Our well-known Aromatica System and the brand new Aroma Balance System make coffee beans to bring out their very best. All our machines are equipped with a unique technical method. In case you want to improve your engineering epertise, we ll eplain how it works: With the new Aroma Balance System as an etension of our Aromatica System, our engineers really surprised us. This NIVONA-technique creates a maimum of aroma and precisely defined etraction, realised in the 10, 8 and 7 series with 3 aroma profiles and in our other series with one profile. Etraction in the contet of coffee means the amount of soluble elements out of the freshly ground coffee. Aromas, lipids, bitter compounds, acids and minerals are etracted by water and pressure. The challenge here is finding the perfect balance to create a coffee with impeccable taste. That way NIVONA engineers managed to create three aroma profiles: dynamic, constant and intense. Coffee enthusiasts and professionals now can delightfully find their favourite coffee. The 3 profiles are preset in the CafeRomatica 1030, the 8 series and the 788, 778 and 768, that a harmonic and balanced coffee can be made as well as an espresso with a defining body, fruity acidity, pleasant bitterness and a high degree of etraction. A fully automatic coffee machine was never that close to a portafilter machine. The freshly ground coffee then falls into the brewing chamber. Press: The ground coffee is then compressed in the brewing chamber. Brew: Then hot water (almost 100 C) is pumped in. Due to the waterpressure the brewing chamber etends. That is possible with the fleible, resilient lid of our brewing chamber. Water and coffee are swirled so the coffee releases more flavour. As a result you have great taste and a new passion for coffee. The Aroma Balance System imitates the skills of a barista. It varies in pressure, throughput speed and retention time of the hot water in the freshly ground coffee. And the settings I use depend on the time of day. In the morning I drink a small espresso with 30 ml and strength level 2/5, as a little treat before I start my day. After lunch I have my first espresso with a little more power: 40 ml, strength level 4/5. In the afternoon or evening I reduce the strength level but the aroma profile stays the same: intense. With this profile my espresso always has body, pleasant bitterness and a high amount of etraction. And I always use our Café Milano, because of its perfect mi of Robusta and Arabica beans. 7 WHERE THE GREAT COFFEE COMES FROM Like whine, chocolate and tea, coffee is a product of nature. There are basic characteristics that differ in flavour and amount of caffeine, depending on soil condition, climate and roasting procedure. The longer the coffee beans have time to mature (8 to 10 month), the more comple and ecellent the aroma can become. Up to 1000 different marks can be identified in coffee. Perfect is the so called coffee belt: appro between 23 north and 25 south. The main countries in which coffee is cultivated are in Africa, south and central America and Asia. 99 % of all harvested coffee is either Arabica or Robusta. Arabica beans grow at an altitude from 600 up to 2100 m. Robusta beans also thrive at altitutes below 800 m. Coffee grows on small trees or bushes that are likely to reach up to 12 to 15 meter. The fruits of the coffee trees or shrubs look like cherries and are named like that. The effect of coffee was actually discovered by accident. At home I have an 841 and with that model I also prefer the aroma profile constant. I have always been a fan of a plain coffee and since I drink about 3 a day, coffee strength level 3 is enough. Temperature is always maimum. I like the coffee/ caffè lungo better than the caffè americano because it has more caffeine. Sure both drinks actually are an espresso stretched with water, but when the lungo is prepared the water runs through the ground coffee instead being put into the finished coffee afterwards, like with the americano. Since caffeine is soluble in water, the lungo contains more than the americano, hence the different taste

16 INSTRUCTIONS FOR VERY GOOD MILK FROTH Milk froth is a fundamental part of today s coffee culture. All models by NIVONA create fluffy and delicious milk froth. The secret of great milk froth is based on the technique behind the Spumatore and the OneTouch Spumatore (single and duo). With this function you can create a creamy and perfect milk froth - single or double and also with just one touch. Best with fresh milk out of the stainless steel milk cooler. Why is milk getting frothy? Milk froth consists of many little air bubbles that stick to the protein molecules of the milk. Through the hot steam a grid of air, protein, fat and sugar occurs. The more fine the grid the more smooth the milk froth. By adding heat and air to the milk, the lactose is partly transformed into simple sugar. That is why the milk froth tastes sweetish. Use only cold (8 C) and fresh milk. Both of the NIVONA milk containers (0,5 l and 0,9 l) are ideal for that. After use, the NIVONA milk containers can easily be but in the fridge. ESPRESSO, ETC. My insider tip: use skimmed milk, since really good froth is not a question of the amount of fat in the milk but of protein. I like milk a lot so I don t drink coffee without it, and my day always starts with a latte macchiato. With aroma profile dynamic, especially light roasted coffee beans generate a pleasant fruity flavour. With the less sweet skimmed milk froth (whole milk tastes way more sweet) I get myself a perfect start to the day
