2 A GOOD START ROAST THE COURGETTES Pre-heat the oven to 210 degrees. Cut the courgette into half slices of 1/2 cm thick. Transfer the courgette to a baking sheet lined with baking paper, sprinkle with the dried rosemary and drizzle with half the olive oil. Season with salt and pepper and roast in the oven for minutes or until the courgette is brown and done. EQUIPMENT A baking sheet lined with baking paper, a fine grater, a pan with a lid, a deep saucepan and tin foil. Let s start cooking the creamy linguine with shrimp and lemon. CUT AND BOIL In the meantime, press or finely chop the garlic and cut the tomatoes into 1 cm cubes. Grate the yellow rind of the lemon (zest) with a fine grater and juice the lemon. Fill a pan with a lid with plenty of water, bring to the boil, add the linguine and boil, covered, for minutes. Drain reserving a little of the cooking liquid, and allow to steam dry uncovered. FRY THE SHRIMP Pat the shrimp dry with paper towels. Heat the remaining olive oil in a frying pan and fry the shrimp at medium-high heat for 3 4 minutes tt. Season with salt and pepper. Remove the shrimp from the pan and set aside, wrapped in tin foil. Add the diced tomatoes and fry for 2 minutes until soft. Turn down the heat, add the creme fraiche and allow to melt while stirring. Stir 1/2-1 tbsp cooking liquid per person from the linguine into the sauce to make it a little thinner. Season with salt and pepper. ASSEMBLE THE PASTA Add the linguine to the deep saucepan and stir into the sauce. Add half the courgette, half the shrimp,1 tsp lemon juice per person and 1/4 tsp lemon zest. Mix well. ttip: Keep a close eye on the courgette. How long you need to cook them depends on the thickness of the courgette pieces and the strength of your oven. SERVE Transfer the linguine to plates and garnish with the remaining courgette and shrimp. Garnish with the remaining lemon zest. tttip: Shrimp are done before you know it, so keep a close eye on the preparation time. Frying them for too long makes them chewy and tough. This piece of meat is a crossover between steak tartar and steak. Steak tartar consists of ground meat while a German steak is finely chopped with a knife and seasoned. Do not overcook it, this meat can be consumed medium-rare.
4 A GOOD START PRE-BOIL THE POTATOES Bring 300 ml water per person to the boil in a pan with a lid for the potatoes and pre-heat the oven to 220 degrees. Thoroughly rinse the potatoes, cut into 1/2 cm slices and boil for 5 minutes in the pan with the lid. In the meantime, cut the chicory into wedges lengthwise. Leave the tough core to make sure the leaves don t separate from the stem. EQUIPMENT A pan with a lid, a baking sheet lined with baking paper, a deep saucepan or a large frying pan with a lid, a salad bowl and a frying pan. Let s start cooking the German steak with caramelised chicory. ROAST THE POTATOES Drain the potatoes, pat them dry with a paper towel and transfer to a baking sheet lined with baking paper. Drizzle the potatoes with the olive oil and season with salt and pepper. Roast the potatoes in the oven for 20 minutes. FRY THE CHICORY In the meantime, heat half the butter in a deep saucepan or large frying pan with a lid and fry the chicory all around for 1 minute at high heat. Turn down the heat, sprinkle the chicory with salt and pepper and fry, covered, for another minutes. Mix the mustard and white wine vinegar with the extra-virgin olive oil in a salad bowl and season with salt and pepper. Mix the mesclun into the dressing. FRY THE GERMAN STEAK Once the potatoes and chicory are almost done, heat the remaining butter in a frying pan and fry the German steak for about 2 minutes on each side. Season with salt and pepper and allow to rest for 1 minute. Turn the heat of the chicory to high, add the honey and caramelise the chicory for 2 minutest. Carefully toss every now and then. SERVE Transfer the chicory, potatoes and German steak to plates and serve with the salad and mayonnaise.
