11 COCKTAILS CLASSICS Here at Castle St. Townhouse we are extremely proud of our Cocktail list. Every member of the team has had an input. This section is a nod to the classics. Our bar team are recognised for their cocktail skills throughout the city and they relish the opportunity to demonstrate how a classic cocktail should be made and enjoyed.

12 COCKTAILS CLASSICS Cosmopolitan One of those cocktails that has had various incarnations through the ages, the first reference to the cocktail appears in the 1934 book Pioneers of Mixing at Elite Bars. 8 Margarita Nobody knows who invented the Margarita. It s a cocktail mystery, but it s very likely that it involves a beautiful woman since the name Margarita translates to Daisy in Spanish. 7.5 Sazerac This drink became the first Branded cocktail in Named after the Sazerac de Forge et Fils brand of Cognac Brandy that served as its original main ingredient. 9.5 Aviation Created in New York, the first published recipe appeared in Ensslin s 1916 Recipes for mixed Drinks. Made with Crème de Violet, the colour of which is alluded to in the drinks very name. 8.5

13 COCKTAILS CLASSICS Bramble Created in London in the mid 80 s by Dick Bradsell, it was simple and easy to make, a delectable twist on the old favourite The Gin Fix. 8.5 Old Fashioned The first use of the name Old Fashioned cocktail was said to have been at a gentleman s club founded in 1881 Louisville Kentucky. The recipe is said to have been invented in honour of Colonel Jamel E Pepper. 8 Godfather The origin of the Godfathers name is uncertain, the brand Disaronno claim that it was a favourite of Marlon Brando known for playing the titular character in the American film The Godfather. 8 Daquiri Is also the name of a beach and an iron mine near Santiago de Cuba, and is a word of Taíno origin. The drink was supposedly invented by an American mining engineer, named Jennings Cox, who was in Cuba at the time of the Spanish American War in

14 COCKTAILS CLASSICS Mai Tai Claimed to have been created by 2 rivals one in 1933 and the other in 1944, its name comes from a friend who tasted it and cried out Maita I roa ae (Literally very good) hence the name. 9.5 Caipirinha Real origins are still unknown, in 1918 it was made with garlic and honey and used as a remedy for Spanish Flu and the common cold. Garlic and Honey where removed, sugar and ice was added to reduce acidity of the lime and ward off the heat. 8 Martini The exact origin of the martini is unclear. In 1863, an Italian vermouth maker started marketing their product under the brand name of Martini, after its director Alessandro Martini, and the brand name may be the source of the cocktail s name. 9 Sourz Sours belong to one of the old families of original cocktails and are described by Jerry Thomas in his 1862 book How to Mix Drinks 9

Once again every member of the bar team has had an input in creating what has to be said, is the best selection of our signature cocktails since opening. 23 COCKTAIL POLICY At Castle St Townhouse we are proud to stay true to the principles of professional bartending and as such we free pour all cocktails in accordance to the Weights and Measures act (1985). We define all drinks with three or more liquids as cocktails and this includes among others: Gin and tonic with lime juice, gin and ginger ale with lime juice, gin and lemonade with lemon juice, gin and cranberry juice with lime juice, vodka and tonic with lemon juice, vodka and cranberry juice with lime juice, vodka and coke with lemon juice, vodka and lemonade with lemon juice, vodka and red bull with lime juice, rum and coke with lime juice, rum and ginger beer with lime juice. Should you prefer to have a spirit of your choice served straight or just with a single/ double mixer we will of course serve these in the legally prescribed measures. Our bar team, headed by William Devereux is well versed in crafting beautifully balanced classic cocktails as well as having an ever evolving list of bespoke in house creations. A marble top bar where the barmen expertly mix classic cocktails, a Martini (stirred never shaken), a Aviation, a bloody Mary on a Sunday afternoon. A understated glamour of a by-gone era and simple old fashioned elegance.
