10 For now, there are two iterations of the Willett name: first, a collection of sourced whiskeys (Willett Family Estate Bottled, F.E.B) bottled by Kentucky Bourbon Distillers (KBD), and second, a distillery that reopened in January 2012, after being shuttered for decades... Today the distillery has a 1,200 gallon pot still and eight rick houses and in 2014 released its first in-house expression, a two-year old rye. 11 TENNESSEE Tennessee is deeply rooted in the whiskey-making process and is no slouch compared to its bigger, northern brother. Much of the Tennessee whiskey growth was stunted after prohibition, as the ban lasted a bit longer in Tennessee, but the Volunteer State is doing its best to catch up. Companies such as George Dickel and Jack Daniel s have been instrumental, producing millions of cases a year and claiming that the Lincoln County Process makes them uniquely a Tennessee Whiskey. Nashville companies, such as Nelson s Greenbrier Distillery (Belle Meade) have made their mark, producing high-quality products that stand up to the criticism of aficionados around the country.
