That protein is gluten and, more specifically, its components gliadins and glutenins. While any ordinary peptide from a foodstuff other than gluten can be dismantled by intestinal enzymes within sixty minutes, those derived from gluten can resist digestion for as long as twenty hours! (I have also heard up to 21 days) Human have 25,000 genes; wheat has five times as many. With more than 150,000 genes, wheat presents an extremely complicated genetic maze for scientists to untangle. 16 WHAT IS GLUTEN SENSITIVITY? As the word sensitive suggests, non-celiac gluten sensitivity or gluten sensitivity, as I refer to it, is a reaction to ingesting gluten-containing grains. Although symptoms (particularly gastrointestinal) are often similar to those of celiac disease, the overall clinical picture is less severe. 17 Gluten sensitivity or non-celiac gluten sensitivity a reaction to consuming foods containing gluten. Symptoms can include diarrhea and bloating, fatigue, foggy mind, depression, joint pain, and anemia.
