1 Can't see images? Click here... Susan's AIP Blueberry Bars Having autoimmune conditions and Lyme disease, what I eat is crucial to how my body feels and performs. I'm always looking for new recipes loaded with healthy nutrient-dense ingredients, no-to-low sugars, good fats. I developed these when I wanted to do something new with my organic blueberries and my favorite flour, tigernut. I have tested these on friends, including a 10 year old, who gave a raving 2 thumbs up! I took them to a get-together, and they were completely gone. So, I present to you, my recipe! I'd love to hear your feedback if you make these!! You can get tigernut flour on Amazon. I prefer the brand "Anthony's." Tigernut flour is made from tigernuts, which are NOT nuts, but little tuberous veggies, and they pack a punch with nutrients. See my blog on tigernuts here for more

Paleo/AIP Blueberry Tigernut Bars By Healthy Awakening Holistic Health Coaching, Susan Robbins Dry Ingredients: 1 ¼ cup Tigernut flour, sifted ¼ teaspoon Pink Himalayan or Celtic sea salt ¼ teaspoon baking soda ¾ teaspoon ground cinnamon Wet Ingredients: ¼ cup coconut oil (melted) 1/4 cup of raw honey, coconut nectar, coconut sugar, or maple syrup (your choice)* Sweetener is optional See * below 1 teaspoon vanilla ¼ cup full-fat coconut milk (I used Native Forest Simple) If using granulated sweetener (coconut sugar) or no sweetener, add 2T extra. ½ teaspoon raw apple cider vinegar 1 gelatin egg 1 cup fresh organic blueberries Gelatin egg: Mix 1 T of grass-fed gelatin with 1 T lukewarm water until the gelatin is wet. Will be like a thick paste. Pour in 2 T boiling or very hot water and stir or whisk vigorously. It will be liquid, possibly a bit on the thick side or frothy. *There is a natural sweetness to this batter, as tigernuts are naturally semi-sweet in flavor. If you prefer less-sweet bars, go for the lower measurement of sweetener. You can always taste-test the batter for preference! I used none in my taste-tested batches for others. You could start with 1 T and work up.

3 Instructions: Sift together the dry ingredients, including coconut sugar, if that s the sweetener you re using. Put into a medium-sized bowl. Set aside. In a small bowl, combine the oil, liquid sweetener (if using), vanilla, and coconut milk. Whisk until well combined. Pour the wet ingredients into the dry and stir until mixed well. Add apple cider vinegar. Mix well. Add the gelatin egg or egg, Mix well. Fold in HALF of the blueberries, reserving the other half. Grease a baking dish (I used a Pyrex 9x7 dish) with some coconut oil. Add the dough and press it out until even. It should not be too thick or thin and spread nicely. If you have reserved half of the berries, pour them on top, spreading them out evenly, press lightly down into the batter. I use the bottom of the measuring cup to lightly press in the blueberries. Baking: Bake at 375 for 50 minutes or until the center is cooked. Inserted knife will come out dry. They may seem a bit soft in the middle, but they will firm up. Let the pan cool down when finished, then put into the refrigerator. Cool completely in the refrigerator, and they will be firm and cut very nicely. If you try to eat them warm they will fall apart! -
