Cook only in the stoneware pot provided. Notes on the Plug This appliance has a polarized plug (one blade is wider than the other). To reduce the risk of electric shock, this plug will fit in a polarized outlet only one way. If the plug does not fit fully into the outlet, reverse the plug. If it still does not fit, contact a qualified electrician. Do not modify the plug in any way. Notes on the Cord The provided short power-supply cord (or detachable power-supply cord) should be used to reduce the risk resulting from becoming entangled in or tripping over a longer cord. Do not use an extension cord with this product. Plasticizer Warning CAUTION: To prevent Plasticizers from migrating to the finish of the counter top or table top or other furniture, place NON-PLASTIC coasters or place mats between the appliance and the finish of the counter top or table top. Failure to do so may cause the finish to darken; permanent blemishes may occur or stains can appear. Electric Power If the electrical circuit is overloaded with other appliances, your appliance may not operate properly. The Programmable Slow Cooker can operate at LOW all day or night if required. When cooking on a HIGH setting, it is very much like a covered pot on the stove top. Foods will cook on HIGH in about half the time required for LOW cooking. Additional liquid may be required as foods do boil on HIGH. To turn the Slow Cooker OFF, press the power OFF button. Always unplug from electrical outlet when not in use. Before Using for the First Time 1. Carefully unpack your Programmable Slow Cooker and clean, see CLEANING INSTRUCTIONS. 2. It is necessary to operate the Slow Cooker one time before placing food in the stoneware pot. Pour 4 cups of water into the stoneware pot and place it inside the base unit. Cover with the glass lid. 3. Plug into a 120 V AC outlet. The 3 program indicator lights will flash until the unit is programmed. 4. Press the LOW/HIGH/WARM selector button until the HIGH program indicator light illuminates. Press the TIME program UP arrow until 0:30 appears on the time display. The Slow Cooker will begin to heat in 2 seconds. NOTE: You will notice a slight odor; this is normal and should quickly disappear. 5. When the cooking time expires (00:00), the WARM indicator will flash for 5 seconds and then will activate the keep warm mode for 4 hours. NOTE: Press the POWER button any time to turn the Programmable Slow Cooker OFF. 6. Wearing oven mitts, grasp the pot handles carefully to lift and remove the stoneware pot from the base unit; pour out the water from the stoneware pot. 7. 7 Operating Instructions 1. Prepare recipe according to instructions. 2. Place food into the stoneware pot and cover with glass lid. DO NOT FILL THE POT TO THE TOP WITH FOOD. For best results, the slow cooker should be at least half-filled. If cooking soups or stews, allow a 2-inch space between the food and the top of the cooking pot, so ingredients can come to simmer. NOTE: When cooking a meat and vegetable combination, place the vegetables in the bottom of the stoneware pot first. Then add the meat and other ingredients. NOTE: When cooking on HIGH, keep checking progress, as some soups may come to boil. Remember that frequent lifting of the lid during cooking delays the cooking time. WARNING: The stoneware pot CANNOT stand the shock of sudden temperature changes. If the pot is hot, DO NOT add cold food. Before cooking frozen food, add some warm liquid. 3. Plug cord into a 120 V AC outlet. The 3 program indicator lights will flash until the unit is programmed. 4. Following recipe instructions, press the LOW/HIGH/WARM selector button until the desired LOW, HIGH or WARM program indicator light illuminates. 5. Press the TIME program UP arrow and 0:30 (30 minutes) will appear on the time display. Continue to press the UP or DOWN arrows until the target cooking time appears on the time display. The Programmable Slow Cooker can be programmed in half hour (30 minute) increments from 0:30 (30 minutes) to 20:00 (20 hours). The Slow Cooker will begin to heat. NOTE: Press the UP or DOWN arrows to adjust target cook time at any time while the Slow Cooker is cooking. NOTE: Press the OFF button at any time to turn the Programmable Slow Cooker OFF. 6. The time on the display will begin to count down in minutes until 0:00 minutes is shown on the display. CAUTION: The base unit will get very warm during cooking. This is where the heating elements are located. Use pot holders or oven mitts when moving or handling the unit. 7. When the cooking time expires (00:00), the WARM indicator will flash for 5 second and then will activate the keep warm mode for 4 hours. NOTE: Press the POWER button at any time to turn the Programmable Slow Cooker OFF. 8. To manually select the warm setting, press the MODE button until WARM is illuminated.the Programmable Slow Cooker will WARM by default for 04:00 (4 hours). NOTE: Press the STOP button at any time to turn the Programmable Slow Cooker OFF. 9. Using oven mitts, carefully remove the glass lid by grasping the lid knob and lifting the lid slightly away from you. This will allow the steam to escape before removing the lid. 10. Allow a few seconds for all steam to escape. Then, using oven mitts, remove the stoneware pot from the base unit. Serve contents. If serving directly from the stoneware pot, always place a trivet or protective padding under the pot before placing it on a table or countertop. 11. Unplug from electrical outlet. Allow to cool completely before cleaning, see CLEANING INSTRUCTIONS. NOTE: If you are moving the Slow Cooker, grasp the unit by the base unit handles; use pot holders or oven mitts. (See Figure 2.) 12. Even when turned OFF and unplugged, the Slow Cooker remains hot for some time after using; set aside and allow unit to cool before cleaning or storing. LOW 98º C / 208º F 8.5 hours HIGH 100º C / 212º F 5 hours WARM 63º C / 145º F 6.5 hours Hints For Slow Cooking Less tender, cheaper cuts of meat are better candidates for slow cooking than more expensive varieties. Meats will not brown during the cooking process. Browning fatty meats will reduce the amount of fat and help to preserve color while adding richer flavor. Heat a small amount of oil in a skillet and brown meats prior to putting into the stoneware pot. Whole herbs and spices flavor better in slow cooking than crushed or ground. When cooking in a Slow Cooker, remember that liquids do not boil away like they do in conventional cooking. Reduce the amount of liquid in any recipe that is not designed for a Slow Cooker. The exceptions to this rule would be rice and soups. Remember, liquids can always be added at a later time if necessary. If a recipe results in too much liquid at the end of the cooking time, remove the cover and re-program the Slow Cooker to continue to cook HIGH for 45 minutes. Check every 15 minutes. After about minutes the amount of liquid will be reduced. Most recipes that call for uncooked meat and vegetables require about 6-8 hours on LOW temperature. Foods cut into uniform pieces will cook faster and more evenly than foods left whole such as roast or poultry. Vegetables such as carrots, potatoes, turnips and beets require longer cooking time than many meats. Be sure to place them on the bottom of the Slow Cooker and cover them with liquid. Add fresh dairy products (milk, sour cream or yogurt) prior to serving. Evaporated milk or condensed creamed soups may be added at the start of cooking. Rice, noodles and pasta are not recommended for long cooking periods. Cook them separately and then add to the Slow Cooker during the last 30 minutes. User Maintenance Instructions This appliance requires little maintenance. It contains no user serviceable parts. Do not try to repair it yourself. Any servicing requiring disassembly other than cleaning, must be performed by a qualified appliance repair technician. 1. Avoid sudden, extreme temperature changes. For example, do not place a hot glass lid or stoneware pot into cold water or onto a wet surface. 2. Do not use the stoneware pot to store food in the refrigerator, and then reheat in the base unit. The sudden temperature change may crack the pot. 3. Avoid hitting the stoneware pot and glass lid against the faucet or other hard surfaces. 4. Do not use stoneware pot or glass lid if chipped, cracked, or severely scratched. 6 SO _13973_Programmable_slowcooker_IM R6.indd 6
9 Cleaning Instructions CAUTION: NEVER IMMERSE BASE UNIT OR CORD IN WATER OR OTHER LIQUID. 1. Always unplug and allow to cool completely before cleaning. 2. Both the pot and the glass lid may be cleaned in the dishwasher. To avoid damage, position the stoneware pot in dishwasher rack so that it will not hit other items during cleaning. To clean by hand, wash the stoneware pot and glass lid in warm, soapy water. 3. If food sticks to the stoneware pot, fill with warm soapy water and allow to soak before cleaning. A paste of baking soda may be used with a plastic scouring pad. 4. To remove water spots or mineral deposits, wipe pot with distilled white vinegar. For difficult stains, pour a small amount into the stoneware pot and allow to soak. Rinse and dry thoroughly. 5. Wipe interior and exterior of the base unit with a soft, slightly damp cloth or sponge. Never use abrasive cleansers or scouring pads to clean the base unit, as they may damage the surfaces. Storing Instructions 1. Be sure all parts are clean and dry before storing. 2. Store appliance in its box or in a clean, dry place. 3. Never store Programmable Slow Cooker while it is hot or wet. 4. To store, place stoneware pot inside the base unit and the glass lid over the stoneware pot; to protect the glass lid, it may be wrapped with a soft cloth and placed upside down over the pot. 5. Never wrap cord tightly around the appliance; keep it loosely coiled. NOTE: If the supply cord is damaged, it must be replaced by the manufacturer or its service agent or similarly qualified person in order to avoid hazard. This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety. 10 Recipes Asian Rib Tips Makes: 6-8 servings 1/2 cup low-sodium soy sauce 3 tablespoons molasses 3 tablespoons grape jelly (or any flavor jam or fruit preserves) 1/4 cup rice vinegar 1 orange, juiced and zested 5 cloves garlic, peeled and smashed 1 tablespoon grated fresh ginger (or more, to taste) 1 tablespoon sambal olek chili paste (or more, to taste) 4 lbs. rib tips 4 medium carrots, peeled and halved crosswise 1 small Napa cabbage (about 1 lb.), quartered 2 tablespoons cornstarch 1 tablespoon warm water 2 tablespoons sesame oil 4 scallions, thinly sliced 1. Combine soy sauce, molasses, jelly, vinegar, orange juice and zest, garlic, ginger, and chili paste in the stoneware pot. Mix well. Arrange rib tips and carrots in a single layer. Lay the quartered cabbage on top. 2. Cook in covered Slow Cooker on HIGH for 5 to 6 hours (or on LOW for 7 to 8 hours), or until the rib tips are tender. 3. Remove the cabbage, rib tips, and carrots from the stoneware pot. Using a large spoon or ladle, skim the fat from the cooking liquid. 4. In a medium saucepan, whisk the cornstarch with warm water until smooth. Add the de-fatted cooking liquid and cook on high heat until reduced to half. Add sesame oil last. 5. Return rib tips, vegetables and sauce to the Slow Cooker. Stirring every 30 minutes, keep food on WARM for up to4 hours before serving. 6. Spoon sauce over the meat and vegetables. Sprinkle with scallions before serving. Enjoy as an appetizer or serve with rice and fresh Asian salad. Slow Cooked Pulled Pork Sandwiches Makes: servings 1 (5 7 lb.) pork butt (or pork shoulder) 2 onions, chopped 2 teaspoons Kosher salt, plus additional for seasoning 1/2 teaspoon freshly ground black pepper, or more to taste 2 teaspoons red pepper flakes, or more to taste 2 cups low-sodium beef broth or water 2 cups barbecue sauce, jarred or homemade 3 tablespoons low-sodium soy sauce 3 tablespoons Dijon mustard 1 tablespoon apple cider vinegar 3 tablespoons maple syrup 6 jalapeno peppers, chopped (optional) 1. Trim excess fat from pork. 2. Add onions to the stoneware pot. Place pork on top, sprinkle with salt and pepper, to taste. Add broth, cover and cook on LOW for 8 hours or until meat falls apart. 3. Remove pork from Slow Cooker. Trim all fat and muscle tissue. Using 2 forks, or your fingers, shred (pull) pork. 4. Using a large spoon or ladle, skim the fat from the cooking liquid. Add remaining ingredients to the stoneware pot and mix well. 5. Return pulled pork to Slow Cooker and season with salt and pepper to taste. Continue to cook on LOW for 1 hour. 6. Remarques sur le cordon Utiliser le cordon d alimentation court (ou cordon d alimentation amovible) fourni avec l appareil afin de réduire le risque d emmêlement ou de trébuchement associé à un cordon long. Ne pas utiliser de rallonges. Notes sur la fiche Cet appareil est doté d une fiche polarisée (une broche est plus large que l autre). Pour réduire le risque de décharge électrique, la fiche s insère d une seule manière dans une prise polarisée. Si la fiche ne s insère pas complètement dans la prise, la tourner pour l insérer de l autre côté. S il est toujours impossible de l insérer complètement dans la prise, communiquer avec un électricien qualifié. Ne jamais modifier la fiche de quelque façon que ce soit. 14 Alimentation électrique Si le circuit électrique est surchargé parce qu il doit également alimenter d autres appareils, l appareil pourrait ne pas fonctionner correctement. Il doit être alimenté par un circuit électrique distinct de tout autre appareil. Caractéristiques de la mijoteuse programmable de 4,7 L L appareil peut varier quelque peu des illustrations. La mijoteuse programmable peut fonctionner à température basse toute la journée ou toute la nuit au besoin. Lorsque la mijoteuse fonctionne à température élevée, elle se comporte de façon très semblable à une casserole couverte sur la cuisinière. À température élevée, la cuisson des aliments nécessite environ la moitié moins de temps qu à température basse. Du liquide devra peut-être être ajouté en cours de cuisson, puisque les aliments atteignent le point d ébullition à température élevée. Pour éteindre la mijoteuse, appuyer sur le bouton d arrêt (OFF). Toujours débrancher l appareil de la prise électrique lorsqu il n est pas utilisé. Avant la première utilisation 1. Déballer la mijoteuse programmable avec soin et la nettoyer. Voir les directives d entretien et de nettoyage. 2. La mijoteuse doit fonctionner une fois avant de faire cuire des aliments dans la cocotte en grès. Verser 4 tasses d eau dans la cocotte en grès et la placer dans la base. Mettre le couvercle en verre. 3. Brancher l appareil dans une prise de 120 V c.a. 15 4. Appuyer sur le bouton de sélection de la température de cuisson (LOW, HIGH, WARM) jusqu à ce que le voyant correspondant à la température élevée (H) s allume. Appuyer sur la flèche supérieure de la minuterie (TIME) jusqu à ce que l afficheur indique «0:30». La mijoteuse commence à chauffer en deux secondes. REMARQUE : Une faible odeur peut se dégager de la mijoteuse. Ce phénomène est tout à fait normal et l odeur devrait se dissiper rapidement. 5. Lorsque le temps de cuisson expire (00:00), le cadre chaleureux clignote pendant 5 secondes puis va activer le mode de maintien au réchaud (WARM) pendant 4 heures. REMARQUE: Appuyez sur le bouton d alimentation (POWER) à tout moment de tourner la mijoteuse programmable OFF. 6. En portant des gants de cuisine, empoigner prudemment les poignées de la cocotte en grès pour la soulever et la retirer de la base; vider l eau de cuisson. 7. Rincer la cocotte en grès, bien la sécher et la replacer dans la base. Mode d emploi 1. Préparer la recette selon les directives. 2. Déposer les aliments dans la cocotte en grès et mettre le couvercle en verre. NE PAS REMPLIR LA MIJOTEUSE JUSQU AU BORD. Pour obtenir des résultats optimaux, la mijoteuse doit être au moins à moitié remplie. Pour la préparation de soupes ou de ragoûts, prévoir un dégagement de 6 cm (2 po) entre le contenu et le bord de la cocotte, de sorte que les ingrédients puissent mijoter. REMARQUE : Pour cuire un plat combinant viande et légumes, placer les légumes en premier dans la cocotte en grès. Ajouter ensuite la viande et les autres ingrédients. REMARQUE : Pendant la cuisson à température élevée, vérifier régulièrement le degré de cuisson puisque certaines soupes peuvent atteindre l ébullition. Ne pas oublier que de soulever fréquemment le couvercle prolonge la durée de cuisson nécessaire. AVERTISSEMENT : La cocotte en grès N EST PAS à l épreuve des changements brusques de température. Si la cocotte est chaude, NE PAS y ajouter d aliments froids. Avant de cuire des aliments congelés, ajouter un liquide tiède. 3. Brancher le cordon dans une prise de 120 V c.a. Les trois voyants indicateurs de température clignoteront jusqu à ce que l appareil ait été programmé. 4. Appuyer sur le bouton de sélection de la température de cuisson (LOW, HIGH, WARM) jusqu à ce que s illumine le voyant correspondant à la température désirée en fonction de la recette à préparer, soit basse température (L), température élevée (H) et réchaud (W). 5. Appuyer sur la flèche supérieure de la minuterie (TIME); l afficheur indique «0:30». Appuyer ensuite sur la flèche supérieure ou inférieure jusqu à ce que s affiche la durée de cuisson souhaitée. La mijoteuse programmable peut être réglée par plages de 30 minutes (0:30), jusqu à concurrence de 20 heures (20:00). Après deux secondes, la mijoteuse commence à chauffer. REMARQUE : Lorsque la mijoteuse est en marche, il est en tout temps possible de modifier la durée de cuisson en appuyant sur la flèche du haut ou du bas. REMARQUE : Lorsque la mijoteuse est en marche, il est en tout temps possible de l éteindre en appuyant sur le bouton d arrêt (OFF). 6. Le compte à rebours (en minutes) du temps de cuisson indiqué par l afficheur débute et se poursuit jusqu à ce qu il atteigne «0:00». ATTENTION : La base devient très chaude pendant la cuisson. C est dans celle-ci que les éléments chauffants sont intégrés. Utiliser des poignées en tissu ou des gants de cuisine pour manipuler ou déplacer la base. 7. Lorsque le temps de cuisson expire (00:00), le chaud décor clignote pendant 5 secondes puis activera le mode réchaud pendant 4 heures. REMARQUE : Lorsque la mijoteuse est en marche, il est en tout temps possible de l éteindre en appuyant sur le bouton d arrêt (OFF). 8. Pour sélectionner manuellement le réglage réchaud, appuyez sur le bouton MODE jusqu à ce que WARM est illuminated.the Mijoteuse programmable se réchauffera par défaut pour 4:00 (4 heures). REMARQUE : Lorsque la mijoteuse est en marche, il est en tout temps possible de l éteindre en appuyant sur le bouton d arrêt (OFF). 9. En portant des gants de cuisine, soulever prudemment le couvercle en verre par la poignée de façon à l éloigner légèrement de soi et laisser la vapeur s échapper avant de le retirer complètement. 10. Laisser toute la vapeur se dissiper pendant quelques secondes. En portant des gants de cuisine, retirer ensuite la cocotte de la base. Servir les aliments. Pour déplacer la mijoteuse, empoigner la base par ses poignées en utilisant des poignées en tissu ou en portant des gants de cuisine. (Voir la figure 2.) 12. Même lorsqu elle est éteinte et débranchée, la mijoteuse demeure chaude pendant un moment après son utilisation; mettre la base de côté et la laisser refroidir avant de la nettoyer ou de la ranger. Les viandes ne dorent pas pendant la cuisson. Faire dorer les viandes grasses réduit la quantité de gras et contribue à préserver la couleur tout en donnant une saveur plus riche. Faire chauffer une petite quantité d huile dans un poêlon et faire brunir les viandes avant de les déposer dans la cocotte en grès. Les herbes et épices entières aromatisent mieux pendant la cuisson lente que leurs équivalents écrasés et moulus. Ne pas oublier que lors de la cuisson à la mijoteuse, le liquide ne réduit pas par ébullition comme il le fait pendant la cuisson conventionnelle. Réduisez la quantité de liquide dans toute recette qui n a pas été expressément pensée pour la cuisson à la mijoteuse. Des exceptions à cette règle s appliquent dans le cas du riz et des soupes. Ne pas oublier qu il est toujours possible d ajouter du liquide à un moment ultérieur au besoin. S il subsiste un excédent de liquide à la fin de la cuisson, retirer le couvercle et reprogrammer la mijoteuse afin que la cuisson se poursuive à température élevée pendant 45 minutes. Vérifier la cuisson toutes les quinze minutes. Après 30 à 45 minutes, la quantité de liquide aura diminué. La plupart des plats composés de viande crue et de légumes doivent cuire de 6 à 8 heures à basse température. Les aliments coupés en morceaux uniformes cuisent plus vite et plus uniformément que les aliments entiers comme les rôtis et la volaille. Les légumes comme les carottes, les pommes de terre, les navets et les betteraves doivent cuire longtemps que bien des viandes. Les déposer en premier dans la mijoteuse et les couvrir de liquide. Incorporer les produits laitiers frais (lait, crème sûre ou yogourt) avant de servir. Le lait concentré ou les soupes en crème condensées peuvent être ajoutés au début de la cuisson. Le riz, les nouilles et les pâtes ne se prêtent pas bien à la cuisson de longue durée. Les cuire séparément, puis les incorporer dans la mijoteuse pendant les 30 dernières minutes de la cuisson. 14 SO _13973_Programmable_slowcooker_IM R6.indd 14
17 Réparation L appareil exige peu d entretien. Il ne contient aucune pièce pouvant être réparée ou remplacée par l utilisateur. Il ne faut donc pas tenter de le réparer soi-même. Toute opération d entretien qui exige le démontage de l appareil, autre que le nettoyage, doit être exécutée par un technicien en réparation d appareils ménagers qualifié. 1. Éviter tout changement de température soudain ou extrême. Par exemple, lorsqu ils sont chauds, ne pas déposer la cocotte en grès ou le couvercle en verre dans l eau froide ou sur une surface mouillée. 2. Ne pas utiliser la cocotte en grès pour conserver des aliments au réfrigérateur, puis la placer directement dans la base pour les réchauffer. Un changement de température soudain peut faire craquer la cocotte. 3. Éviter de heurter la cocotte en grès et le couvercle en verre contre le robinet ou une autre surface dure. 4. Ne pas utiliser la cocotte en grès ou le couvercle en verre s ils sont ébréchés, fissurés ou très égratignés. Entretien et nettoyage MISE EN GARDE : NE JAMAIS IMMERGER LA BASE OU LE CORDON DANS L EAU OU DANS UN AUTRE LIQUIDE. 1. Toujours débrancher l appareil et le laisser refroidir complètement avant de le nettoyer. 2. La cocotte en grès et le couvercle en verre peuvent être nettoyés au lave-vaisselle. Pour éviter de l endommager, déposer la cocotte en grès dans le panier du lave-vaisselle de manière à empêcher la cocotte et les autres objets de s entrechoquer pendant le nettoyage. Pour le nettoyage à la main, laver la cocotte en grès et le couvercle en verre à l eau savonneuse tiède. 3. Si des aliments collent à la cocotte en grès, la remplir d eau chaude savonneuse et la laisser tremper avant de la laver. Une pâte faite de bicarbonate de soude peut être utilisée avec un tampon à récurer en plastique. 4. Pour éliminer les taches d eau ou les dépôts minéraux, essuyer la cocotte en grès avec du vinaigre blanc distillé. Pour faire disparaître les taches tenaces, verser une petite quantité dans la cocotte en grès et la laisser tremper. Rincer et sécher soigneusement. 5. Nettoyer l intérieur et l extérieur de la base avec une éponge ou un chiffon doux légèrement humide. Ne jamais utiliser de nettoyants ou de tampons à récurer abrasifs pour nettoyer la base, puisque ceux-ci peuvent endommager les surfaces. Rangement 1. Avant de ranger l appareil, s assurer que toutes ses pièces sont propres et sèches. 2. Ranger l appareil dans sa boîte ou dans un endroit propre et sec. 3. Ne jamais ranger la mijoteuse programmable lorsqu elle est chaude ou mouillée. 4. Pour ranger la mijoteuse, placer la cocotte en grès dans la base et le couvercle en verre sur la cocotte; pour protéger le couvercle en verre, l envelopper d un chiffon doux et le placer à l envers sur la cocotte. 5. Toujours enrouler le cordon de façon lâche (non de façon serrée) autour de l appareil. REMARQUE: Si le cordon d alimentation est endommagé, il doit être remplacé par le fabricant ou son agent de service ou par toute autre personne également qualifiée pour éviter de courir un danger. Cet appareil n est pas destiné à être utilisé par des personnes (y compris les enfants) dont les capacités physiques, sensorielles ou mentales sont limitées ou qui ne possèdent ni l expérience, ni les compétences nécessaires pour utiliser l appareil, à moins qu elles soient supervisées ou qu elles aient reçu des directives d utilisation adéquates de l appareil par la personne responsable de leur sécurité. 18 Recettes Sandwich à l effiloché de porc à la mijoteuse Donne 10 à 14 portions. 1 soc de porc de 5 à 7 lb (ou une épaule de porc) 2 oignons, hachés 2 c. à thé de sel kosher (plus pour l assaisonnement) 1/2 c. à thé de poivre noir fraîchement moulu ou plus, au goût 2 c. à thé de flocons de piment de Cayenne ou plus, au goût 2 tasses de bouillon de bœuf à faible teneur en sodium ou d eau 2 tasses de sauce barbecue, du commerce ou maison 3 c. à soupe de sauce soya à faible teneur en sodium 3 c. à soupe de moutarde de Dijon 1 c. à soupe de vinaigre de cidre de pomme 3 c. à soupe de sirop d érable 6 piments jalapenos hachés (facultatif) Enlever l excès de gras du porc. 1. Déposer les oignons dans la cocotte en grès. Placer le porc sur le dessus et assaisonner de sel et de poivre, au goût. Ajouter le bouillon, couvrir et cuire à température basse (LOW) pendant 8 heures ou jusqu à ce que la viande s effiloche. 2. Retirer le porc de la mijoteuse. Enlever le gras et les cartilages. Effilocher la viande au moyen de deux fourchettes ou avec les doigts. 3. À l aide d une grande cuillère ou d une louche, dégraisser le liquide de cuisson. Ajouter les ingrédients restants dans la cocotte en grès et bien mélanger. 4. Remettre le porc effiloché dans la mijoteuse et assaisonner de sel et de poivre, au goût. Poursuivre la cuisson à température basse (LOW) pendant 1 heure. 5. Déposer le porc effiloché sur des pains au sésame grillés et garnir de salade de chou fraîche. Bouts de côtes à l asiatique Donne 6 à 8 portions. 1/2 tasse de sauce soya à faible teneur en sodium 3 c. à soupe de mélasse 3 c. à soupe de gelée de raisin (ou autre fruit en conserve ou confiture au choix) 1/4 tasse de vinaigre de riz 1 orange, zeste et jus 5 gousses d ail, pelées et écrasées 1 c. à soupe de gingembre frais râpé ou plus, au goût 1 c. à soupe de pâte de piments sambal oelek ou plus, au goût 4 lb de bouts de côtes 4 carottes moyennes, pelées et coupées en deux sur la largeur 1 petit chou nappa (environ 1 lb), en quartiers 2 c. à soupe de fécule de maïs 1 c. à soupe d eau chaude 2 c. à soupe d huile de sésame 4 oignons verts émincés 1. Mélanger la sauce soya, la mélasse, la gelée, le vinaigre, le jus et le zeste d orange, l ail, le gingembre et la pâte de piments dans la cocotte en grès. Bien mélanger. Placer les bouts de côtes et les carottes en une seule couche. Déposer les quartiers de chou. 2. Cuire dans la mijoteuse, couvercle en place, à température élevée (HIGH) de 5 à 6 heures (ou à température basse [LOW] de 7 à 8 heures), ou jusqu à ce que la viande soit tendre. 3. Retirer le chou, les bouts de côtes et les carottes de la cocotte en grès. À l aide d une grande cuillère ou d une louche, dégraisser le liquide de cuisson. 4. Dans une casserole de taille moyenne, fouetter la fécule de maïs avec l eau chaude jusqu à l obtention d un mélange lisse. Ajouter le liquide de cuisson dégraissé et cuire à température élevée jusqu à ce qu il réduise de moitié. Ajouter l huile de sésame en dernier. 5. Remettre les bouts de côtes, les légumes et la sauce dans la mijoteuse. Utiliser le mode réchaud (WARM) jusqu à 4 heures avant de servir et brasser toutes les 30 minutes. 6. À la cuillère, arroser de sauce la viande et les légumes. Garnir d oignons verts avant de servir.
