Along with the well-regarded and internationally experienced Director of Creation and Patisserie Innovation, Frédéric Bau, the team at L École Valrhona works hard to research and develop new recipes, innovative pastry concepts, techniques and materials. Their close relationship with specialist technicians means they can develop new techniques and take a scientific approach to raw ingredients and their uses.
