2 Welcome from the President Thank you for entering one of our ydney Royal Competitions and congratulations to those who were successful in winning a prestigious ydney Royal medal. I m delighted to see that the ydney Royal Competitions continue to attract a remarkably high standard of entries, not only from New outh Wales, but right across the country. Agricultural competitions are at the heart of the Royal Agricultural ociety of NW (RA) charter to encourage and reward excellence, and support a viable and prosperous future for our agricultural communities. To be the recipient of a ydney Royal award is a significant achievement representing months, years and sometimes decades of hard work and dedication. To help winning Exhibitors promote their success, the RA provide Champion, Trophy, old, ilver and ronze medal winners with ydney Royal artwork to use on product packaging, websites, signage and other marketing materials to promote their success ydney Royal ummer Fine Food Competition 2016 sees a 6% in Championships awarded 53 old, 159 ilver and 290 ronze medals bestowed 116 Fine Food how Officials We review our Competitions every year to ensure they remain relevant to industry standards and up-to-date with changing trends. I hope as an Exhibitor you enjoyed the changes and new improvements we made in your area of Competition. Please do give us your feedback, as we are always looking to strengthen our links with agricultural industries. 7 Heat rises for summer s finest foods Wednesday 24 February 2016 The search for the best in Australian fine food concluded last week after ten days of judging record amounts of coffee, bakery and aquaculture delicacies at the 2016 ydney Royal ummer Fine Food how at ydney howground. A team of 92 expert judges across three competitions put almost 900 products to the test, awarding a total of 53 old, 159 ilver and 290 ronze medals, in addition to 19 ydney Royal Championships. ally Evans, Chair ydney Royal Fine Food Committee, said the how was encouraged by record entries, in addition to the quality, diversity, choice and flavour of many products. This year s Competition is the best I ve ever been associated with. The calibre of entries, producers and judges was the highest I have seen, and as a result, the competition was an enormous success, said Ms Evans. The growth of ydney Royal is exciting to see, with record entries in both the Coffee and Aquaculture Competitions. We foster and support Australian agriculture and producers at ydney Royal, and it was excellent to see so many Australian companies enter fantastic products, and in turn, receive Championship ribbons as a result of their hard work, she said. ydney Royal competitions lead the way in an exhaustive range of food competitions, judged seasonally, aimed at promoting quality produce and supporting the Australian food industries. Coffee Keeping apace with consumer trends, the coffee competition saw coffee tasted as lattes instead of cappuccinos for the first time, with record entries and home grown success the highlights of the how Coffee received 302 entries for the competition. All coffees are roasted in Australia using beans grown locally and abroad; however it was NW s Art of Espresso Coffee Company from Young who took local Champion 100% Australian ingle Origin Estate or Regional lend Coffee honours with its roast from the kybury Plantation in Mareeba, Tropical North Queensland. The Coffee Roaster (QLD) Pty Ltd was successful in taking out Champion Espresso lend for their TCR 77 product, while Carlini Coffee Company of Ashburton in Victoria had an extremely successful show, taking out Champion Latte ingle Origin for their Kenya-grown product, in addition to est in how Coffee Competition, for the same bean. Three old, 32 ilver and 97 ronze medals were awarded, in addition to four Championships, at the 2016 ydney Royal Coffee Competition.

8 Professional akery A competition that is always extremely popular with professional bakers from all over NW, ydney Royal received 458 entries across 65 classes in Judges at the competition were pleased to see support for the Apprentice and tudent classes, which continue to foster and acknowledge the growth and development of upcoming bakery professionals. umnut Patisserie from the NW outhern Highlands was a standout performer once again at this year s how, winning seven of ten Championships, including est in how Professional akery Competition with their Lamb Cutlet Pie. rasserie read of anksmeadow in NW also took out a Championship, as it did in 2015, claiming Champion read Artisan for its atard. Champion weet iscuit Exhibit went to Love in lossom French Patisserie from Murwillumbah for its Chocolate Parisian Macaron, while Nu-Triton Pty Ltd of Terrigal took out Champion avoury iscuit for its Cheezy iscuit. The ydney Royal Professional akery Competition saw 29 old, 74 ilver and 161 ronze medals awarded, in addition to seven Championships. Aquaculture For a country that thrives on fresh seafood in the summer months, it is no surprise to see entries rise in this strong, long-standing competition. The ydney Royal Aquaculture Competition received a record 137 entries this year, which included an array of tasty products across a range of classes including prawns, oysters, barramundi and salmon, just to name a few. old and Championship status was shared amongst a range of well-known and local producers, which the judges were pleased to see. A company who has long been successful within ydney Royal competitions, Tathra Oysters, again took out a number of Championships for its premium Nelson Lake istro rade, Medium oyster. Judges were very encouraged by the care taken by growers to present premium product. Outstanding result in medal count with flavoursome fish with soft pliable texture. One exhibit was disqualified for not meeting specifications, and one exhibit lost valuable points for securing tags to fish. One issue for judges was the variation in flavour profile of the fish in some exhibits when compared with each other. A higher result would have been achieved if all the fish entered had had consistent flavour profiles. The barramundi is building upon its reputation as a supplier of premium fish to the market place.
