too much ice. Strain into a chilled martini glass and garnish with a piece of lavender floating on top. Note: Lavender honey available in specialty stores or on-line at Boil one cup of water and slowly stir in 1 cup of lavender honey until dissolved. 15 Lemon Lavender Martini Simple and wonderfully refreshing. 2 oz. Square One Organic Vodka 1 oz. lavender Sonoma syrup 1/2 oz. fresh squeezed lemon juice Place all ingredients in a cocktail shaker with ice and shake for 15 seconds. Strain into a chilled martini glass and garnish with a lemon twist, or preferably a lavender bloom (culinary lavender). (Credit: Alberta Straub)

16 Mango Island Mangos, strawberries, and orange juice it s a drink that could be straight from the islands. 1 oz. Square One Organic Vodka infused with mango (see infusion below) mango strawberry puree (see recipe below) 4 oz. fresh-squeezed orange juice 1/2 oz. Chambord 1 sprig of mint Build in a 10oz Old Fashioned glass over ice. Add the vodka and orange juice and stir gently. Float the Chambord over the back of a spoon. Squeeze the puree into the center of the glass, creating a floating island of it. Stick the mint sprig in the center of the island. Mango-infused Square One In a large mason jar (at least1 liter) combine.5 lbs of dried mango (with no added sugars this is important as dried mango with added sugar will make the infusion much sweeter) and 750ml of Square One Organic Vodka. Let sit for 3-5 days, agitating lightly each day. When the flavor has reached your desired intensity level, strain the vodka back to a bottle and reserve the reconstituted mango for the puree. Mango-Strawberry Puree In a mixing bowl combine the reconstituted, vodka infuse mango with 6 large strawberries and 1oz of agave nectar. Blend with a hand blender until smooth. 17 Moonlight on the Peach Ripe peach with orange spice and a touch of exotic coconut. 1 oz. Square One Organic Vodka infused with Numi Moonlight Spice Tea (see infusion below) ripe white peach 1/2 oz. fresh Tuaca (Italian brandy style liqueur) 1/2 oz. organic simple syrup Round of orange zest to garnish In a shaker, muddle the peach and top with ice. Add the infused vodka. Shake vigorously and strain up in a cocktail glass through a fine strainer. Squeeze the oils of a round of orange zest over the drink and drop in to garnish. Moonlight Spice Infusion In a wide mouth bottle, add one bag of Numi Organic Ruby Chai Tea to each 6 ounces of vodka (6 bags to a 750ml bottle) and let sit for 2-3 hours, agitating on the hour. Note: The peach pulp will make this drink a bit thick. Double strain through a fine strainer, stirring in the strainer with a bar spoon to help the drink drain through to the cocktail glass. 18 Moroccan Bazaar Moroccan mint Teasan lends a spicy mint sensation. 2 oz. Square One Organic Vodka infused with Numi Organic Moroccan Mint Teasan (see infusion recipe below) 2 oz. Trader Joe s organic limeade juice of 1 lime 1/2 oz. organic Agave nectar 3 mint leaves, minced club soda Put all ingredients except Club Soda in a shaker with crushed ice. Shake vigorously for 15 seconds. Strain into a rocks glass filled with ice. Fill to top with Club soda, stir and garnish with a mint sprig. For the home bar chef we gave you the easy option of using limeade instead of squeezing lots of limes, but if you like to go fresh all the way like we do, substitute the limeade for equal amounts of fresh lime, but be sure to add more agave nectar to balance the sweetness. Infusion - Pour vodka into a glass pitcher and put in 6 tea bags per 750 ml of vodka. Let stand for 4-6 hours. Remove bags and pour infused vodka back into original vodka bottle for use. 19 Organic Lady An elegant vodka martini with fresh floral aromas and a touch of candied orange. 2 1/2 oz. Square One Organic Vodka 1/2 oz. Lillet Blanc orange twist In a chilled martini glass, pour Lillet Blanc and swirl around whole glass to coat surface. In a cocktail shaker filled with crushed ice, pour Square One Organic Vodka and shake for 10 seconds. Strain into martini glass and garnish with an orange twist. Note: The organic lady is a more aromatic version of a classic martini. A related drink, the Vesper, made with 2 parts gin and 1 part vodka in place of straight vodka, in combination with the Lillet, was made popular again in last summer s Bond film, Casino Royale. We find the Organic Lady to be a more delicate cocktail than the manly Vesper, perfect for the ladies! (Credit: Allison Evanow)

20 Pear Noel Caramelized pears, spices, whipped cream and ginger snaps bring forth thoughts of warm winter nights by the fires and a Holiday feeling. Who said your cocktail needs to be sipped? Square One Organic Vodka s Pear Noel edible cocktail combines a cocktail with dessert, and is decidedly best enjoyed with a spoon! Recipe per 4 drinks 4 oz. Square One Organic Vodka 4 very ripe pears, peeled, cored, and diced 1/3 c. brown sugar 3 tbsp. high quality Tawny Port 3 tbsp. high quality sweet red vermouth 1/2 c. honey 10 cardamom pods 1 c. whipping cream 4 ginger snap cookies for garnish Pear Puree Place diced pears in non-stick saucepan and add brown sugar. Cook over medium heat, stirring frequently until sugar is melted and pears soften. Mash pears with a fork and continue cooking for 2 more minutes over medium heat or until sugar and pear mixture is bubbling and turning a light caramel color. Slowly add tawny port and red vermouth, cook over medium low heat for 3-4 minutes or until mixture has thickened and is slowly bubbling. Turn off heat, transfer to a blender or using a hand mixer and a bowl, beat until a smooth puree. Add 4 oz. Square One Organic Vodka and blend for 10 seconds. Set aside but keep warm. Spiced Honey Cream Pour honey, water and all cardamom pods into a small saucepan. Cook over medium heat until you reach a low boil. With the back of a spoon, press on the cardamom pods to open them in the honey mixture to release more flavor. Turn down heat and maintain a low boil for 3-5 minutes or until syrup has reduced and can be drizzled from a spoon. Turn off heat and cool. When cooled, strain through a mesh strainer to remove pods and seeds. Set aside. Whip cream until it reaches the stiff peak stage. Add 2 tbsp. of cardamom honey and sweeten to taste. (Remaining spiced honey is delicious over morning pancakes or over ice cream.) Using sturdy martini glasses, spoon in! pear puree mixture into each glass. 21 The Rainforest Green-tea-ni Earthy yet refreshing. Created exclusively for a benefit for Global Green USA 1 oz. Square one Organic Vodka infused with Numi Organic Rainforest Green and Ginger Sun Teas (see infusion recipe below) 1 oz. fresh lime juice 3/4 oz. organic Agave nectar 1/2 oz. orange liqueur Put all ingredients in a cocktail shaker with crushed ice. Shake vigorously for 15 seconds. Strain into a martini glass and garnish with a little zest of lime. Infusion - Pour vodka into a glass pitcher and put in 6 tea bags per 750 ml of vodka. 22 Rooftop An herbal cocktail made from an array of rich wholesome herbs and flowers all grown atop a roof right here in San Francisco, hence the name. 3 oz. Square One Organic Vodka infused with rooftop herbs (see recipe below) 2 kumquats, halved 1/4 oz. Agave nectar 1 Nasturtium blossom, yellow is possible, for garnish Muddle fist three ingredients together, then add ice. Shake and double strain into a martini glass. Garnish with yellow Nasturtium blossom. Infusion 1 bottle Square One Organic Vodka small handful of each of the following fresh herbs: Corsican mint, Moroccan mint, Kentucky mint, Chocolate mint, peppermint, Hyssop, Anise, Petit Royale, Nepitella, and Nasturtiums Place all of the herbs and flowers into the bottle of Square One Organic Vodka and infuse in the refrigerator for 24 hours. 23 Rosemary Meyer Lemon Drop An herbal delight brightened by the sweetness of Meyer lemons. 2 oz. Square One Organic Vodka 1 oz. Meyer lemon juice (may substitute regular lemon juice) 1 tbsp. fresh rosemary leaves 1 tbsp. organic honey Place rosemary leaves and honey in a mixing glass. Heat in a microwave for 5-10 seconds to melt honey. Muddle in glass for 10 seconds. Add crushed ice and other ingredients. Cover with metal mixing tin and shake for 15 seconds. 24 Ruby Natsumi Sweet fruit flavors of strawberry and lychee are combined with the earthy flavor of Numi s Ruby Chai tea. 1 oz. Square One Organic Vodka infused with Ruby Chai 2 ripe strawberries 1 oz. Soho Lychee Liqueur 1 mint sprig for garnish In a shaker, muddle the strawberries and top with ice. Add the infused Square One Organic Vodka and Soho Lychee liqueur. Shake vigorously and Hawthorne stain into a cocktail glass. Garnish with mint sprig. Ruby Chai Infusion In a wide mouth bottle, as one bag of Numi Organic Ruby Chai tea to each 6 cups of vodka and let sit for 2-3 hours, agitating on the hour. 25 Scents of Summer A delicate infusion of Square One Organic Vodka with Numi s Monkey Green Jasmine Organic Tea. The muddled fresh cherries tickle the palate with the delicious scent and taste of summer. 2 oz. Square One Organic Vodka infused with Numi Organic Monkey Green Tea 10 fresh red organic cherries, pitted 1/2 oz. unsweetened fresh lemon juice 1/4 oz. organic agave nectar 1 pitted cherry with a half slice through it Muddle cherries in a mixing with a muddler or back of a wooden spoon until mashed to a liquidy pulp. Mix all ingredients in a cocktail shaker and shake for 15 seconds. Cover mixing tin with a Hawthorne strainer and using a julep or other fine mesh strainer, double strain into a martini glass. Garnish with a fresh cherry fitted onto the side of the glass. Infusion Pour vodka into glass pitcher and put in 6 bags of Monkey green tea per 750ml of vodka. Infuse for 4-6 hours. 26 Spa Collins Soothing and refreshing. Perfect for summer. 2 oz. Square One Organic Vodka 6 cucumber slices juice of lemon 2 oz. spa nectar club soda mint springs or lemon twist for garnish In a tall glass, layer cucumber slices and ice, alternating until the glass is almost filled. Pour vodka, lemon juice and Spa Nectar into cocktail shaker. Add several cucumber slices from the Spa Nectar mixture and some crushed ice. Shake vigorously for 30 seconds. 27 Spajito A delicate spa-like twist on a classic Mojito. 2 oz. Cucumber infused Square One Organic Vodka (see infusion recipe below) 6 sprigs of fresh mint 1 tbsp. organic Agave nectar 3 tbsp. peeled and diced cucumber (preferably English) Juice of lime Club soda or Sparkling water Infusion 1 c. Square One Organic Vodka 1/4 c. diced cucumber Remove leaves from all but one sprig of mint, reserving that sprig for garnish.
