BRAZIL (NATURAL YELLOW CATUAI) + SUMATRA (WETHULLED S795/TYPICA/CATURRA) 250g $14 1kg $42 Brazilian Coffee (Alto Paranaiba Fazenda Aurea Moreninha Formosa) COFFEEBIRD.COM.AU The region of Alto Paranaíba is the highest part of Cerrado Mineiro. After being involved in the Brazilian coffee market for more than 25 years, João Antônio Lian and Luis Antônio Moraes Ribeiro decided to invest in coffee production about 10 years ago. The farm itself produces approximately 50,000 bags per year. At 1250 meters above sea level Alto Paranaíba has rich soil, very consistent rainfall and superb weather conditions for producing great coffee. The farm has more than 50,000 square meters of patios for drying and processing natural coffees. The suspended patios ensure that the coffee dries slower and more evenly. Sumatran Coffee (Aceh Province and Sipangan Bolon) This coffee is sourced from the most amazing locations, at the very end of Lake Tawar in Aceh province and also near the town of Parapat near Lake Toba. This particular lot has been Triple Picked, which means that the coffee has made its way through a warehouse containing many handsorting tables, each separating defects and low quality green beans from the beautiful/uniform coffee we always look for. This particular coffee has been through the sorting process 3 times (hence triple picked), making it as clean a coffee as you will find from Sumatra. All our Sumatran coffees are directly sourced through a small family export company and our good friend Dody Sayhrum from CV Yudi Putra. YP have an extensive network of small micromills in the Sumatra lake Toba region of Sumatra and Aceh. Dody and his family really are leading the charge for specialty coffee production in Sumatra and we re proud to be working with them.

7 BLACK BLEND Floral aroma, grape acidity, berry sweetness, creamy, rich and smooth. ETHIOPIAN (WASHED HEIRLOOM ETHIOPIA) + ETHIOPIAN (UNWASHED HEIRLOOM ETHIOPIA) 250g $16 1kg $48 Ethiopia Tade GG (Washed Heirloom Ethiopia) Tade GG is a beautiful estate in Shakiso, Oromia. The owner, Tesfaye Bekele is a trained Agronomist and processes coffee with care and attention. He grows his own coffee trees as well as buying cherries from local farmers. When processing, lots are separated by the altitude at which the coffee trees have grown. Raised drying beds are covered with a black mesh that allows coffee parchment to dry evenly and slowly. The processed coffee parchment is spread very thinly across this mesh and is mixed often to keep the drying process even. Drying coffee is covered with mesh during the peak heat of the day, which prevents the parchment from cracking due to rapid heating. Everything about this estate screams quality. ARTISAN COFFEE ROASTERS Ethiopia Nefas Farm (Unwashed Heirloom Ethiopia) Nefas farm has consistently produced outstanding unwashed lots. Coffee cherries are picked ripe and left out to dry on raised drying beds. The coffee is spread out very sparingly to allow sufficient airflow between and around the cherries. As the entire coffee fruit is left in tact, the coffee can easily taste fermenty if drying isn t conducted in the correct way. This unwashed coffee is as clean as a washed lot, but has a complexity of fruit flavours rarely found in washed coffee. The high altitude of the drying station makes for a more even drying due to the cool conditions, which allows these fruit flavours to shine.

8 DON ANTONIO GUATEMALA Fragrance: Floral, Sweet, Citrus Aroma: Sweet, Citrus, Floral Flavour: Balanced, Smooth, Sweet VARIETAL: CATURRA 250g $22 1kg $66 COFFEEBIRD.COM.AU This Estate is situated in the San Pedro Necta district of the Huehuetenango region of Guatemala, very close to the border of Mexico. This coffee producing region is one of the highest and driest in Guatemala. Hot winds flow from the Tehuantepec plain in Mexico, through the mountains of Huehue, which protects the region from frost. Huehue has an annual rainfall of 1800mm and reaches altitudes of 3600m. This allows coffee to be grown up to 2000m.a.s.l. Coffee does not grow above 2000m.a.s.l. due to low temperatures.

9 BULGA ETHIOPIA Fragrance: Caramel, Sweet, Citrus Aroma: Tea, Lime, Nuts Flavour: Sweet, Nuts, Citrus VARIETAL: HEIRLOOM ETHIOPIA 250g $22 1kg $66 ARTISAN COFFEE ROASTERS A great Ethiopian coffee from the Nensebo woreda (microregion) of West Arsi Zone in Sidamo. 330 members make up the Bulga Cooperative. Each member has approximately 1 hectare of farmed land. The average altitude of these farms is 1880m.a.s.l. The Bulga Cooperative has received training and funding from Oromia Union s Ethiopian Coffee Initiative, which is run in conjunction with TechnoServe. Contrary to most coffee production in Ethiopia, the Bulga Coop uses a mechanical demucilager during processing. This removes the need for fermentation, which is usually responsible for degrading the mucilage. The combination of high altitude and the use of a mechanical demucilager during pulping creates a bright and clean flavour profile.

10 PLAN DEL GUAYABO GUATEMALA Fragrance: Apple, Nuts, Caramel Aroma: Nuts, Cocoa, Marmalade Flavour: Rich, Nuts, Caramel VARIETAL: SL28 250g $21 1kg $63 COFFEEBIRD.COM.AU Plan del Guayabo is a beautiful estate in Suchitan, New Oriente, Guatemala. New Oriente is not a famous region for high quality coffee growing. Often the coffees from this area are bought by collectors or drug cartel coyotes, blended with other coffees from the area and sold as generic Guatemala SHB. Benjamin Donado, the owner of this estate, bought a mechanical drier last year (2015). He had hoped to buy coffee cherries from local smallholder farmers, then process and dry it. Unfortunately for him, cartels are buying coffee at ridiculously high prices in order to launder their money. The cartels sell the coffee for a loss, but then have clean money. This makes it hard for legitimate coffee buyers to compete.

11 HECTOR ZUNIGA COLOMBIA Fragrance: Sweet, Grape, Candy Aroma: Sweet, Caramel, Chocolate Flavour: Sweet, Nuts, Dried Fruit VARIETAL: CATURRA 250g $20 1kg $60 ARTISAN COFFEE ROASTERS A delicious coffee from the Bruselas region of Huila, Colombia. With an altitude of m.a.s.l., loamy soil and an annual rainfall of mm, Bruselas is almost ideal for growing coffee. This is a 100% Caturra lot, which has been processed using the Washed method. This means the cherries are picked when ripe, pulped immediately and soaked under water for 24 hours. This soaking period allows microbes to degrade the sticky mucilage layer of the coffee slowly and gently. Once the mucilage is broken down, the parchment coffee is then laid on raised beds which are kept in ideal conditions for drying. This method ensures sufficient air flow, and even drying.

12 YARA AA KENYA Fragrance: Bright, Cranberry, Sweet Aroma: Sweet, Lime, Caramel Flavour: Juicy, Nuts, Lime VARIETAL: SL28 SL34 100g $12 250g $22 COFFEEBIRD.COM.AU A great example of a bright and juicy Kenyan coffee. Yara is an Estate in the Kiambu district of Kenya, 23km North of Nairobi. This is a well known area for tea and coffee growing. Coffee cherries are picked and processed on the same day to ensure freshness and cleanliness of flavour. After the cherries are pulped, they are subjected to a period of aerobic fermentation (open to air, not soaked under water), which helps to break down the mucilage more aggressively than anaerobic fermentation (under water, no air). Fermentation can take 1248 hours, depending on weather conditions. Once the coffee is fermented, it is rinsed and dried on raised drying beds, which allows more air flow and therefore a more consistent product.

13 BOANA PNG Fragrance: Floral, Sweet, Creamy Aroma: Nuts, Cherry, Citrus Flavour: Bright, CItrus, Nuts VARIETY: TYPICA BOURBON 100g $10 250g $18 ARTISAN COFFEE ROASTERS This is a regional coffee bought from local smallholder farmers by the operators of Baroida Estate (Colbran family). The smallholders have their plots in the Lamari Valley, which is part of the Eastern Highlands of PNG. Every season, the Colbrans visit local farmers and inspect their coffee plants before they are picked. The best looking cherries are contracted on the spot, which ensures that the very best quality fruit becomes part of the Boana Plantation lot. Once the cherries are ripe and ready, the local farmers bring their freshly picked fruit to Baroida Estate. The cherries are again inspected for quality by the team at Baroida and the smallholder farmers are paid on the spot for their high quality fruit. Baroida then does all the processing on site (pulping, fermentation, washing and drying) in order to control the process as much as possible.
