1 Our Spirits Philosophy Having started as a Wine Bar, we like things we can sip. We like drinks that are aged and continue to develop inside the bottle...ones with character that stand on their own. Ones you can compare side by side and appreciate what makes them the same and different all at once. And, of course, drinks that pair well with food because we believe well paired food only makes what you are drinking better. Our Spirits Philosophy follows this course and leads us to Whiskey. As with wine, whiskey changes with age and picks up the flavors of the barrel. And like wine, the complex flavors in whiskey enhance the food on your plate. We have created our selection of Bourbon, Scotch and Rye in the same way we created our wine list with a great deal of care, focusing on quality and diversity so that we can satisfy every palate in the house. Feel free to ask your bartender or server for tasting flights of any of these whiskeys. You will find that we approach whiskey exactly the same way we approach wine. Another is 86 proof and aged in 63% madera, 30% sauterne and 7% port barrels. The third rye is 92 proof and aged in new Vermont oak grown on Whistle Pig s property. Can you tell which is which? High West Mixed 16 American Prairie Double Rye Campfire One master distiller playing with all 3 grains (corn, rye and barley). One is a bourbon, the other rye and the third, a blend of bourbon, scotch and rye. It takes a distiller from Utah to do something crazy like that. Compass Box Scotch Blend 25 Hedonism Great King Street The Peat Monster Compass Box is an American distiller that went over to Scotland using the highest American standards for whiskey making (don t tell that to the Scots). These 3 expressions of scotch range from smooth to smoky/peaty. Old Rip Van Winkle Bourbon 90 Old Rip Van Winkle 10yr Rip Van Winkle 12yr Pappy Van Winkle 15yr After the 51% corn, most bourbons are rounded out with a mix of rye and barley. Not these bourbons. They use wheat instead of rye and are known as wheated bourbons. The ages make the difference in taste. Many think the 15 year is the best. Try for yourself and find out who s your Pappy.
