BRAZIL (NATURAL YELLOW CATUAI) + SUMATRA (WETHULLED S795/TYPICA/CATURRA) 250g $14 1kg $42 Brazilian Coffee (Alto Paranaiba Fazenda Aurea Moreninha Formosa) COFFEEBIRD.COM.AU The region of Alto Paranaíba is the highest part of Cerrado Mineiro. After being involved in the Brazilian coffee market for more than 25 years, João Antônio Lian and Luis Antônio Moraes Ribeiro decided to invest in coffee production about 10 years ago. The farm itself produces approximately 50,000 bags per year. At 1250 meters above sea level Alto Paranaíba has rich soil, very consistent rainfall and superb weather conditions for producing great coffee. The farm has more than 50,000 square meters of patios for drying and processing natural coffees. The suspended patios ensure that the coffee dries slower and more evenly. Sumatran Coffee (Aceh Province and Sipangan Bolon) This coffee is sourced from the most amazing locations, at the very end of Lake Tawar in Aceh province and also near the town of Parapat near Lake Toba. This particular lot has been Triple Picked, which means that the coffee has made its way through a warehouse containing many handsorting tables, each separating defects and low quality green beans from the beautiful/uniform coffee we always look for. This particular coffee has been through the sorting process 3 times (hence triple picked), making it as clean a coffee as you will find from Sumatra. All our Sumatran coffees are directly sourced through a small family export company and our good friend Dody Sayhrum from CV Yudi Putra. YP have an extensive network of small micromills in the Sumatra lake Toba region of Sumatra and Aceh. Dody and his family really are leading the charge for specialty coffee production in Sumatra and we re proud to be working with them.

BRAZIL (NATURAL MONDO NOVO YELLOW BOURBON RED CATUAI) + SUMATRA (WETHULLED S795 TYPICA CATURRA) + ETHIOPIAN (WASHED UNWASHED HEIRLOOM ETHIOPIA) 250g $16 1kg $48 Brazilian Coffee (São Paulo Minas Gerais Monte Santo de Minas Pedra Grande) Fazenda Pedra Grande sits on the border of two major states in Brazil; São Paulo and Minas Gerais. This microregion has beautifully rich volcanic soil, in which coffee trees thrive. Impeccable farm practice and growing conditions are what make this a consistently high quality coffee. The farm sits at 900 meters above sea level, where the hills provide a unique microclimate. This Estate has been growing coffee for 100 years, The same family has owned and run the estate for the entire time, spanning three generations. Pedra Grande has a large warehouse and mill onsite, which are used to process, sort and grade their coffee. Ethiopian Coffee (Sidama Oromia Tade GG Nefas Farm) These stunning coffees come from two of our favourite farms in Ethiopia. A washed lot from Tade GG, in the Oromia region and an unwashed lot from Nefas Farm, in the Sidama region. The processing at these privately owned farms is second to none. Extremely thin layers of coffee are spread across raised drying beds, allowing the beans to dry evenly. These high altitude, cool climate farms grow some exceptionally small and dense coffee beans, which make for a super complex and sweet flavour profile.

7 SAN MIGUEL COSTA RICA Fragrance: Sweet, Citrus, Chocolate Aroma: Nuts, Honey, Lavender Flavour: Honey, Citrus, Apple VARIETAL: TYPICA PROCESSING: HONEY 250g $22 1kg $66 COFFEEBIRD.COM.AU San Miguel Estate is located in Desamparados, in the Central Valley of Costa Rica. The Castro family has owned and operated this farm since This is a beautifully honeyprocessed lot, displaying classic Costa Rican flavours of honey, citrus, apple and chocolate. The original trees that were planted on this estate are still alive today and producing great coffee. Every few years, the trees get cut at knee height, which allows a quicker regrowth than planting new seedlings. This means that this coffee comes from trees that are over 100 years old.

8 SANTA FELISA GUATEMALA Fragrance: Sweet, Nuts, Cocoa Aroma: Chocolate, Apple, Citrus Flavour: Rich, Sweet, Nuts VARIETAL: TYPICA PROCESSING: WINEY 250g $22 1kg $66 ARTISAN COFFEE ROASTERS Santa Felisa is an Estate in Acatenango Valley, Guatemala. The Meneses family puts love and care into the many coffee varietals they grow on their beautiful farm. Fastidious processing allows the different varietals and styles to shine through in the cup. This particular lot is a Typica varietal of Arabica, which has been processed using the winey method, where the coffee is picked and immediately placed on raised drying beds. This method creates a rich and fruity flavour profile.

9 KIAWAMURURU AA KENYA Fragrance: Bright, Citrus, Stone fruit Aroma: Sweet, Grapefruit, Caramel Flavour: Sweet, Chocolate, Blood Orange VARIETAL: SL28 SL34 PROCESSING: WASHED (DRY FERMENTED) 250g $20 1kg $60 COFFEEBIRD.COM.AU Kiawamururu Cooperative Society in the Nyeri Province of Kenya is responsible for this delicious coffee. This lot is dry fermented for extra body and texture and then fully washed with water from the Kabuku Springs. SL28 and SL34 are varietals of coffea arabica, developed at Scottish Laboratories in Tanzania in the 1930s. They are mutations of the French Mission AKA Bourbon varietal. SL28 also has some Mokka lineage. Both SL28 and SL34 are known for intensely sweet and citrusy flavour profiles.

10 HARTMANN PANAMA Fragrance: Floral, Sweet, Nougat Aroma: Sweet, Nuts, Cocoa Flavour: Caramel, Citrus, Chocolate VARIETAL: CATURRA TYPICA PROCESSING: WASHED 250g $18 1kg $54 ARTISAN COFFEE ROASTERS Hartmann Estate is a family run coffee farm in the Volcan region of Chiriqui province, Panama. This region is very close to the border of Costa Rica. The Hartmanns grow many varieties of coffee and process with many different styles. This lot is a traditional washed lot, which includes a wet fermentation period of 2472 hours, depending on weather conditions. All coffee at Hartmann Estate is dried on raised beds which is unique for the region. Hartmann Estate has made a name for itself around the world due to their ingenuity and high quality focus. They are a 100% shade grown estate and also have a bird friendly certification, which includes restrictions on tree removal and ensures that nature is looked after.

11 KANYEGE RWANDA Fragrance: Sweet, Citrus, Brown Sugar Aroma: Candied Lemon, Chocolate Flavour: Sweet, Mandarin, Mint VARIETAL: RED BOURBON PROCESSING: WASHED (WET FERMENTED) 100g $9 250g $17 COFFEEBIRD.COM.AU Kanyege Washing Station was setup in early 2015 with the help of our suppliers at origin. The station sits in Rwanda s Western Province, a region that has quite recently become known for producing high quality coffee. The station is supplied by a network of around 700 smallholder farmers who sell their ripe cherry directly to the station for processing and drying. This is a washed lot, which includes a wet fermentation period of 2448 hours depending on weather conditions. The parchment coffee is then dried on rasied beds for 1522 days.

12 LA ISABELLA COSTA RICA Fragrance: Sweet, Apple, Chocolate Aroma: Herbal, Caramel, Nuts Flavour: Citrus, Nuts, Creamy VARIETY: CATUAI CATURRA PROCESSING: WASHED (DRY FERMENTATION) 100g $10 250g $21 ARTISAN COFFEE ROASTERS La Isabella is one of six plantations owned and run by the Patalillo Dry Mill. There are not many coffee plantations left in the Tres Rios region as urbanisation spreads. The La Isabella plantation is a 10 minute drive from central Tres Rios. Even though the plantation is so close to the city, it maintains a unique, cool climate due to a consistent fog. Grevillea trees are used for shade because of their quick growth cycle. The Grevilleas are planted every 6m2. At the end of every harvest, the trees are cut allowing sun through to the coffee plants. As the plants grow fruit, the Grevilleas grow and provide shade. This system is only used in lower altitude plantations, where the climate is warmer.
