8 COMPLAINT Complaint: Complaint: On (Monday, 11/20/2017 & 3:28pm), Child Care Regulation Office received a complaint stating/alleging that: Jeff Weinsier, Ch. 10, , would like to know if we inspect a kitchen in Beth Moshe Temple, 2225 NE 121 St., North Miami, FL. He says the rabbi is renting the kitchen out to Exquisite Catering by Robert which prepares meals for Ben Gamla Charter Schools. DBPR only inspects the main facility not the kitchen in the Beth Moshe Temple. There are photos of this kitchen with poor conditions with dead rodents expired food, etc. Do we inspect this kitchen? Summary: Interview with Owner/Director: Does the child care program prepare and serve the food? Per director, the food is ordered or supplied by the child care program and exquisite catering cooks/prepares the food for the childcare program out of Temple Beth Moshe's kosher kitchen. The caterer is not a part of the synagogue but they are used as a commissary (prepares food and serves the food to the childcare program). How long has exquisite catering been cooking at this facility? Per director, the caterer exquisite has been cooking in the synagogue's kosher kitchen for about 2 years working under the license that they have at their main location. Describe the daily process of food delivery to the children? Per director, the food is cooked and prepared in the synagogue's kitchen by exquisite catering and brought to the children's classroom's in a hot box (food warmer), where temperatures are verified and recorded then each meal is served to the children. An employee of the exquisite catering company was fired and came into the synagogue the next day and took a picture of a rat in a rat trap in the middle of the kitchen floor. Per director, the kitchen does not have a rat problem there aren't any rat traps in the kitchen or any rat droppings. Per rabbi, the kitchen is cleaned every morning at 5:00 am before the caterers come in to prepare food. The kitchen floor is pressured cleaned and under the refrigerators are cleaned as well. FSC Observations: The kitchen was cleaned free of vermin or rodent droppings, food was stored at an elevated position off of the floor. Their were no rodents or rodent droppings observed during this inspection. The facility uses 4 food warmers to transport the food from the synagogue to the classrooms. The temperature verification tool is operable and used in the childcare facility before serving children meals. The food observed was not out dated, food in question was thought to be frozen bread in the freezer not used for childcare. All fire extinguishers were dated and tagged timely. The cooks were cooking for the public for thanksgiving not childcare, and the proper head coverings and gloves were observed. The temperature of cold food was maintained in the refrigerators and freezers. Food menu's are dated and posted and food temperature is kept in a log in the front office of the childcare facility. The caterer has a valid license to caterer food. Complaint Findings: invalid for: 14 Facility environment ( rodent or vermin droppings), 34 Food preparation area valid for: 50 Meals and snacks ( unapproved food source, food preparation from unapproved source) Received by: Andrea Lang Inspected by: Willie Geter Page 8 of 8
