It is made with 100% selected pork meat and is recognisable thanks to its bean shape. The Salami Mugnano is perfect as an appetizer, in sandwiches and also recommended as a pizza topping. Available in a 2.2kg size Salmae Piccante la Sarda A large grain salami typically from Sardinia with a strong spicy flavour and a mild smoked aroma in an original U shape. Available in a 600g size. Salame Magro A low fat salami made of lean pork meat with a maximum of 12% fat. Salame Magro has therefore 60% less fat than traditional salamis and satisfies consumers who are looking for a light yet still very tasty product. Its original shape makes it ideal for sandwiches. Available in a 3kg size Felino A medium grain salami with a strong taste traditionally from Northern Italy. Felino is considered to be a very high quality salami made with 100% selected pork meat, in a natural incasement and hand tied what enhances its genuineness and maintain its intense flavouring. It is recommended as an appetizer. Available in a 4.2kg size
7 Prosciutto Cotto - Cooked Ham Prosciutto cotto is a product that originates from the Ancient Roman times and is made from pork ham. They are a very versatile product that can be used in many different hot and cold dishes, as well as appetizers and in sandwiches. Galbani makes five different cooked hams, each with own characteristics and typical tastes.
8 Astra A high quality cooked ham made with selected pork meat only and prepared according to a Northern Italian recipe. It has a natural pink colour, a very distinctive aroma and a tasty meat flavour. Astra has no added polyphosphates and is caseinates free. Available in a 9kg vacuum packed size Veronica A high quality cooked ham made with selected pork meat only and prepared according to a Northern Italian recipe. It has a light pink colour, a delicate aroma and a tasty meat flavour. Veronica is round shaped, it has no added polyphosphates. Available in a 9kg vacuum packed size Fetta Golosa A quality ham made with selected pork meat and slightly humid with a spicy taste. It has a light pink colour with no fat in the middle and is round shaped. Fetta Golosa has no added polyphosphates. Available in a 8kg vacuum packed size
9 Giove A good quality cooked ham made from selected pork meat with a light pink, no shank and no fat in the middle. Giove is therefore more adapted for catering. It has no added polyphosphates. Available in a 7.5kg vacuum packed size Cottopronto A low fat cooked ham from selected pork meat that has been specifically developed for convenience thanks to its perfectly long and round shape with no rind. Cottopronto is ready to use and can therefore be cut in perfect slices and is ideal for cooked and raw recipes, especially for sandwiches, pizza making or grill. It is low fat with less than 3% fat. It has no added phosphates and is caseinates free. Available 3kg size
10 Mortadella Mortadella is a finely grounded heat-cured pork sausage of lean pork meat with a uniform pink colour with pieces of fat. The name derives from the word mortaio which means mortar in Italian, the instrument used to ground the filling into a paste. It is a product that typically comes from the Emilia Romagna region since the 12th Century. It can be flavoured with various spices, aromas and pistachios. The Mortadellas Galbani are made with 100% high quality pork meat, with no added polyphosphates, caseinates or other derivatives from milk.
11 Augustissima An excellent quality and very tasty Mortadella of a deep pink colour. It is made from first choice pork meat only and has a slight flavour of garlic and spices. The Mortadella Augustissima is also available in a version with pistachios. Available in a 9, 15, 80 and 120kg size Golosissima A high quality and mild taste Mortadella with a light pink colour. It is made with first choice pork meat only and is also available in a version with pistachios. Available in a 10 and 15kg size. Sovranissima A unique taste and strong fragrance Mortadella of an deep pink colour. It is also available in a version with pistachios. Available in a 3, 7, 9, 13 and 14kg size

13 Cured Hams Galbani selects high quality cured hams from different Italian regions.the Prosciutti Crudi are a very traditional Italian product made from selected pig ham whose origins go back to the Celtic Roman Times. Although the principles of making a Prosciutto are the same (salt and air curing), each region has their own specific standards that are controlled by their respective Consortium (DOP products - Protected Denomination of Origin). The Prosciutti Crudi Galbani are ideal as appetizers, in sandwiches or on pizzas. After seasoning, they are de-boned and vacuum-packed in order to maintain their freshness and distinctive taste.
14 Prosciutto di Parma A DOP (Protected Denomination of Origin) cured ham with a distinctive flavour made according to the standards of the Parma Consortium. It is made from large locally raised pigs which are fed a strict diet and is then seasoned. The Prosciutto di Parma has a high nutritional value, it has a high vitamin, protein and iron content. It has also a lower fat content in comparison with other cured hams since it is partially de-greased at the end of the seasoning period. It is also de-boned before being vacuum packed. Galbani offers two Prosciutto di Parma varieties: seasoned for 12 months or 16 months - both in a 7kg size Prosciutto di San Daniele A very traditional DOP cured ham with a sweet flavour and distinct taste. Its name comes from the town where is was originally produced (Northern Italy). This Prosciutto Crudo is characterised by the use of sea salt in sparse amounts for seasoning. Galbani's San Daniele is de-boned before packing. Available in a 7kg vacuum packed size Campagnolo A cured ham with a delicate aroma and savoury flavour. The Prosciutto is de-boned before being vacuum packed. Available in a 6.2kg size
15 Other Specialties Galbani selects other typical Italian cured meats to complement their range offering a wide variety of regional specialties which are very appreciated in many different occasions.
16 Bresaola Punta d anca A salt-cured 100% selected lean beef product rich in protein traditionally from Northern Italy that is seasoned from 4 to 8 weeks. It has a pink colour and a delicate sweet flavour, slightly spicy. It is recommended to be thinly sliced and served as an appetizer. Available in a vacuum packed 1.5kg half-size and a 3kg full-size Speck A square shaped red-brown pork product made from a boned ham that is moderately salted and seasoned, cold-smoked and then aged according to local practices and traditions. Its name originates from the th 18 century and it is a traditional product from the province of Bolzano. It has a strong smoked and spicy scent as the meat is flavoured with black pepper, pimento, garlic and juniper berry during the salting process. Available in a vacuum packed 2,7kg size Pancetta affumicata A salt-cured and smoked and slightly cooked pork belly with rind. It is characterised by long veins of fat parallel to the rind and a pinky-brown colour. It has a sweet yet savoury and spicy taste. It can be the base of savoury sauces and to flavour various dishes, baked or for sandwiches. Available in a 1,7kg square size.
17 Pancetta arrotolata A rolled salt-cured and naturally aged uncooked 100% pork belly meat without rind. Its colour is bright red flecked with small dots of fat. The meat has an pleasant scent and a sweet and savoury taste. The Pancetta Arrotolata can be served on its owned presented in very thin slices or for sandwiches Available in a 4 kg cylindrical size Coppe A type of salami made of pork that is typically from Northern Italy. It is made from equal parts of lean and fatty boned pig's shoulder rolled with saltpetre, salt, black pepper, and nutmeg and cured for about three months. It has therefore a homogenous interior of red meat flecked with pinkish-white spots what results in a delicate taste that varies according to the region of production. Galbani's Coppe have a very traditional look since they are tied with a white moulded skin. Available in different sizes and formats with a weight from 1.5kg to 5kg. Cotechino and Zampone di Modena Two traditional cured meat products from the early 16th century originating from the area around Modena and typically eaten at Christmas or in similar occasions. made from a blend of pork obtained from striated muscle fibres, pork fat, pigskin and various seasonings and with a pink to red colour. They are covered by a natural casing. Galbani's Catechino and Zampone are pre-cooked, then packed in aluminium bags to guarantee a high quality product. The Cotechino and Zampone are available respectively in a 0.5kg and 1kg vacuum packed bags beautifully presented in a box.
18 Affettati Galbani selected high quality and traditional Italian cold cuts sliced and pre-packed in a 100g packaging for a higher convenience. Galbani guarantees their freshness as they are packaged immediately after slicing.
