The active bakery ingredients, guarantee bakers to produce sourdough bread with an aromatic, fleshy crumb and crispy crust in about three hours, without the need to add bread improvers. Add the remaining water gradually at the end of the mixing time. Dough temperature 25 C. First proofing 90 minutes. Scaling weight 450 gram. Mould gently. Second proofing 30 minutes. Mould into desired shape and put them between a dough towel (French method). Final proofing 50 minutes. Put the dough pieces on racking units or baking trays. Cut before baking. Bake with steam. Baking temperature 250 C. Baking time 30 minutes. Direct process
