Whereas most coffee retailers buy their beans without ever having seen or tasted them, Saul insists upon receiving a sample of each batch.

When the roasting is complete, the coffee is ground and measured into glass cups.

We consider a cup of coffee to be as unique and flavorful as a glass of fine wine. Saul Zabar has been selecting, purchasing and roasting coffee for over 40 years. His signature is to carefully roast every batch of beans so you may enjoy the nuances of each blend. We invite you to watch Spilling the Beans, a short film about coffee roasting and tasting, at our website, Saul s involvement with coffee starts well before it gets to his roaster. Whereas most coffee retailers buy their beans without ever having seen or tasted them, Saul insists upon receiving a sample of each batch. The beans arrive green (unroasted), and upon arrival, Saul and his daughter Ann set about sampling them. First Saul roasts the beans in a small sample roaster he keeps in his office. When the roasting is complete, the coffee is ground and measured into glass cups. Fresh, hot water is poured into the glasses, and they are arranged on a revolving Cupping Table, also in Saul s office. Saul and Ann first check the coffee s aroma. Then comes the actual tasting, from one cup to the next, and then the next, and the next, until each sample has been tasted. They evaluate each cup of coffee on six points: aroma, acidity, flavor, body, finish and balance. Grind: Should be fine enough to allow water to pass through coffee grounds at an even pace without overflow. Measure: Start with two level tablespoons for every 6-oz cup; adjust to taste if necessary. Note: The Zabar's Coffee Scoop has been calibrated to perfectly measure two tablespoons of coffee. Water: It should taste sweet, without excessive minerals or salt. If necessary use spring water. Temperature: 190 Fahrenheit. Storing Coffee tastes best when it s fresh. We package our coffee in bags designed specifically for optimal storage of ground and whole coffee beans, so you need no other container. Squeeze out as much air as possible and keep the bag tightly closed. When freezing coffee, store it in the special coffee bag in which it arrived; failing that, store the beans in the smallest air-tight container possible to minimize the beans exposure to air. When making coffee from freezer-stored beans, make sure to remove the beans you need and quickly return the bag to the freezer the key is to minimize exposure to moisture condensation. Once a coffee passes Saul and Ann s inspection, Saul is ready to order a shipment of the green, unroasted beans. Each variety of coffee comes in lots of 125 to 250 bags, each weighing about 152 pounds. The beans are roasted as needed, guaranteeing the freshness of each cup. roasts between 8,000 and 10,000 pounds of coffee each week. Saul will check the coffee again, batch by batch, when it comes back from our roasting plant before it can be sold.
