The Whiskey Makers Series The secret of Jameson Whiskey lies with the hard work and dedication to the talented craftsmen, the Head Distiller, Head Cooper and Head Blender. These exciting whiskies celebrates them and their craft Jameson Distillers Safe 15 This whiskey celebrates the craft of the Jameson Head Distiller and his mastery of the Irish Pot Still. As a distiller I wanted to capture the beauty and characters of the distillates. I have created a whiskey with the smooth mouth feel of pot still whiskies, combined with the soft buttery sweetness and gentle fruit notes of grain whiskey - Brian Nation, Head Distiller Jameson Coopers Croze 15 This is a whiskey created by the Head Cooper, Ger Buckley. He aimed to show the diversity of barrels at the Midleton Distillery and the profound influence that wood yields. With the initial sweet taste of vanilla, this whiskey then moves onto a pleasant touch of hazelnut and toasted wood, with a deliciously long finish Jameson Blenders Dog 15 An exceptional whiskey from Jameson and one to get your hands on before it s gone. I wanted to create harmony and complexity, an infusion of flavour that perfectly fills your mouth and nose. My whiskey has a rich and creamy mouth feel, with the sweetness of butterscotch, giving way to the prickle of spices and tannins - Billy Leighton, the Head Blender at Jameson Old Bushmills Distillery, County Antrim Bushmills 8.5 A blend of triple distilled single malt whiskey with a lighter Irish grain whiskey Bushmills Blackbush 11 Blended single malts matured in oloroso sherry casks, full flavoured and slightly spicy Bushmills 10yo Malt 11.5 A single malt, rich and smooth with vanilla and honey notes Bushmills 16yo Malt 16 Sherry inspired notes of vanilla and fruit with a delicate long finish Bushmills 21yo Malt 34 It is a remarkably fresh and lively tasting malt, given its advanced years. Like the rest of the single malts from Bushmills, this is initially aged in both bourbon and sherry casks

Teeling Distillery, Dublin Teeling Small Batch 11 An inviting nose where vanilla and spice dance with a slightly moorish and sweet spice finish complimented by woody undertones Teeling Single Grain 12.5 Spice and fruit notes mingle with an underlying sweet nose with a dry finish dominated by wood and spice Teeling Single Malt 14 Vibrant with notes of melon, figs, toffee and lemon. A long finish with sweetness in harmony with dry tannins from the wood Teeling Poitin 10 Aromas of floss, malted barley, half baked bread, raisined fruits and sugared almonds. Tipperary Distillery, County Tipperary Tipperary - The Rising 1916 Edition 15.5 An eleven year old single malt bottled by the Tipperary Distillery. This was double distilled at an undisclosed Irish distillery and has been aged in ex-bourbon barrels Hyde Whiskey Distillery, County Cork Hyde No. 3 The Aras Cask Irish Whiskey 13.5 Cinnamon and clove with succulent sweet caramel flavours. Complex and spicy with sweet American Bourbon notes Hyde No. 4 President s Cask Irish Whiskey 15 The aroma is rich with notes of tropical fruits from the Caribbean, passion fruit, vanilla and butter toffee Glendalough Distillery, County Wicklow Glendalough Single Grain Double Barrel 9 The finish has lingering notes of ginger spices with a faint glimmer of almond to end a complex Irish whiskey from start to finish Glendalough 7yo Single Malt 12 Rich and sweet, a premium single malt Irish whiskey with a touch of cinnamon and more than a hint of citrus fruits - orange zest, lemon infused with vanilla ice cream. A touch of fresh floral notes like meadow flowers Glendalough 13yo Single Malt 15 Deep butterscotch, honeycomb and rich lemon meringue balanced with citrus fruits and just a hint of a clove spice

It gives you hints of ripe fruits and vanilla on the palate with a long finish The Irishman Single Malt 12 Triple distilled whiskey which is aged in both bourbon and sherry casks for over 10 years before bottling. On the palate it has intense citrus and hints of sweet vanilla pod to finish, enhanced by increased sherry wood for an aftertaste of great complexity The Deveron 12yo 15 Is a light fruity and approachable spirit with some hints of nutty notes Speyside Glenlivet Founders Reserve 11 A delicate balanced whisky with floral and citrus flavours, a bright fresh minerality, and a lingering sweetness Balvanie 12yo 14 Traditional vanilla and honey notes backed by cinnamon spiciness, nutty sweetness and a delicate layer of sherry Glenfiddich 12yo Valley of the Deer 12.5 An elegantly rounded fresh whisky with subtle oak influences and notes of pear and peat Glenfiddich 14yo Rich Oak 15 Delicately finished for up to 12 weeks in brand new American and new Spanish oak casks after being patiently matured for 14 years. Scottish Whiskies can be grouped into 3 categories: Single Malts, Blended Malts & Vatted Malts Speyside (continued) Aultmore 12yo 12 This expression offers a nose of peaches and lemonade, freshly mowed grass, linseed and milky coffee. Very fruity on the palate, mildly herbal, with toffee and light spices. The finish is medium in length, with lingering spices, fudge and finally more milky coffee Cragganmore Single Malt 14.5 This Speyside malt has beautiful sweetish notes with a smokey maltiness on the finish Craigellachie 13yo 13 Firstly meaty and chewy, some nuts and cream, with apples and light fruits sweetness and overall a very fresh and gentle nose. Light and fresh palate with nuts, malt, sulphur and sweet apples. To finish mild burning sensation, sweet apples and bits of cloves at first which turns to gentle sweetness Macallan Double Cask 12yo 13 A blend of American oak and Spanish oak used to house Bourbon and Sherry impart a rich, yet delicate flavour Macallan Fine Oak 12yo 13 Smooth, sweet and balanced. The defining style is American oak - citrus and light oak blanaced by the expected Macallan character of rich fruit and wood spice Aberfeldy 21yo 30 Has a heathery flavour that is typical of its region, but offers a diverse and well-rounded range of elements for both the palate and the nose. While restrained, there are discernible smell of honey and ripe fruit, along with a malty overtone Isle of Islay Bowmore Legend 11 A peaty nose, balanced by a sweet, light palate, with a hint of the sea in the finish Lagavulin 16yo 15 Powerful peat and malted sweetness followed with complex dried peat and sherry notes Bruichladdich The Classic Laddie 14 Fruity nose of conference pear, honeydew melon and red apple, combined with sweet vanilla and the faintest hint of salinity Bruichladdich Islay Barley 15 Made from barley harvested at Rockside Farm, Islay, in 2006 and distilled in 2007 Islay Barley is unpeated for maximum barley flavour, non-chill filtered and colouring free Octomore 7.1 Scottish Barley 18.5 Somewhat creamy, but notes of tar and rubber sharpen it up a bit. As do the hints of lemon. Gets beautifully soft with a bit of time in the glass

Bursts of maritime peat, vanilla and milk chocolate Isle of Skye Talisker 10yo 14 Nose of maritime saltiness & peat smoke with an explosive pepper & smoke finish Western Highlands - Isle of Jura Jura 14 A palate of light smoke lying above firm, young grassy notes Oban 14yo 14 A well known slightly smoky, dry palate is enhanced with a rich body of Autumn fruits & spice. Scottish Blended Whiskies Teachers 9 High proportions of peated highland single malt give this fantastic blend a light campfire smoke character, with sweeter flavours of apples, pears and heavy honey maturity showing through Monkey Shoulder 9.5 A blend of 3 whiskies - Balvenie, Kininvie & Glenfiddich, who lend their sweet, floral notes of vanilla & wood spice Dewars 12yo 10 Crumbly fudge. Warm, buttery and mellow. Juicy sultanas and fresh citrus with a wisp of vanilla. Clean, full and lively. Melted caramel, folded in slowly with a trace of oak. Rounded and smooth Dewars 15yo 13.5 A blend of very rare vintage single malt and single grain Scotch Whiskies. The blend is then married in oak casks for a light, velvety finish Dewars 18yo 16 This is an easy drinking malt with grass and hay on the nose and biscuits on the palate Pig Nose 10 A seductive and smooth whisky. Big, bold and spicy in the mouth, with sherry and developing notes of wine. The finish is steadily drying, with prunes, oak, dry sherry and a whiff of peat smoke
