1 Cleaning the La Marzocco Espresso Machine, Linea FB 70 The Bean Caffe, SAC Location WRD 204 Technical Writing May 22, 2013 Russell Wojcik ABSTRACT This manual documents the disassembling, cleaning, and reassembling of the La Marzoco Linea FB 70 espresso machine at the Bean Caffe. It includes cleaning the groupheads, portafilters, steamwands, and the body of the machine. Also included are images of the machine and its parts, the tools, and the materials needed to complete the cleaning process. The manual has been drafted by a seasoned Bean Caffe employee and has been reviewed by the owner and the manager. It has been tested by current employees and revised to fix errors and make additional instructions. The purpose of this manual is to present the tools, materials, steps, and information necessary to properly clean the espresso machine at the Bean Caffe s SAC location. The manual is to be used for training purposes and as a reference guide Cleaning the espresso machine is a task vital to the longevity and productivity of the machine and the company. Improperly cleaning the machine leads to malfunctions and the need for costly and time-consuming repairs. New employees must be trained from the start on how to properly lean the machine to ensure good habits in their time with the company. Current employees should be re-familiarized with the correct procedures to ensure they are cleaning the machine properly. Employees may have drifted from the standards set in their training or may have been relocated form another store and are therefore unfamiliar with the machine. There is also a necessity for a source of answers when questions arise on the proper procedure. This manual will meet all of these demands and can be printed and kept on location for employee and management use. As noted in the usability testing and progress reports, the manual has been tested at the café to ensure it includes all necessary steps and is accessible to the employees. 6 6 Introduction The following instructions will guide the barista through the process of cleaning the La Marzocco Linea FB 70 espresso machine. Baristas may have never cleaned an espresso machine before; they may have cleaned a machine of a different model or at a different location; or they may have cleaned this machine before but could benefit from detailed instructions for use and reference. After using these instructions a couple of times baristas should be comfortable cleaning the machine on their own. The instructions can always be used for reference if necessary. Warning: The espresso machine is very hot! Almost every metal surface on the machine is hot to the touch and all of the water and is near boiling temperatures. The steam that comes out of the machine is hotter than boiling temperature. All surfaces and water can cause burns. Do not touch hot surfaces long or at all- use rag towels and tools when possible. Additionally, the cleaning detergent used, Cafiza, is strong and corrosive. It can cause skin irritation and should never be ingested. If either happens, consult the Cafiza canister for safety instructions. These instructions are laid out for step-by-step use, however there are categories and headings to guide the experienced barista if he is just looking to clarify a specific step. The instructions are laid out for the cleaning of one grouphead and one steam wand. The machine has three groupheads and two steam wands, and the instructions should be repeated for each component. Cleaning tasks should be done at the end of the day, once the machine is no longer being used to make drinks. Disassembling the machine 1. Remove the shot glasses and metal grate drip tray from the machine s grouphead you wish to clean. -It is recommended to clean one of the outer groupheads and its corresponding steamwand first. 2. Remove the portafilter from the grouphead 3. Using the filter pull tool or the mini screwdriver, remove the metal filter cup from the portafilter -Place the filter in the double-cupped paper cup 4. Remove the grouphead filter screw, which holds the grouphead filter in place, from the grouphead using the mini screwdriver. Place in the paper cup with the portafilter filter. -DO NOT LOSE THIS SCREW, it is an integral and unique part of the machine. 5. Remove the filter from the grouphead. It may come off with the screw. Place it in the paper cup as well.

7 7 Soaking the Wand and Filter Parts 1. Remove the filter parts (screw, grouphead filter, portafilter filter) from the paper cup. 2. Add a dime-size amount of Cafiza to the paper cup. 3. Fill the paper cup with hot water using the machine s hot water spout about ¾ full. -The Cafiza will foam up quickly, so be aware not to spill hot water on yourself. 4. Wipe any excess milk off of the steamwand with a rag. 5. Slide the cup of cleaning water up around the steamwand. -Do this is if you were going to steam the water in the cup, but instead set the cup on the drip tray with the wand inside it. 6. Swish or stir the water to ensure the Cafiza is dissolved. 7. SLOWLY add the filter parts (screw, grouphead filter, portafilter filter) one by one to the cup. -The components will soak with the steamwand while the grouphead is being cleaned. Cleaning the Grouphead 1. Turn on the water to the grouphead and run the portafilter under the water to clean off coffee residue. 2. Dip the cleaning brush into the steamwand Cafiza cup and scrub the portafilter inside and out to clean it. -Repeat this step as necessary until the portafilter is clean 3. Repeat step 2 on the grouphead, using the brush to scrub the inside of the grouphead. 4. Insert the blank filter into the portafilter. It will snap into place where the espresso filter was removed. 5. Insert the blank portafilter into the grouphead as one would do when pulling espresso shots and turn on the grouphead. -Let the grouphead run for 10 seconds, then turn it off. -This is called backflushing the machine and cleans out loose coffee grounds. -If water leaks from around the portafilter, tighten the portafilter into the grouphead more. If it continues, you may need to replace the grouphead gasket. 6. Remove the grouphead and dump out the remaining water. -Notice the coffee grounds in the water -Repeat steps 5 and 6 2 more times to clear out loose grounds. 7. Add a dime-size amount of Cafiza to the blank portafilter and insert it into the grouphead. 8. Turn on the grouphead and let the machine run for 10 seconds, then turn it off. 9. Repeat step 8 five times. 10. Remove the portafilter and look at the contents. - If there are grounds still in the water, repeat step 8. -If there are no grounds in the water, move to step Dump the contents of the portafilter and backflush the grouphead (Step 5) one or two times, checking the contents each time. -Repeat this step until the water is clear of any Cafiza. 12. Remove the blank filter from the portafilter using the filter pull tool or the mini-screw-driver -You now have a clean grouphead and portafilter.

8 8 Reassembling the Machine 1. Remove the cup of Cafiza and components from the steam wand. 2. Wipe off the steamwand with the rag. -If necessary, use the scrub brush to scrub the steamwand until all milk residue is gone. 3. Empty the water from the cup. -Be careful NOT to lose the screw! 4. Remove the components from the cup and individually rinse them in clean water. -Be careful NOT to lose the screw! 5. Dry the components with the rag. 6. Place the filter back into the portafilter. It will snap into place just as the blank did. 7. Holding the grouphead filter with the mesh side facing down, place it back into the grouphead. Hold it there. 8. Insert the grouphead filter screw through the hole in the center of the filter and into the threads in the grouphead. This screw will hold the screen in place. 9. Tighten the screw using only your hand until it is snug. -Do not use the mini-screwdriver to tighten the screw as it will over-tighten which can damage the threads and the screen. 10. Replace the portafilter into the grouphead. -The machine is now cleaned and reassembled. Repeat the above sections for each grouphead and steamwand. Note: When cleaning a grouphead with no accompanying steamwand, follow the Soaking procedures without placing the steamwand in the cup. Final Steps 1. Remove everything from the machine (cups, etc.) and spray the machine with window cleaner. 2. Wipe down the machine until there is no coffee residue or waterspots anywhere on the machine. 3. Remove drip trays and wipe out drain. 4. Return all tools, materials, chemicals, and components to where they belong.

9 9 Conclusion The preceding manual has now guided the barista through the correct steps in cleaning the La Marzocco Linea FB 70 espresso machine. Following this guide, the barista will ensure that the machine is cleaned properly which will ensure a properly working machine that lasts for many years. This will yield great tasting drinks and avoid downtime resulting from a broken or faulty machine. Use this guide as a reference guide if you are unclear on or forget any steps.
