1 Foods Department Things You Eat & Drink 2018 Open Class Exhibitors Guide Kitsap County Parks Department 2018 Kitsap County Fair & Stampede August 22-25, AM - 9 PM August 26, AM - 7 PM Foods Department Entry Date: Sunday August 19th 10:00 a.m. to 6:00 p.m., in the Presidents Hall, Kitsap County Fairgrounds. EXHIBITOR FEE IS $10. YOU MAY ENTER MULTIPLE ITEMS FOR THE SINGLE $10 FEE. YOU RECEIVE A 5-DAY FAIR PASS WITH YOUR EXHIBIT.
2 FOODS DEPARTMENT Kitsap County Parks Department Lisa Evinrude, Superintendent (360) Candias Lewis, Assistant Superintendent SPECIAL DEPARTMENT RULES 1. Entry dates/times August 19, 2018, 10:00 am 6:00 pm, Presidents Hall. 2. All exhibitors must comply with the general rules of the Kitsap County Fair. 3. Display trays for baked goods will be available at entry table. 4. Whole loaves & whole cakes are needed for judging purposes. 5. Rolls, cookies and candy are exhibited four (4) to a display tray. 6. Because a refrigerated display case is not available, the following items will not be accepted: a. Entries using custard b. Entries using seven minute frosting c. Entries using whipped cream or whipped cream substitutes d. Cheesecake (Contest held the Sunday of Fair. See Section IV.) e. Pie f. Canning entries in mayonnaise or other non-standard jars g. Paraffin-sealed jams & jellies h. Cream cheese Let s Stirrup Some Fun, with a bit of friendly competition with a Bread Baking Contest in the Foods Department! Farmland Pets & Feed in Silverdale is sponsoring CASH PRIZES for your best bread recipe! All are welcome, all ages -- and Veterans are especially invited to join in! If you have any questions, contact Lisa Evinrude, Foods Superintendent, laevinrude@gmail.com. Don t miss out--you ll just kick yourself if you do! (NOTE) Pie contest is held Saturday of Fair, see separate contest section of Food Department rules. 7. Cakes must be on sturdy piece of cardboard covered with foil. Do not bring cakes in tins or glass plates. 8. All canning must be in standard canning jars. Dehydrated entries must be placed in standard canning jars with rings. Entries in Mayonnaise or other non-standard jars will not be judged. 9. Wipe jars clean and remove rings before bringing canned items for entry. 10. Product must be labeled with date processed on lid. Labels on jars make judging difficult. Product must have been processed since last year s fair. 11. Paraffin seals are not acceptable on jams and jellies. 12. Processing methods should follow WSU and USDA recommendations. Current bulletins are available at K.C. WSU Extension Office (360) All perishable foods will be disposed of after closing on the last day of Fair. NO PERISHABLE FOODS WILL BE RETURNED. 14. No professional entries of any kind will be accepted. DIVISIONS OF ENTRY Youth 10 & under Junior years Adult Ages 18 59
3 Golden Age Just the Two of Us Amateur 60 years & over open to children 9 & under w/ adult supervision Decorated cakes only (see special rules for decorated cakes) Kitsap County Parks Department The two best exhibits submitted by adults, canned in Ball Jars and sealed with Ball Two-Piece Vacuum Caps or canned in Kerr Jars and sealed with Kerr Two-Piece Vacuum Caps shall be selected from each class indicated below to receive the following: In Fruits, Vegetables, and Soft Spreads, the first place winner shall receive three (3) home canning product coupons. The second place winner in each of the classes shall receive two (2) home canning product coupons. The best entry meeting the above requirements shall be designated the Best of Category: Soft Spreads. The winner receives three (3) product coupons. Second place and youth receive two (2) product coupons. BEST OF CATEGORY JUDGING GUIDELINES Best of Category: Soft Spreads Award 1. Product was prepared and submitted by an adult/youth/child. 2. Product is any variety soft spread. 3. Product is canned in Ball Home Canning Jar and sealed with Ball Two-Piece Vacuum Cap or canned in Kerr Home Canning Jar and sealed with Kerr Two-Piece Vacuum Cap. 4. Product meets all requirements from the general judging guidelines page. You receive a 5-day fair pass with your entry. - Wildflower - Blackberry Honey Production Education Honey Bee Art Lot 5 EXTRACTED HONEY Must be submitted in 1-Pint, wide-mouth, unembellished, Kerr canning jar with blank lid Entries will be judged on: Cleanliness of presentation (clean jar without spillage, clean lid) Clarity of honey (free from obvious particles and bubbles or foam) Moisture content must be < 18.7% No crystallization Aroma (clean, fresh, unspoiled honey smell) 6
7 Kitsap County Parks Department COMB HONEY Must be submitted in a clear container Ross Rounds or Hogg Cassettes preferred edges should be viewable Entries will be judged on: Cleanliness of container Evenly cut edges Wax must be free from debris and travel stains Less than 2% uncapped comb No liquid honey No crystallization CHUNK HONEY Must be submitted in 1-Pint, wide-mouth, unembellished, Kerr canning jar Entries will be judged on: Cleanliness of presentation (clean jar without spillage, clean lid) Clarity of honey (free from obvious particulates and bubbles or foam) Moisture content of honey must be < 18.7% No crystallization Aroma (clean, fresh, unspoiled honey smell) Evenly cut edges Wax must be free from debris and travel stains Less than 2% uncapped comb *ALL entries must be the product of entrant s apiary, and must have been produced within the last 12 months prior to the show. NO identifying labels. HONEY PRODUCTION EDUCATION Any type of display that reflects all or portions of the process by which honey is produced. Can include, but is not limited to: 1. Hand-made charts showing how honey is produced 1. Photos, drawings and/or paintings of high-production nectar sources in and around Kitsap County 2. Variety of hive frames indicating what "style" of honey might be produced on each type of frame 3. Charts displaying recommended steps for beekeepers to increase surplus honey production 4. Seasonal planting charts for providing supplemental nectar sources for honey bees HONEY BEE ART Any type of artwork which depicts honey bees, apiaries and/or beekeeping. May include but is not limited to: 1. Drawings 2. Photographs 3. Metalwork 4. Paintings 5. Woodwork 6. Sculpture Products, inventions or unique gadgetry for beekeeping. No foods. MISCELLANEOUS 7

Contest will be held Saturday of Fair. 2. No entry fee for the contest. (Fair admission must be paid) 3. Entries limited to Fruit or Berry pies. 4. Recipe must not include whipped cream, non-dairy whipped cream or cream cheese. 5. Fair and its official are not responsible for pie pans, disposable pans are recommended. 6. Pies available for pick up after awards are presented. 7. Two (2) crust or double crust pies only. 8. Ribbons will be awarded. 9. Premium monies will not be awarded.
