This philosophy opposes excessive refinement which is considered to be against the hearty spirit of the Mediterranean and Greek-Islands cuisine. We give great emphasis on genuine raw materials, grown locally simple dishes, seasoned with herbs and olive oil rather than exotic spices, with love and imagination.
