Cowboy Bread 3 cups of raisins OR 1 cup coconut and 2 cups walnuts OR 1 cup of each 2 eggs 1 ½ cups boiling water 2 tsp vanilla 4 tsp baking soda 1 tsp salt 1 ½ cups brown sugar 4 cups flour 1 ½ cups white sugar 2 tsp cinnamon Pour 1 ½ cups of boiling water over raisins. Let cool. Add soda. Mix remaining ingredients and add to first mixture. Mix well. Pour into greased coffee cans (3 1 pound cans or equivalent). Fill half full. Bake at 350 for approx. 1 hour.
